Steps:
- Preheat oven to 350 degrees.
- Cook bacon in skillet over medium high heat until slightly brown, remove from skillet, reserve bacon drippings.
- In same skillet, with 2 tablespoons bacon drippings cook brussels sprouts and hash brown potatoes over medium high heat for 10 minutes, adding additional bacon drippings if needed, season with salt.
- Add bacon to potato mixture.
- With sharp knife make a pocket in pork chops.
- Stuff pork chops with potato mixture, season pork with salt.
- Bake at 350 for 30 to 35 minutes or until slightly turning brown.
ROASTED PORK SLIDERS

- For the roasted pork: Preheat the oven to 375 degrees F. Season the pork loin on all sides with the salt and pepper.
- In a small bowl, combine the coconut milk and BBQ sauce. Set aside.
- In a 10-inch cast-iron skillet over medium-high heat, add the canola oil and heat until the oil just starts to smoke. Add the pork to the skillet fat-side down. Sear on all sides until golden brown, 2 to 3 minutes per side. Set the pork aside on a plate.
- Stir in the onions and cook until softened and browned, about 2 minutes. Add the diced pineapple, then place the seared pork on top of the onions and pineapple. Pour some of the BBQ mixture over the pork, coating the top, then pour the rest around the skillet, stirring it into the onion-pineapple mixture as much as possible. Transfer the skillet to the oven and cook until the pork and onions are deeply caramelized, and the internal temperature of the pork reaches 145 degrees F, 35 to 40 minutes. Let rest 10 to 15 minutes.
- For the slaw: Combine the napa and red cabbage together in a bowl. Add the salt and toss. Stir in the Spicy Mayo, adding more if desired, to evenly coat the cabbage. Set aside.
- To assemble: Slice the pork into thin rounds, then cut the rounds in half to make half-moons. Season the pork slices with salt. Place a heaping tablespoon of the pineapple and onions on top of each bottom bun, followed by 2 to 3 half-moon slices of pork, then a heaping tablespoon of the slaw. Place the top buns over the slaw on each. Serve immediately.
- Combine the mayonnaise, coconut milk, sriracha and lime juice in a bowl and stir together until smooth. Store in the refrigerator until ready to use, up to a week.
PULLED PORK SLIDERS

- Preheat the oven to 225 degrees F. Set the pork on a cutting board and score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Make the rub: Combine the pimenton, garlic powder, cayenne pepper, brown sugar, celery salt, mustard powder and 1 1/2 teaspoons salt in a small bowl. Massage it into the meat.
- Place the pork in a roasting pan and pour the beer into the pan. Cover with foil and roast 3 hours. Check it periodically to make sure everything is going along just fine, and turn the roast over every hour.
- Remove the foil and continue roasting until the pork has reached an internal temperature of 190 degrees F, about 1 1/2 more hours. Remove from the oven, cover loosely with foil and let rest 30 minutes.
- Sometime during the marathon cooking time, make the sauce: Combine the vinegar, garlic, chile, brown sugar, tomato paste, dijon mustard and 1 1/2 teaspoons salt in a small saucepan and bring to a boil. Taste it to make sure it is delicious; set aside. Remove the chile. When the sauce is cool, I recommend putting it in a squeeze bottle for easy use.
- Pull the pork into long shreds using 2 forks. Get rid of the fat and anything else that doesn't look delicious. Toss the pork with any residual pan juices and add salt to taste.
- Serve the pork on slider rolls with a drizzle of sauce; top with coleslaw.

- Allow pork to come to room temperature, about 2 hours. Preheat oven to 300 degrees. Cook bacon in a Dutch oven or other large ovenproof heavy pot over medium-low heat until fat is rendered and bacon is crisp, about 10 minutes. Transfer bacon to a paper-towel-lined plate. Season pork generously with salt and pepper, and sear, skin side down, in pot until golden, about 5 minutes. Flip, and repeat.
- Return bacon to pot. Stir sugar, molasses, ketchup, and vinegar together, and add to pot. Add water to reach three-quarters up sides of pork. Cover pot, and bring to a simmer.
- Transfer to oven, and braise pork, basting every hour, until liquid is thick and syrupy and meat is falling off the bone, about 6 hours.
- Transfer pork to a rimmed baking sheet; let rest 20 minutes. Meanwhile, skim fat from braising liquid, and discard. Remove skin from pork, and discard. Shred meat, and return to pot with braising liquid. Serve on buns with pickles.

5-Ingredient Fix Contest Entry. These easy-to-make potato pierogies will be ready in a snap! I did this after work one evening with my two toddlers in the kitchen. It was a quick, delicious meal solution and one that we will definitely add to our dinner rotation! The tortilla shells combined with a little bit of vegetable broth gives them the same texture as pierogi dough without all of the work.

- Cook potatoes according to package directions.
- Stir in 1 1/2 cups cheese into potatoes at the end, just until melted.
- Scoop cheesy potato filling evenly onto 8 flour tortillas.
- Fold tortillas in half, pressing down slightly so gooey cheese holds them together.
- Layer the tortilla pockets in a greased 9 x 13 glass pan.
- Carefully pour 1/2 cup vegetable broth evenly over the top of each tortilla wrap.

- Preheat oven to 400 degrees.
- In a flat microwave safe dish put Simply Potato Shredded Hash Browns. Cover and microwave for 5 minutes. Stir and continue microwaving UNcovered another 3 minutes. Remove from microwave and stir in 1/3 cup of the Sundried Tomato Dressing. Toss until well blended. Set aside to cool.
- Into a 9x13 in.baking dish pour 1/3 cup Sun Dried Tomato Dressing and spread to cover the bottom.
- On a cutting board lay one piece of the steak. Lay 2 ½ to 3 slices of the cheese end to end on the meat, cutting cheese to fit. Spread one fourth of the potato mixture over cheese. Roll up steak and secure with toothpicks. Slice rollup with a sharp knife into 4 equal portions (about 1 ¼ inch each). If necessary add more toothpicks to secure. Carefully lay each rollup into the prepared pan. Repeat with remaining steaks. Spread or brush 1 teaspoon or more of the remaining dressing over top of each rollup.
- Bake for 10 minutes. While meat is baking cut remaining four slices of cheese into fourths making 16 quarters. After 10 minutes remove pan from the oven. Place a piece of the cut cheese on top of each rollup. Return to the oven for 5 minutes or more until cheese is melted.
- Remove pan from the oven and let cool a few minutes. Carefully remove toothpicks. Slide a spatula under each rollup and put on a warm platter. Scrape up any potatoes and drippings from pan and add to the serving platter or over tops of the rollups. Sprinkle fresh chopped parsley over tops of rollups. Serve warm. Makes 16 rollups or 4-5 servings.

- Preheat oven to 350 degrees.
- In large bowl mix potatoes and stuffing mix (if seasoning pack and bread is packaged separate, mix both together).
- Pound chicken breast to about 1/4 inch thick.
- At this point you can cut your chicken to make 12 smaller rolls or leave whole and make 6 larger ones.
- Season chicken with bouillon, (use like you would salt).
- Spoon about 1/2 cup mixture onto edge of each chicken breast and roll, securing with tooth picks.
- Season outside with bouillon.
- Bake on nonstick baking sheet for 30 to 40 minutes, depending on size.
- Heat gravy and serve over chicken.
