This was always a family staple and while searching the Portuguese recipes, I noticed it wasn't there and I just have to add it.

2 cups water
1 cup white rice
2 cups hot milk (whole works best)
1 cup sugar
1 fresh lemon rind (use a vegetable peeler for big pieces for easier removal)
cinnamon

Steps:

  • Bring water to a boil in medium saucepan.
  • Add rice and cover, simmering for 20 minutes.
  • Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.
  • It will also thicken some while cooling.
  • Pour into one large serving plate and remove lemon rind.
  • Spread flat and allow to cool on wire rack.
  • You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon.
  • Serve at room temp, but refrigerate uneaten portion.

Creamy Portuguese rice pudding isn't your average rice pudding. Learn how to make this fun and delicious sweet rice dessert.

2 1/4 cups water
1/2 teaspoon salt
Peel of 1 lemon (cut into long strips, avoid as much of the white pith as possible)
1 cup rice (short-grain, arborio is a good choice)
2 cups milk (hot, you can substitute some of this with cream, if you like, for a richer consistency and flavor)
Garnish: ground cinnamon
Garnish: paper-thin slices of lemon

Steps:

  • Place the water, salt, and lemon peel into a medium pan and bring to a boil. Then reduce the heat to low and allow the water to simmer with a lid on for about 15 minutes.
  • Remove the lemon peel from the water with a slotted spoon and discard.
  • Add the rice to the water and bring it back up to a boil. Then reduce it to a simmer and allow the rice to absorb all of the water (about 10 minutes).
  • Now slowly add the hot milk, a bit at a time, to the rice mixture. After each addition (of about 1/2 cup), allow the liquid to absorb before adding the next batch of milk. Stir frequently and keep the heat low, so that the rice does not burn at the bottom of the pan. This should take about 25 to 30 minutes.
  • Pour the rice into a serving dish. Sprinkle the top with the cinnamon and the lemon slice if you like.
  • Chill the rice and then serve.

This Portuguese rice pudding recipe comes straight from the Azores from my mom's recipe book. This is a traditional recipe served mostly during the Holy Spirit festivals but also enjoyed year round.

Number Of Ingredients 10

1 cup short grain white rice
1 cup water
1 cup sugar
4 cups milk
1 cinnamon stick
2 tsp butter
3 eggs beaten
1.5 tbs lemon rind
1 pinch of salt
1 tbs cinnamon powder

Steps:

  • Add rice and water to a medium or large pot and cook on medium high.
  • Once the water starts to reduce (you should see very little water), mix with a wooden spoon.
  • Add the milk, cinnamon stick and stir.
  • Add the sugar and lemon and stir again.
  • Bring the mixture to a gentle boil and add the butter and salt. Mix again.
  • Leave the mixture on medium high to continue simmering. The mixture will eventually start to thicken quite a bit. This may take between 10 and 15 minutes. Mix occasionally to keep the rice from sticking to the bottom.
  • Remove the cinnamon stick from the pot.
  • Once the mixture thickens, pour 3 to 4 large spoons of the rice mixture onto the eggs and mix right away to avoid turning the eggs into scrambled eggs.
  • Then add the egg mixture into the pot. Mix well.
  • As soon as the rice reaches a gentle boil, remove the pot from the heat.
  • Pour the rice mixture onto your favourite serving dish or individual ramekins.
  • Sprinkle the cinnamon evenly over the rice pudding.
  • Serve warm or refrigerate to serve cold... Nelson's favourite!

My mom would always make this delicious, creamy rice pudding when we were kids. If a thicker rice is desired, increase rice to 1 1/4 cups and add another egg. Sprinkle with cinnamon.

1 cup uncooked white rice
1 cup white sugar
2 eggs, beaten

Steps:

  • In a large saucepan over high heat combine sugar and milk. When bubbles form at the edges, stir in rice and reduce heat to medium-low. Cook 60 minutes, stirring often, until rice is tender. Do not allow to boil.
  • Remove from heat and vigorously stir in beaten eggs, a little at a time, until well incorporated. Serve warm.

This recipe is submitted for play in ZWT8 - Spain/Portugal. It is a recipe by Ana Patuleia Ortins. A lovely rice pudding that is flavored with orange and garnished with cinnamon.

5 cups milk, whole
1 cup short-grain rice
1/2 teaspoon salt
1 orange, peel of 1 orange, without pith, in large pieces
1 cup sugar
2 teaspoons cinnamon, ground (for dusting)

Steps:

  • Heat milk in 2 1/2 quart saucepan over medium-high heat until little bubbles form around the edges and the milk starts to steam.
  • In a separate pan, add rice and salt. Add enough water to just cover the rice, and place the pan over medium-high heat, cover,and bring to a boil.
  • Reduce the heat to medium-low and stirring constantly, cook the rice until the water evaporates, being careful not to burn it.
  • Stir the scalded milk into the rice and add the orange peel, cover and simmer the rice for another 20 to 25 minutes, until it is almost done.
  • When the rice is tender, remove the orange peel and stir in the sugar, continue to simmer for 5 more minutes until the sugar is dissolved.
  • The pudding should be somewhat thick, like oatmeal. It will continue to thicken as it cools.
  • Pour onto flat serving platters or individual dishes.
  • Garnish with cinnamon in the Portuguese style: pinching some cinnamon between the index finger and thumb, dropping it close to the surface of the rice by rubbing the finger and thmb together, in a design or intials of the guest of honor and chill.
  • Serve chilled or remove from the refrigerator 20 minutes before serving.
