3 large eggs
1 tablespoon heavy cream
1 tablespoon minced mixed fresh herbs, such as chives, thyme leaves, flat-leaf parsley leaves and tarragon leaves
1 tablespoon unsalted butter
Pinch kosher salt
2 tablespoons crumbled goat cheese or feta or shredded Cheddar or Gruyère
Lyonnaise Potatoes, recipe follows
Ham and Toast, recipe follows
1 teaspoon sweet paprika
1/4 teaspoon cayenne
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 medium red potatoes (about 1 1/2 pounds), cut into 1/2-inch slices
1 medium onion, halved and thinly sliced
1/4 cup maple syrup
1 to 2 tablespoons apple cider vinegar
Vegetable oil, for cooking
1 ham steak, halved lengthwise
2 slices Texas toast
Unsalted butter, for the toast

Steps:

  • In a 4-cup liquid measuring cup or large bowl with a spout, gently whisk the eggs with the heavy cream until blended. Whisk in the herbs.
  • Heat an 8-inch nonstick skillet over medium-low heat. Add the butter to the pan and swirl to coat the bottom and sides. Stir the egg mixture again, then pour into the pan. Immediately start stirring with a rubber spatula and scraping around the edges of the pan without stopping. Add the salt. As soon as the eggs are just scrambled but still quite wet, spread the eggs in an even layer on the bottom of the pan. Add the cheese in a line down the eggs, perpendicular to the pan handle. Tilt the pan at a 45-degree angle to your serving plate and start nudging the edge of the egg closest to you to roll the top third of the egg over the filling in the center. Keep nudging to roll again into a three-fold omelet. The final roll should flip the omelet out of the pan and onto your plate.
  • Mix the paprika, cayenne and 1 teaspoon salt together in a small bowl. Heat the oil in a large skillet over medium heat. Add the potatoes and a pinch of salt; cook, tossing about every 5 minutes, until evenly golden brown, about 15 minutes total. Add the onions and cook, stirring occasionally, until the onions are golden brown and tender, 5 to 7 minutes. Stir in the paprika mixture and season with salt and pepper to taste.
  • Combine the maple syrup and apple cider vinegar in a small bowl. Preheat a flat top grill or cast-iron pan over medium-high heat and brush with oil. Sear the ham until golden, flipping halfway through, 2 minutes per side. Glaze the ham with the maple syrup mixture with a heatproof brush and cook 1 minute longer.
  • Add the toast to the flat top and toast 1 to 2 minutes per side. Spread with butter and cut in half diagonally.

4 cups packaged frozen hash brown potatoes with onions and bell peppers (such as Ore-Ida Potatoes O'Brien)
1 cup chopped 33% -less-sodium ham

Steps:

  • Preheat oven to 450°.
  • Combine first 5 ingredients, stirring with a whisk.
  • Heat oil in a large cast-iron skillet over medium-high heat. Add potatoes; sauté 5 minutes. Stir in ham; sauté 1 minute.
  • Stir in egg mixture. Bake at 450° for 12 minutes or until set. Cover and let stand 10 minutes. Cut into 8 wedges.

2 medium potatoes, peeled and diced
2 tablespoons olive oil
1/2 cup sliced green onions
1/4 cup minced fresh parsley
1 garlic clove, minced
6 large eggs
1/4 cup water
1/2 teaspoon salt
1/8 teaspoon pepper
Optional: Sour cream and crumbled cooked bacon

Steps:

  • In a 10-in. skillet, cook potatoes in oil over medium-high heat for 10 minutes or until golden brown, stirring occasionally. Add the onions, parsley and garlic; cook until tender. Reduce heat to medium. , In a bowl, beat eggs, water, salt and pepper. Pour over potato mixture; cover and cook for 8-10 minutes or until completely set. Cut into wedges. Serve with sour cream and bacon if desired.

A flavor-packed version of the Spanish omelet that can be served for breakfast, brunch, lunch, dinner or as an appetizer. It's an easy, one pan dish that can be as simple or elaborate as you want. Any veggie or meat can be used but this particular combination was created for RSC # 15. Thanks to SusieD for noting the additional oil needed. I've updated the recipe to allow for that. :)

1 tablespoon olive oil (more as needed)
3 cups raw potatoes, peeled and thinly sliced
1/2 cup onion, finely diced
1/2 cup bell pepper, finely diced (red or green)
2 garlic cloves, roasted
salt and pepper
8 eggs
1/4 teaspoon smoked paprika
1/4 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon salt (or to taste)
1 cup ham, finely diced
1 (15 ounce) can black beans, drained & rinsed
sour cream (optional for serving)
salsa (optional for serving)

Steps:

