Steps:
- Remove thick end of mushroom stem, leaving about 1/2 inch (1 cm) attached to cap.
- Place, smooth side up, in large, shallow glass dish.
- Combine oil, vinegar, thyme, salt and pepper; pour over mushrooms, turning and brushing to coat evenly.
- Let stand for 15 minutes.
- Reserving marinade, place mushrooms, smooth side down, on greased grill over medium-high heat; close lid and cook for 5 minutes.
- Turn and baste with marinade; cook, covered, for about 3 minutes or until mushrooms yield to the touch when pressed.
- Arrange Parmesan over top; cook, covered, for about 2 minutes or until melted.

- Warm 1 1/2 tablespoons olive oil and 1 1/2 tablespoons garlic flavored olive oil in a skillet over medium heat. Stir in onions and mushrooms; reduce heat to low, and cook until the mushrooms are soft and blackened and the onions are black around the edges. (Add additional olive oil as needed.) Turn the heat off, drizzle with 1 1/2 tablespoons olive oil, and season with salt and pepper. Sprinkle generously with Parmesan and Asiago cheeses.

- Preheat oven to 400°F. Wipe ¾ lb. Portobello mushrooms clean and remove the stems. Finely mince 1 clove garlic.Lightly oil a baking sheet and place the mushrooms on top in a single layer, open side facing up.
- In a small bowl, mix together 2 Tbsp. olive oil, garlic, ½ tsp. dried thyme, and a little salt and pepper to taste.
- Drizzle over the inside of each mushroom evenly. Top each with a thin slice of butter from ½ a Tbsp. Bake the mushrooms for around 15 minutes until tender. While they are cooking, mix together the 1 Tbsp. grated Parmesan and 3 Tbsp. shredded Mozzarella.
- After the 15 min, top the mushrooms with the cheese and return to the oven for around 5 minutes. Once the cheese is golden and bubbly, remove the mushrooms from the oven, serve, and enjoy!

- Preheat your oven. Position your oven rack so that it is in the center of the oven and preheat to 400 °F (204 °C) degrees.
- Clean your mushrooms. Use a damp or dry cloth to wipe your mushrooms clean. Remove the stems. You can discard the stems or chop them up and cook them. You can also use a paper towel to wipe off any dust or crumbs. You can also slice your mushrooms if you prefer. To remove stems, hold the cap of the mushroom in your dominant hand and gently twist the stem with your other hand. You can scrape out the gills with a spoon if you prefer.
- Mix your marinade. In a small bowl, combine 1/4 cup olive oil, 1/4 cup balsamic vinegar, 2 1 clove minced garlic, 1 chopped shallot, salt and pepper to taste, and a sprinkling of fresh or dried herbs. Whisk together until mixed.
- Marinade your mushrooms. Place your mushroom caps (and stems if desired) in a large Ziploc bag. Pour your marinade mixture into the bag and gently work it around the mushrooms. Seal the bag and lay it flat in the refrigerator for 30 minutes. If you marinade your mushrooms for longer, they can soak up more marinade than they can handle and become mushy. It helps to flip the bag occasionally.
- Roast your mushrooms. Using metal tongs, gently remove your mushrooms from the bag and place them on a baking sheet sprayed with non-stick cooking oil. Place the baking sheet in the preheated oven for 10 minutes. After 10 minutes, use metal tongs to flip the mushrooms and cook for an additional 10 minutes.
- Serve. Enjoy as an entrée or as a side dish. Serve with any left over marinade as a dipping sauce. Drizzle with Balsamic vinegar reduction or an oil & vinegar dressing.

- Toss crumbs with 1/2 teaspoon salt and 1/4 teaspoon black pepper in a bowl and spread on a large plate.
- Lightly beat eggs in a bowl. Dip mushroom slices 3 or 4 at a time into egg, letting excess drip off, then transfer to bread crumbs, pressing mushroom slices into crumbs to help adhere and turning to coat. (Coating will be uneven.) Transfer to a tray.
- Heat about 1 inch oil in a 3- to 4-quart heavy saucepan over moderate heat until it registers 350°F on thermometer. Fry mushrooms in batches of 7 or 8, turning over occasionally, until golden, 1 to 2 minutes per batch, returning oil to 350°F between batches.
