CRISPY POTATO CAKE
When grated and fried into a potato cake, super cheap potatoes take on an impressive and fancy look that every budget-minded cook can appreciate. A crispy, browned potato cake (often called a roesti potato cake) makes an excellent side dish to meat loaf or any saucy dish, and I especially love it paired with fried or poached eggs and a little salsa. Eggs and potatoes for dinner costs so little to make and tastes so comforting and indulgent at the end of a busy day.

Steps:
- Heat the oil and butter over medium heat in a nonstick 10-inch skillet. Once the butter is melted, sprinkle the grated potatoes into the pan in an even layer and, using a spatula, gently press them into the pan. Season with about half of the salt and pepper and let the potatoes cook without shaking or stirring the pan, until they're crisp and browned on the bottom, 8 to 10 minutes.
- Slide the potato cake onto a large plate and invert it onto another plate. Slide the potato cake back into the pan, browned side up, and season the top with the remaining salt and pepper. Continue to cook until the underside is nicely browned and the potato cake is cooked through, 7 to 9 minutes longer.
- Slide the potato cake onto a cutting board. Cut into wedges, sprinkle with parsley, and serve.
BLUE CHEESE POTATO CAKES
I have found a new love... blue cheese! I have been trying to find new ways to use it in recipes. Today I was watching hot of the grill with Bobby Flay and he made these beautiful cakes. Panko bread crumbs are Japanese bread crumbs. They help give a light crust to the cakes. This recipe is a great way to use leftover mashed potatoes! Hope you enjoy them!

Steps:
- First, combine the potatoes, bread crumbs and blue cheese in a medium bowl.
- Season with salt and pepper to taste.
- Next form the mixture into eight 2-inch cakes.
- Now chill the cakes in a single layer in the refrigerator for 30 minutes.
- Then dredge the cakes lightly in more panko crumbs.
- Heat the oil in a large saute pan over high heat.
- Turn the oil down a bit and cook the cakes until golden brown on both sides (approx 5-10 minutes depending on the heat of your pan).
- Enjoy!

- Cook potatoes in boiling water until tender, about 12-15 minutes.
- Drain and mash.
- Melt butter in a small skillet over low heat.
- Cook chives and garlic for 1-2 minutes, or until soft.
- Stir into potatoes.
- Add nutmeg, salt, pepper, dill and parsley.
- Cool potatoes completely.
- Stir in cheese and egg yolk. The cheese should still be in lumps throughout the potatoes.
- Shape into 12 patties.
- Refrigerate 10 minutes.
- Beat eggs and milk together.
- Dip patties in flour, then in egg mixture, and finally in bread crumbs.
- Heat oil in a large skillet over medium-high heat.
- Cook patties until browned, 3-5 minutes on each side.
- Serve with a dollop of sour cream.
- These can be made in advance and reheated for a few minutes in a 250°F oven.

- 1. To prepare sauce, combine first 6 ingredients in a bowl, stirring well. Cover and chill. 2. To prepare cakes, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add leek to pan; sauté 3 minutes or until tender. Place leek in a large bowl. Wipe pan with paper towels. 3. Place potato in a sieve; gently squeeze potato to remove excess moisture. Add potato, flour, 1/2 teaspoon salt, 1/2 teaspoon pepper, and eggs to leek in bowl; stir well. Return pan to medium-high heat. Recoat pan with cooking spray. - Preheat oven to 325 degrees F. Peel and thinly slice sweet potatoes on a mandoline; set aside. Heat heavy cream in a saucepan over medium heat, and add the cheese so it slowly melts into the cream. Mix in brown sugar, salt, and red pepper flakes; bring to a low simmer to incorporate all of the ingredients, 5-10 minutes. Butter the baking dish and evenly layer a quarter of the sweet potatoes along the bottom, then lightly sprinkle with salt.
- When the sauce is ready, pour a quarter of it over the sweet potatoes. Repeat the potato/sauce layering three more times until all of the ingredients are in the baking dish. Cover with foil and cook for 40 minutes. Remove foil and broil to brown the top, 5 minutes. Let sit for 10 minutes before serving.
