KNOEPFLE (SPAETZLE)
Knoepfle is a Swiss egg noodle that we make every holiday season! It's the perfect side dish and everyone loves them once they taste them.

- Beat eggs and about 1 cup milk in an electric mixer fitted with the paddle attachment. Add 2 cups flour and mix for a minute, then add the remaining flour. The batter will be very thick. Add about 1 cup more milk and beat until glassy and thick. It's the right consistency when it takes 4-5 seconds to drip off a wooden spoon. If it's too thin, add some additional flour. If it's too thick to drip, add more milk.
- While you're mixing up the dough (or after, it's okay if the dough sits), chop your onions to small dice. Melt butter in a frying pan and cook the onions until translucent, but don't caramelize them. Set aside. (If you don't want to serve with onions, skip this step, but you'll still need the butter.)
- Meanwhile, begin boiling your water. It is best to use a large stock pot that has a nested colander. Once water is boiling, add approximately a cup of batter to the spaetzle press and slowly slide the press back and forth to create your knoepfle. Watch for the knoepfle to float to the top of the water, stir to get any that are stuck on the bottom to float, then boil for an additional one minute (after they are all floating). Strain and place into a large bowl. Bring water back up to a boil between batches.
- Once adding a batch to your serving bowl, add either some of the onions or 2 tablespoons of butter. Stir so they don't stick together.
- Serve with the sauted onions, extra butter, gravy, and Swiss or parmesan cheese.
- These freeze well if you have leftovers.

GERMAN CHEESE-NOODLE CASSEROLE (KäSESPäTZLE)
This traditional German cheese casserole comfort food (käsespätzle) recipe uses homemade noodles topped with cheese and caramelized onions.

- Gather the ingredients.
- Start by making the caramelized onions about 1 hour before the casserole needs to go into the oven.
- Heat the butter and oil in a nonstick pan on medium. Turn heat to low and add onions. Stir every few minutes for about an hour, or until onions are lightly browned and sweet enough for your taste. Here is more information on caramelizing onions .
- Turn off the heat and set the onions aside.
- Gather the ingredients.
- Here is a step-by-step guide to making spätzle with a spätlebrett (wooden board used to make drop noodles). You may use a colander to form the noodles or a grater-like device with a hopper on it called a spätzle maker.
- Place a large pot of water on to boil. You can add salt if you wish.
- To make the dough, whisk together the flour and salt in a medium bowl. In a small bowl or measuring cup, beat the eggs with the water and add to the flour-salt mixture.
- Beat for several minutes or until dough is smooth. Let the dough rest for 10 minutes, then beat it again. Add water or flour to adjust consistency to a thick batter (a little thinner than brownie batter).
- Place half of the dough in the hopper of the spätzle maker which is placed over the simmering water. Push and pull the hopper back and forth, creating a dough wave inside the hopper. Little bits of dough will be pushed out the other side and drop into the water. They will be fatter and more teardrop-shaped than the spätzle you make with a board.
- The noodles drop to the bottom of the pot, then rise to the surface. Let them sit there for another 2 or 3 minutes, then scoop them out with a slotted spoon or small sieve. Rinse briefly in hot water, then drain well and set aside.
- Using the second half of the dough, make another batch of noodles. If the noodles stick to the bottom of the pan, give a quick stir to loosen. They should then rise to the top.
- Butter and line a 1 1/2- to 2-quart casserole dish with breadcrumbs .
- When noodles are done, add them to the (cooled) pan with the caramelized onions. Add the grated nutmeg and 3/4 of the grated cheese and stir to mix.
- Spoon noodles into the casserole, sprinkle with remaining cheese and bake, covered, at 350 F for 20 minutes, then uncovered for 15 minutes. If you like, brown the cheese topping with the broiler during the last 5 minutes.
- Serve hot.
- Enjoy.

- In a Dutch oven, brown roast on all sides in oil; drain. Add the potatoes, carrots and onion. In a large bowl, combine the flour, water, tomato sauce, bouillon, salt and pepper until smooth. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Cook ground beef and sausage in a large, deep skillet until well browned, about 5 minutes. Drain fat. Stir in pasta sauce. Bring to a simmer.
- While sauce is simmering, bring a large pot of salted water to a boil over high heat. Stir in the egg noodles. Boil until cooked through, but is still firm to the bite, about 5 minutes. Drain well.

POT ROAST AND SWISS CHEESE NOODLES
You will want to add this simple dinner to your recipe file. This recipe was simplified years ago because my German Grandmother couldn't afford special ingredients so she just used what she had. She was the "gravy queen" and her secret died with her. MY mom could capture the flavors but it wasn't the same. So over the years we modernized and updated the ingredients and now that my kids are making it, we had to finally write a recipe to follow because gravy making is becoming a lost art. The noodles are a great change from mashed potatoes or buttered noodles. I used to make a salad,vegetable and rolls but they go untouched. Everyone is too busy chowing down on the meat gravy and noodles. It's a heavy dish so be careful not to over eat! enjoy

- Pot roast: Heat large pot (med-high temp) for about 4 minutes so when you add meat it sizzles. Use cooking spray so meat doesn't stick. Brown well on all sides (dark brown). Make sure the pot stays hot so the juices don't escape.
- Brown onions add ketchup salt and pepper. Cover meat with water bring to a boil (original recipe) then add the 2 cans of golden onion soup and packet of onion soup mix. Cover and simmer for about 3 hours( or until a fork slides out of meat easily).
- No thickening of the gravy is required unless you added too much water.
- Noodles:.
- Don't over cook noodles (al dente) deduct about 2 minutes to the cooking time.
- Grate Swiss (I've used the pre-grated cheese in the packages--works well).
- Drain noodles, melt butter in bottom of the pot, add noodles (make sure the temp is on low). Stir in Swiss (be gentle). When mixed well add sour cream. I don't usually deviate from the recipe but occasionally I add 1/4 cup of mozzarella with the Swiss.

- Heat water in a big pot for cooking.
- Meanwhile mix flour, eggs, milk, water and salt together with a blender.
- Let rest 5 to 10 minutes and mix briefly.

- In large pot of boiling salted water, cook noodles according to package instructions until just tender. Drain and chill under cold water; drain well.
- Meanwhile, in skillet, heat oil and butter over medium-high heat. Add pancetta and caraway seeds; saute until pancetta starts to render some fat. Add onions and sa< cook, stirring often, until golden brown, about 12 minutes. Remove from heat.

NOODLES AND POT CHEESE
I was so surprised when I did not see this already posted. My granddaughter had it for lunch at my house and later looked at this site and asked why I didn't have it posted. Yeah, why didn't I? **I have not found pot cheese in regular supermarkets, just specialty stores. If you cannot get it, use a cottage cheese that is as dry as possible.
