These are good for an everyday supper since they're so easily prepared, yet look no further of you want something elegant enough to present at a dinner party. This dish is nice served on a bed of pasta topped with Tomato Sauce.

4 large portabella mushrooms (4 1/2 to 5 inches)
3 tablespoons olive oil
1 cup minced onion
3 garlic cloves, minced or pressed
2/3 cup minced red bell pepper
3 tablespoons chopped fresh basil
2/3 cup ricotta cheese
1 cup grated mozzarella cheese
1/4 cup grated parmesan cheese
1/4 teaspoon salt
2 tablespoons breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly oil a baking dish.
  • Carefully brush or wipe off any soil from the mushrooms.
  • Twist off the stems and discard.
  • Rinse the mushroom caps and pat dry with a towel.
  • In a skillet, warm 2 Tbs of the olive oil and sauté the onions for about 5 minutes, until they begin to soften.
  • Add the garlic and peppers and sauté for 5 minutes more.
  • Remove from the heat and set aside.
  • In a bowl, mix together the basil, ricotta cheese, mozzarella, Parmesan, salt, and bread crumbs.
  • Stir the sautéed vegetables into the cheese mixture.
  • Brush the portabellos with the remaining Tbs of oil and place them gill side up in the prepared baking dish.
  • Mound cheese mixture in each.
  • Bake uncovered for 20-25 minutes, until the mushrooms release their juices and the cheese is melted.
  • Serve hot.

CREAMY PORTOBELLO SOUP

4 tablespoons unsalted butter
1 8-ounce ham steak, diced
4 leeks (white and light green parts only), thinly sliced
Kosher salt and freshly ground pepper
2 5-inch portobello mushroom caps, stemmed and chopped
3 tablespoons all-purpose flour
3 tablespoons dry sherry or madeira wine (optional)
2 cups low-sodium chicken broth
1 cup half-and-half
Crusty bread, for serving (optional)

Steps:

  • Melt 2 tablespoons butter in a pot over medium-high heat and cook until lightly browned. Add the ham and cook until slightly browned, about 3 minutes. Remove the ham with a slotted spoon to a plate. Add 1/2 tablespoon butter, 1 cup leeks, and salt and pepper to taste. Cook 4 minutes, then add to the plate; set aside.
  • Add the remaining 1 1/2 tablespoons butter, leeks, 1/2 teaspoon salt, and pepper to taste to the pot; cook until wilted, about 3 minutes. Add the mushrooms and cook 3 minutes. Sprinkle in the flour and cook, stirring, 2 minutes. Stir in 2 tablespoons sherry, if using, scraping up any browned bits, and cook until evaporated. Add the broth and 2 cups water. Cover and bring to a boil, then reduce the heat to low and simmer, uncovered, until the mushrooms are tender, 8 to 10 minutes.
  • Puree the soup in batches in a blender until smooth, cracking the lid to let steam escape. Return to the pot, whisk in the half-and-half and bring just to a boil. Stir in three-quarters of the ham-leek mixture, the remaining 1 tablespoon sherry, if using, and salt and pepper to taste. Serve topped with the remaining ham and leeks.

12 ears fresh corn
2 cups water
1 1/2 cups green pepper, chopped
1 1/2 cups roasted red pepper, chopped
1 cup onion, chopped
2 1/2 cups vinegar
1 3/4 cups sugar
4 teaspoons dry mustard
2 teaspoons black pepper
2 teaspoons pickling salt
3 tablespoons cornstarch
2 tablespoons water

Steps:

  • Cut corn from cobs. Measure out 8 cups of corn in a 10 quart Dutch oven pot. Combine corn and water. Bring to boil and reduce heat. Simmer, covered for 5 minutes. Drain corn. In same Dutch oven combine with corn, red and green peppers and onions. Stir in vinegar, sugar, mustard, salt and black pepper. Bring to a boil. Boil gently, uncovered for 5 minutes, stirring occasionally. Stir together cornstarch and 2 tablespoons water. Add this mixture to corn mixture. Cook and stir until slightly thickened and bubbly. Cook for 2 minutes more. Ladle relish into hot sterilized jars leaving 1/2-inch headspace. Remove any air bubbles. Wipe jar rims and adjust lids and rings. Process in hot boiling water canner for 15 minutes.

