QUICK AND EASY POTLIKKER SOUP



Quick and Easy Potlikker Soup image

1 tablespoon vegetable oil
1 pound smoked ham, chopped (about 3 cups chopped)
1 large onion, diced
2 cloves garlic, minced
8 cups chicken broth
1 (16-ounce) bag frozen chopped collard greens (or other green of your choice)
1 (15.5-ounce) can black-eyed peas, drained and rinsed
1 (28-ounce) can petite diced tomatoes, drained
salt and pepper

Steps:

  • Heat the oil in a large pot or dutch oven over medium heat. Add the ham and onion and cook for 5 to 7 minutes, or until the onions are translucent. Add the garlic, cook about a minute more. Add the chicken broth and bring to a boil. Stir in the frozen greens. Bring back up to a boil, reduce the heat, cover, and simmer for 20 minutes.
  • Add the rinsed peas and drained tomatoes. Add salt and pepper to taste. Cook for an additional 10 minutes.

5 slices about 1.5 pounds baked ham - chopped
1 tablespoon olive oil
1 medium onion (diced)
3 medium carrots (chopped)
2 garlic cloves (minced)
2 cups chicken stock or broth
2 cups fresh collard (mustard, or turnip greens, washed with hard stems removed)
8 cups water
pinch red pepper flakes (optional)

Steps:

  • Add chopped ham to a Dutch oven over medium heat. Heat for about 2-3 minutes and then add olive oil, onion and carrots. Saute until becomes tender, about 2 more minutes. Then add in garlic and cook for 1 more minute. Pour in chicken broth and cook until has reduced by about ½.
  • Add greens and water. Boil over medium heat for about 45 minutes until greens are extremely tender.

Cranberry beans provide a rich and creamy broth in this hearty soup with pancetta and pasta. Garnish with fresh parsley and/or Pecorino Romano cheese if desired.

1 cup tubettini
2 ounces pancetta bacon, diced
1 cup diced onion
1 cup diced carrots
½ cup diced celery
1 tablespoon finely chopped garlic
8 cups chicken broth
2 cups dried cranberry beans
1 cup canned diced tomatoes with juice
1 tablespoon finely chopped fresh rosemary
2 bay leaves
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tubettini and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain and set aside.
  • Meanwhile, turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add pancetta and cook until fat has been rendered, about 5 minutes. Add onion, carrots, and celery; saute, stirring frequently, until translucent, about 4 minutes. Add garlic and cook for 1 minute.
  • Pour 1/4 cup chicken broth into the pressure cooker and bring to a boil while scraping the browned bits of food off the bottom with a wooden spoon. Add remaining chicken broth, cranberry beans, diced tomatoes with juice, bay leaves, salt, and pepper.
  • Close and lock the lid of the pressure cooker and close the valve. Select Manual pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Unlock and remove the lid.
  • Transfer 2 cups of soup, with as many beans as possible, to a mini food processor; blend until smooth. Place back into the pot and stir. Ladle soup into bowls, add the reserved pasta, and serve.

This is a great soup for a cold winter day. First it keeps your kitchen warm, then it keeps you warm. The peas dissolve to make it thick and creamy in texture.

8 cups ham stock
4 cups white pea beans (navy beans)
1 cup yellow split peas
3 -4 bay leaves
2 teaspoons crushed black peppercorns
4 tablespoons molasses
5 tablespoons tomato paste
2 cups peeled diced carrots
2 teaspoons ground ginger
1 cup diced ham
salt

Steps:

  • Wash and pick over the beans, and put them in a pot with enough water to come up above them by 3 or 4 inches.
  • Bring to a boil, turn off the heat, and soak overnight.
  • In the morning, drain the beans and add the ham stock and the split peas, bay leaves and pepper.
  • Bring to a boil then simmer gently until the beans are tender.
  • Use a little stock to thin the molasses and tomato paste, and stir it into the soup.
  • Add the carrots and ginger, and continue to simmer the soup until the carrots are tender.
  • Add the ham, and add salt to taste (which will likely only be needed if your ham is unsalted.) Add water if the soup gets too thick; stir frequently to prevent scorching.
  • Bean soup is best the day after it has been cooked.
