EASY SAUSAGE, POTATO, CHEESE BREAKFAST CASSEROLE
Eggs, sausage, potato, cheese all in one dish. Easy to prepare the night before and bake in the morning.

Steps:
- Preheat oven to 350 degrees.
- Lightly grease a medium baking dish.
- Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
- Remove sausage to a separate plate.
- Add the butter to the same skillet and replace over medium heat.
- Add the package of diced potatoes.
- Cook and stir until lightly browned and slightly crispy on the outside.
- Place the potatoes in the prepared baking dish.
- Sprinkle with half of the seasoning salt and pepper.
- Cover with the sausage.
- Sprinkle the cheese over all.
- Pour the eggs over the top.
- Finish with the rest of the seasoning salt and pepper.
- Bake 30 minutes in the preheated oven, or until the eggs are fully cooked.
- If the dish has been refrigerated and is cold, it can take up to an hour to bake.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
- Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.
- Grate potatoes and add to the bowl of sausage mixture. Pour mixture into the prepared dish; place remaining Cheddar cheese on top.
- Bake in the preheated oven until casserole is heated through and cheese is melted and bubbly, about 35 minutes.

Steps:
- Spray a 1 1/2 Quart Casserole Dish with cooking spray.
- Line bottom of dish with cooked breakfast sausage.
- Grate 3 potatoes with hand grater (use larger holes on grater) *** You may leave skins on or off. Layer potatoes on top of sausage.
- Sprinkle shredded cheese on top of potatoes.
- Beat 3 eggs and pour evenly across the top of prepared dish.
- Sprinkle top with Paprika, Parsley and season with salt and pepper for taste.
- Bake at 375 for 15-20 minutes or until eggs are cooked (casserole won't wobble!).
- Variations: You may wish to cook a diced onion and red pepper in with the meat for added flavor or use ham instead of sausage. This is a fun recipe to play with.

- Set a 6-quart or large Instant Pot to sauté on high. Once hot, add the oil, butter and sausage. Cook, breaking up the sausage with a wooden spoon, until no longer pink, about 5 minutes. Stir in the onion and potatoes and cook for another 2 minutes. Add the spinach, salt, pepper and crushed red pepper flakes, cooking until the spinach as wilted. Turn the machine off and transfer the mixture to a greased 7-inch round baking dish; set aside.
- Clean out the inner bowl and return to the Instant Pot. Insert a metal trivet or wire rack and pour in the water.
- In a large bowl, whisk together the eggs and milk until smooth. Pour into the baking dish over the sausage and vegetable mixture, stirring slightly to evenly incorporate. Sprinkle the top with the shredded cheese and place the dish in the Instant Pot. Lock the lid in place, making sure the valve is set to seal. Pressure cook on high for 30 minutes, and allow to natural release for 10 minutes before manually releasing any residual steam inside.
- Carefully open the lid, remove the baking dish and garnish with chives before serving.
- Note: You can brown the top of the casserole by placing under the broiler until golden brown before serving.

Steps:
- In a large skillet, cook sausage and onion, breaking up sausage with a spatula.
- When sausage is cooked through, drain off excess fat.
- In an 8x8x2" square baking dish, layer the hash brown potatoes, half of the shredded cheese, browned sausage and onion mixture, and remaining shredded cheese.
- In a bowl, combine eggs, milk, and pepper.
- Pour egg mixture over cheese.
- Bake, covered in a 350 oven for 45 to 55 minutes or until a knife inserted near center comes out clean.

- 1. Adjust oven rack to upper-middle position and heat oven to 425 degrees. Prepare 9-inch springform pan as shown in photos, and set aside on rimmed baking sheet. 2. Whisk eggs, milk, and 1/2 teaspoon salt in bowl until well combined. Stir in flour until just incorporated--the mixture will still be a bit lumpy. Whisk in butter until batter is smooth. Stir in scallions and set batter aside while preparing filling. 3. Toss potatoes with 1 tablespoon water in large microwave-safe bowl. Cover with plastic wrap, cut vent holes in plastic, and microwave on high power until potatoes just begin to soften, 3 to 4 minutes. Meanwhile, cook sausage in large nonstick skillet over medium heat, breaking up clumps, until meat has lost most of its pink color, about 4 minutes. Release outer ring and, using spatula, transfer casserole to serving plate. Serve.
