This pork watercress soup is a quick and easy dinner, done in under 30 minutes!

1.25 lb Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet ((about half of a larger one))
1 tbsp olive oil
8- oz package of portabella mushrooms, sliced
1 inch piece of ginger, peeled and minced ((about 1 tbsp))
1 tsp garlic, minced
3 cups chicken broth
2 scallions, chopped
3 cups watercress or upland cress, thick stems removed

Steps:

  • Heat oil in a large pot over medium heat. Meanwhile, chop pork into one-inch pieces. When oil is hot, add pork and sauté. Turn pieces occasionally, until the pork is golden on all sides - about 5 minutes.
  • Add mushrooms, ginger, and garlic. Sauté for another minute.
  • Add chicken broth. Simmer for 10 minutes, until mushrooms are tender and pork is cooked through.
  • Stir in scallions and watercress. Cook for 1-2 minutes until watercress is lightly wilted, then serve!

2 1/2 ounces pork loin, cut in thin strips
1 garlic clove, halved
1/4 inch slice gingerroot
5 cups chicken stock, divided
4 scallions, cut in 1 inch lengths
1 tablespoon dry sherry
1 teaspoon soy sauce
2/3 cup cooked rice
1 1/2 cups watercress leaves

Steps:

  • Cook pork, garlic and ginger.
  • Add chicken stock, scallions, sherry, soy sauce and rice. Heat to boiling. Simmer for 2 minutes.
  • Stir in watercress. Discard ginger.

2 lbs pork, chopped
1 (14 ounce) package tofu, cubed (semi-firm or firm)
2 fresh garlic cloves, minced
1 tablespoon ginger, minced
1 lb round onion, sliced
5 large fresh shiitake mushrooms, sliced
1 bunch green onion, cut into 2-inch pieces
1 bunch watercress, cut into 2-inch pieces
1 tablespoon vegetable oil (for frying)
1/2 cup soy sauce
3 tablespoons mirin (sweet cooking sake)
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Add vegetable oil to large pan to heat. Add ginger, garlic and pork. Brown pork then add round onion, mushrooms. Add sauce ingredients: soy sauce, mirin and sugar. Let simmer 20-25 minutes. Adjust sauce to nappe consistency, then add tofu, green onions and watercress. Simmer 5 minutes. Enjoy!

  • Put the blanched pork ribs, smashed ginger slices, and 8 cups of water in a clean pot. Bring the water to a boil, and immediately turn the heat down to low. Simmer for 90 minutes, covered. Cantonese soups require low heat for a delicate favor and clear broth. Check on the soup periodically to make sure it is lightly simmering, but not boiling.
  • In the meantime, prepare the watercress by trimming off the large tough stems, and washing thoroughly in water 2-3 times.