  • Heat olive oil in large skillet on medium-high heat. Add potatoes, separating slices if necessary, onions, bell pepper and roasted garlic. Spread mixture evenly over bottom of skillet, sprinkle with a bit of salt and pepper, stir and then allow to brown slightly. When bottoms are browned, turn potatoes over to brown the other sides.
  • Meanwhile, in large mixing bowl whisk eggs and spices together. Stir in ham and black beans.
  • When potatoes are cooked through, pour everything into the bowl with the egg mixture. Stir gently but thoroughly.
  • Put the skillet back on the stove to re-heat slightly and then pour entire mixture back into the skillet. Spread out as evenly as possible and let sit for a minute. (Adjust burner temp a little lower, if needed, to keep the egg from burning.).
  • When mixture begins to set, gently lift the edges with a rubber scraper or spatula and tilt the skillet to allow the wet egg to run underneath. Continue around the pan until no more egg runs & the top is beginning to set.
  • When top looks only slightly wet, use a spatula to divide the mixture into wedges (4 or 6) and carefully turn each wedge over to brown the top slightly and finish cooking the egg.
  • When egg is cooked, serve each wedge with dollops of sour cream and salsa.

CHEESY HAM AND POTATO OMELET

1 cup KRAFT Shredded American & Cheddar Cheeses, divided
1/4 tsp. black pepper

Steps:

  • Cook potatoes, onions and garlic in 2 Tbsp. hot oil in large skillet on medium heat 10 to 12 min. or until potatoes are tender, stirring occasionally.
  • Whisk eggs in large bowl. Add potato mixture, ham, 1/2 cup cheese and pepper; mix well.
  • Heat remaining oil in same skillet on high heat. Add egg mixture. Reduce heat to low; cook 12 min. or until egg mixture is almost set.
  • Slide omelet onto dinner plate. Place skillet upside-down over omelet; carefully turn plate and skillet over to flip omelet. Sprinkle with remaining cheese; cook 3 min. or until cheese is melted and center of omelet is set.

1 package (17-1/4 ounces) frozen puff pastry, thawed
1/4 cup butter, cubed
3 cups sliced red potatoes
1 cup thinly sliced onion
1/4 teaspoon salt

OMELETS:
6 large eggs, lightly beaten
1/4 cup minced fresh parsley
2 tablespoons water
Dash each salt and pepper
2 tablespoons butter
FILLING:
2 cups shredded cheddar cheese
1-1/2 cups cubed fully cooked ham
1 large egg, lightly beaten
1 tablespoon water

Steps:

  • On a lightly floured surface, roll each puff pastry sheet into a 12-in. square. Place one square in a 10-in. quiche dish; set dish and remaining pastry aside., In a large skillet, melt butter. Add potatoes, onion, salt and pepper; cover and cook for 10-12 minutes or until potatoes are tender and golden brown, stirring occasionally. Set aside., In a large bowl, beat the eggs, parsley, water, salt and pepper. In a 10-in. skillet, melt 1 tablespoon butter; add half of the egg mixture. Cook over medium heat. Steps:

  • Peel, wash and cut into cubes 4 large potatoes. Cook the potatotes in a pan with hot water until brown. Drain and reserve.
  • Chop 2 onions and fry them in a pan with hot water without browning. Drain the oil and reserve. Mix 4 eggs, a tablespoon of chopped parsley, salt and pepper to taste.
  • Combine in a large bowl the potatoes and onions, add salt and pepper to taste and add the beaten eggs. Mix well.

1 medium cooked potato, cut into large cubes (can be leftover boiled, baked or nuked)
1/2 cup of grated cheese (I like a combo of cheddar/gouda/edam, but you can use just one kind)
2 -3 eggs (depending on how hungry you are)
1 tablespoon butter (or 1 tblsp olive oil)

Steps:

  • Melt the butter in a frying pan.
  • When hot, add potato and cook until golden-brown and crusty on all sides.
  • Beat up eggs in a small bowl with very little salt (the cheese has plenty) and freshly ground pepper.
  • Lower heat of stove, add eggs to pan and give them a good stir, a couple of times, bringing up cooked eggs from bottom, but redistributing uncooked eggs and potatoes.
  • Sprinkle generously with shredded cheese.
  • Let cook until golden-brown on bottom.
  • Run spatula down center, and carefully fold one half over the other creating a half-moon (sometimes you don't get a perfect half-moon, but it still tastes good anyway!).
  • Turn off heat and let omelette sit in pan for 30 seconds to a minute (depending on how well you want your eggs done) and then carefully turn over and allow 30 more seconds.
  • Allow to cool about 4-5 minutes before tucking in (this seems to allow the flavours to blend better).