4 portabella mushrooms
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 teaspoons fresh thyme, Chopped (or 1/2 tsp/2 mL dried)
1 pinch salt
1 pinch pepper
1 ounce parmesan cheese, shaved

Steps:

  • Remove thick end of mushroom stem, leaving about 1/2 inch (1 cm) attached to cap.
  • Place, smooth side up, in large, shallow glass dish.
  • Combine oil, vinegar, thyme, salt and pepper; pour over mushrooms, turning and brushing to coat evenly.
  • Let stand for 15 minutes.
  • Reserving marinade, place mushrooms, smooth side down, on greased grill over medium-high heat; close lid and cook for 5 minutes.
  • Turn and baste with marinade; cook, covered, for about 3 minutes or until mushrooms yield to the touch when pressed.
  • Arrange Parmesan over top; cook, covered, for about 2 minutes or until melted.

1 cup plus 3 tablespoons corn oil
10 garlic cloves, minced
2 tablespoons white balsamic vinegar
5 teaspoons chopped fresh thyme
4 teaspoons chopped fresh oregano
8 5-inch-diameter portobello mushrooms
1 pound assorted fresh wild mushrooms (such as oyster and stemmed shiitake), sliced
1 1/2 cups fresh corn kernels
3/4 cup whipping cream
1 cup crumbled Cotija or feta cheese

Steps:

  • Whisk 1 cup oil, garlic, vinegar, 3 teaspoons thyme, and 2 teaspoons oregano in medium bowl to blend. Season generously with salt and pepper. Transfer 1/3 cup garlic-herb oil to small bowl; reserve.
  • Trim and thinly slice portobello stems; set aside. Brush both sides of portobello caps with remaining garlic-herb oil; place caps, rounded side down, on large rimmed baking sheet. Preheat broiler. Broil portobello caps until tender, about 5 minutes per side. Remove from broiler. Turn caps rounded side down. Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add assorted mushrooms and portobello stems; sauté 5 minutes. Stir in reserved 1/3 cup garlic-herb oil; sauté until mushrooms are tender, about 5 minutes. Add corn; sauté until tender, about 3 minutes. Add cream; simmer until almost absorbed, about 2 minutes. Stir in cheese. Season with salt and pepper. Divide mixture among portobello caps, mounding in center. (Can be made 6 hours ahead. Cover; chill.)
  • Preheat broiler. Broil portobellos until heated through, about 5 minutes. Sprinkle with 2 teaspoons each thyme and oregano.

3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
4 -6 large portabella mushrooms (or you can use more smaller ones or even sliced)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon italian seasoning
1/4-1/2 teaspoon red pepper flakes (optional if you like a little heat and zing)
1 cup marinara sauce (store bought or homemade)
4 garlic cloves, minced (optional)
1/2 cup shredded mozzarella cheese (or you could also use Fontina, Monterey Jack, even goat cheese)
1/4 cup grated parmesan cheese
2 tablespoons butter, cut into small pieces

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms, coating well. Sprinkle the mushrooms with Italian seasoning, red pepper flakes if using, and salt and pepper.
  • Drizzle olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5-8 minutes per side.
  • Preheat the oven to 400 degrees F.
  • Chop the garlic cloves into very small pieces(mince), if using, and add to marinara sauce.
  • Spread 1/2 cup of the marinara sauce on the bottom of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve. Enjoy.

1/4cup lime juice
1tablespoon chili powder
2cloves garlic, minced
1teaspoon ground cumin

Steps:

  • 1.Place mushrooms in large resealable food storage bag. Combine oil, lime juice, chili powder, garlic, cumin and ground red pepper in small bowl; mix well. Reserve 3 tablespoons mixture for Charred Corn Relish; cover and refrigerate. Pour remaining mixture over mushrooms. Close bag securely, turning to coat. Marinate in refrigerator at least 8 hours or overnight, turning occasionally. 2. Prepare grill for direct cooking. 3. Prepare Charred Corn Relish; set aside. 4. Drain chops; discard marinade. Place chops on grid. Grill, covered, over medium heat 13 to 15 minutes for medium or until desired doneness is reached, turning halfway through grilling time. Sprinkle with cilantro. Serve with Charred Corn Relish and hot pepper jelly, if desired.
