Our state is, of course, synonymous with potatoes, so it should come as no surprise that my recipe features good ol' Idaho spuds. This is a meal in itself.

4 large baking potatoes (2 pounds)
1 cup grated broccoli stems
1/2 cup chopped fresh mushrooms
1/4 cup sliced green onions
1/4 cup grated carrot
1/4 cup shredded red cabbage
1-1/2 cups diced fully cooked ham
1/4 cup butter, cubed
Sour cream, optional

Steps:

  • Bake potatoes in the oven or microwave until done. In a skillet, saute the next six ingredients in butter for 5 minutes or until vegetables are tender. Serve over hot potatoes. Top with sour cream if desired.

10 ounces egg noodles
1 ½ pounds ground beef
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 teaspoon salt
1 tablespoon white sugar
1 ½ cups sour cream
3 ounces cream cheese
½ onion, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet over medium heat, brown the ground beef. Add the tomatoes with juice, salt and sugar and simmer for 15 minutes.
  • In a separate medium bowl, combine the sour cream, cream cheese and onion and mix well. In a 9x13 inch baking dish, place half of the egg noodles, then all of the meat mixture, then the cream mixture. Top with the remaining noodles and sprinkle with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes.

This recipe has been in the family for years and is always a huge hit. The potatoes can be substituted for frozen hash browns making it really easy to prepare and still tastes great.

6 medium potatoes
¼ cup butter
1 (10.5 ounce) can condensed cream of mushroom soup
1 pint sour cream
⅓ cup chopped green onion
1 ½ cups shredded Cheddar cheese
½ cup crushed cornflakes cereal
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2 quart casserole dish.
  • Place whole potatoes in their skins into a large pot of boiling water; cook for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and grate into a medium bowl.
  • Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until soup begins to bubble. Remove from stove, and mix in sour cream, green onion, and cheese. Stir in potatoes. Pour mixture into casserole dish.
  • In a resealable bag, shake together the cornflake crumbs and 2 tablespoons melted butter. Sprinkle over top of casserole.
  • Bake in a preheated oven 45 minutes.

1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup packed brown sugar

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender. Drain potatoes; place in a large bowl and mash. Stir in the orange marmalade, orange juice, brown sugar and extract. Cool slightly., In a small bowl, beat egg whites until stiff peaks form. Fold into sweet potato mixture. I came up with this recipe after starting with a basic ziti recipe I found off another website. I began adding a few more ingredients and less of others and ended up with a keeper. I've baked in my toaster oven during the warmer months. If you use your T.O. reduce baking time by 10 minutes or casserole will be on the dry side. 1 cup chopped onion
1 lb ground beef (90/10 works best)
2 cloves of minced garlic
1 (4 ounce) can mushrooms (drained)

1/3 cup grated parmesan cheese
1/3 cup cream or 1/3 cup half-and-half cream
2 cups prepared/commercial spaghetti sauce
1/3 cup red wine
2 teaspoons oregano
1 teaspoon salt
1/2 teaspoon black pepper
4 ounces shredded mozzarella cheese

Steps:

  • Prepare oven at 350 degrees.
  • Cook ziti according to package instructions, reducing the time by 5 minutes (this is important or pasta may be overcooked after baking casserole).
  • Meanwhile, saute chopped onion with ground beef in 10-12" skillet until beef is browned.
  • Add minced garlic to meet mixture and cook on low heat for 3 minutes.
  • Drain Ziti and leave in colander for the time being.
  • Combine drained mushrooms, sour cream, grated parmesan, half& half, spaghetti sauce, red wine, oregano, salt, and pepper to the beef mixture and mix thoroughly.
  • Stir in ziti to the meat mixture until all ziti is coated with mixture.

1 (16 ounce) package long grain and wild rice blend
2 1/2 cups chicken broth
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup chopped celery
butter
4 cups chopped cooked chicken or 4 cups turkey
1 (10 ounce) can sliced water chestnuts, drained
1 (4 ounce) jar pimientos, drained
1 (6 ounce) can mushrooms, drained
1 (10 3/4 ounce) can cream of celery soup, undiluted
1 cup mayonnaise
2/3 cup crushed potato chips
paprika (to garnish)

Steps:

  • Cook rice in chicken broth until done and set aside.
  • Saute onion, garlic and celery in butter.

  • At this point it can be refrigerated and baked later if you wish.
