ROASTED GARLIC POTATO SOUP
A creamy and luxurious roasted garlic potato soup. When you roast garlic it becomes sweet, not harsh at all! We're adding it to a smooth and silky potato soup and the flavor is just out of this world!

- Position a rack in the center of the oven and preheat the oven to 375ºF. Slice off the top of the head of garlic to expose some of the cloves and peel of as many outer layers of the garlic as possible. Drizzle with olive oil and salt and pepper. Wrap the garlic in a piece of aluminum foil, place the foil on a baking sheet and roast in the oven for 40-45 minutes until the garlic is done. Let cool before removing cloves from paper.
- Melt the butter in a large dutch oven over medium heat. Add the onions and allow to cook for 3-4 minutes until translucent. Add the flour and let cook for 1 additional minute, do not let the flour brown. Add the vegetable broth, milk, cream, thyme, salt and pepper, let he soup come to a boil, then allow to simmer for 2-3 minutes, whisking a few times in between. Add the potatoes, 8-9 roasted garlic cloves, and parmesan cheese. Using an immersion blender (or use a blender jug) blend until smooth. Serve warm topped with additional parmesan cheese, crackers, and sliced scallions.

- Preheat oven to 425 degrees F (220 degrees C).
- Place potatoes in a shallow roasting pan and drizzle with 1 tablespoon olive oil. Sprinkle with pepper; stir to coat. Bake for 25 minutes, or until potatoes are browned. Reserve 1 cup of roasted potatoes.
- In a 3 quart saucepan heat remaining oil; saute onions for 5 minutes. Add potatoes and garlic and stir in broth and water. Bring to a boil, reduce heat and simmer, uncovered, for 20 minutes.
- Spoon half of broth mixture into a blender; blend until nearly smooth. Repeat with remaining mixture; return all to pot. Stir in milk and season with salt to taste. Ladle into bowls and top with reserved roasted potatoes.

- Preheat the oven to 375°F Place the unpeeled garlic bulbs or bulb in a small roasting pan and bake for 30 minutes or until soft in the center.
- Meanwhile, par-boil the potatoes in a large pan of lightly salted boiling water for 10 minutes.
- Simmer the stock in another pan for 5 minutes.
- Drain the potatoes and add them to the stock.
- Squeeze the garlic pulp into the soup, reserving a few whole cloves, stir and season to taste.
- Simmer for 15 minutes and serve topped with whole garlic cloves and parsley.

- Heat the oven to 400 (200C) degrees.
- Put the garlic cloves in a small baking dish. Drizzle with olive oil, sprinkle with a pinch of salt and cover with a piece of foil. Roast until the cloves are soft and golden brown, 25-30 minutes.
- Put 2 cups of the potatoes on a baking sheet. Add 2 tablespoons olive oil and 1/2 teaspoon salt and toss around to coat. Roast in the oven alongside the garlic until tender, about 40 minutes.
- Heat a tablespoon of olive oil in a large pot or saucepan over medium-high heat. Add the leek and cook until softened. Add the roasted garlic, remaining raw potatoes, 6 cups water or broth and 1 teaspoon salt. Bring to a simmer and cook until the potatoes are tender, about 25 minutes.
- Puree the soup with a hand blender or in a regular blender in batches (let it cool 10 minutes before putting in the blender) until smooth. Stir in 1/4 cup of the parmesan and the lemon juice.
- To serve, put 4 or 5 roasted potatoes in each serving bowl. Ladle the soup over the potatoes. Sprinkle with additional cheese and some of the herbs.

BEEFY ROAST POTATOES
These are an awesome way to fix potatoes when baked or mashed just won't cut it. It's simple, has lots of flavor, and the par-cooking broth can be re-seasoned and re-used for future batches, or can be re-tooled and turned into the base for beef soup recipes.

- Preheat oven to 425 degrees F.
- Wash and cut up your potatoes, holding them into a bowl of cold water until ready to cook. We leave the peels on, but if you are just not a fan of potato skin, then feel free to peel them. You can also substitute several other varieties of potato: Dutch yellows, fingerlings, or chef whites are all excellent alternatives -- Russets can be used if you are careful not to overcook them -- red skin potatoes can even be used but they tend to be a bit firm for our taste.
- Combine broth, garlic granules, onion granules, and beef base in a heavy-bottomed sauce pan over medium heat. Stir to make sure the beef base is fully dissolved. Simmer for 10 minutes to allow the flavors to develop.
- Drain the potatoes thoroughly and add them to the broth, stirring to make sure all the potatoes get separated and don't stick together.
- Bring the broth back to a simmer and cook until the potatoes are barely done when poked with the point of a knife (how long this will take depends on the type of potato and how large they have been cut). If cooking Russets and the potatoes are tender, they are overdone and will be difficult to toss in the next step without breaking up.
- Remove the potatoes from the broth with a slotted spoon or spider and place them in a colander to drain thoroughly. (SAVE THE COOKING BROTH! It can be frozen and used again by re-seasoning, or turned into a beef soup, or any number of tasty applications.).
- Toss the potatoes in enough Panini Oil to coat thoroughly and season with salt & pepper.
- Spread on a sheet pan and roast for 30 minutes, turning every 10 minutes.
- Serve hot.

ROASTED POTATOES WITH GARLIC, LEMON, AND OREGANO

- Preheat oven to 400°F.
- Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
- Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.

- Place the potatoes in a shallow 10-inch oven-proof skillet or baking dish that has a lid. The potatoes should fit snugly inside the dish.
- Heat the chicken or veggie broth in the microwave for about 30 to 40 seconds, until hot. Add granulated garlic and stir to combine. Pour warmed broth over the potatoes in the skillet. Cover skillet with lid.
- Bake for 30 minutes or until potatoes are just beginning to get tender when pierced with a sharp knife. Pull skillet from oven and increase oven temperature to 425 degrees F. There should still be a small amount of broth at the bottom of the pan but if there isn't, add a bit more at this point just so the pan is not completely dry (I did not need to add any additional broth). Scatter the butter pats over the top of the potatoes.
