- In a small bowl, whisk the first 5 ingredients until blended. In a large skillet, heat 2 teaspoons oil over medium-high heat. Add pork; stir-fry 2-3 minutes or until no longer pink. Remove from pan., In same pan, stir-fry broccoli in remaining oil 3 minutes. Add coleslaw mix, bamboo shoots and garlic; stir-fry 3-4 minutes longer or until broccoli is crisp-tender. Stir in soy sauce mixture and pork; heat through., Meanwhile, cook noodles according to package directions, discarding or saving seasoning packets for another use. This 20 minute pork ramen stir fry is sweet, spicy and filled with vegetables for an easy, healthy weeknight dinner.

- Combine all the ingredients for the sauce in a small bowl and whisk together, set aside.
- Bring a large pot of water to a boil. Add ramen and cook according to package directions, drain and set aside.
- Add the avocado oil to a large skillet over medium heat.
- Once hot, add the garlic and ginger and cook for 1 minute until fragrant.
- Add the pork to the skillet and cook until browned, about 3 minutes.
- Add the vegetables, toss to combine with the pork and oil mixture and cook for 3-4 minutes until just softened.
- Add the ramen to the skillet, pour the sauce on top and toss everything together using tongs until well combined and coated in the sauce.
- Garnish with cilantro and serve.

- Heat oil in large skillet on medium-high heat. Add meat; stir-fry 5 to 7 min. or until evenly browned, stirring occasionally.
- Meanwhile, discard Seasoning Packet from ramen noodle packet. Add Noodles to saucepan of boiling water; cook 2 min. Drain.

- Discard 1 packet of flavoring from the soup, Bring pot of water to boil, Add noodles and vegetables. Boil until noodles are cooked through, 2 minutes; then drain.
- Sauce: whisk together orange juice, 1 cup water, teriyaki sauce, cornstarch and 2 flavor packets from ramen.
- In a large non-stick skillet, heat oil over medium-high heat Stir in pork, ginger and garlic; cook, stirring occasionally, until mixture is cooked through, 4-5 minutes.
- Bring sauce to a boil over medium-high heat. Cook, stirring until thickened, 2-3 minutes. Add Pork; heat, 1 minute. Add noodle mixture and scallions; toss to combine.

PORK AND NOODLE STIR-FRY

- Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain and rinse under cold water until cooled. Drain well and transfer to a large bowl. Toss with 2 teaspoons each chili sesame oil and vegetable oil.
- Combine the pork with the scallion whites, ginger, 1 tablespoon soy sauce and the remaining 1 teaspoon chili sesame oil in a medium bowl. Combine the remaining 3 tablespoons soy sauce, the mirin, rice vinegar and 1 tablespoon water in a small bowl.
- Heat the remaining 2 teaspoons vegetable oil in a large nonstick or cast-iron skillet over high heat. Add the pork mixture and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes; transfer to a large bowl, leaving any drippings in the skillet. Return the skillet to high heat and add the carrots and snow peas. Cook, stirring, until crisp-tender, about 3 minutes. Add the vegetables to the pork. Add the noodles to the skillet and cook, stirring, until warmed through, about 2 minutes. Add the soy sauce mixture and cook, stirring, until the noodles are coated.
- Return the pork and vegetables to the skillet and toss to combine; season lightly with salt. Divide among bowls. Top with the scallion greens and serve with more chili sesame oil.

- Cook the noodles as the label directs, then drain and rinse under cold water. Meanwhile, toss the pork with 1/4 teaspoon salt, pepper to taste and 2 tablespoons cornstarch in a bowl. Whisk the chicken broth and the remaining 1 tablespoon cornstarch in another bowl.
- Heat a large nonstick skillet over high heat. Add 1 teaspoon vegetable oil, then add the pork and stir-fry until lightly browned, about 5 minutes; transfer to a bowl. Add the remaining 3 teaspoons vegetable oil to the pan, then add the scallion whites, ginger and garlic; reduce the heat to medium and cook, stirring occasionally, 2 minutes. Add the broth mixture to the pan and bring to a boil; cook, stirring occasionally, until slightly thickened, about 5 minutes.
- Return the pork to the skillet along with the noodles, lime zest and 1/4 teaspoon salt and stir to heat through. Stir in the scallion greens. Divide among bowls and serve with lime wedges.

- Heat the oil in a wok or frying pan. Add the mince, break it up with a spoon and fry over a high heat for about 8 mins until browning. While the meat cooks, boil a kettle, then pour the hot water over the noodles. Set aside for 5-10 mins to soften.
- Add the ginger, garlic and veg to the pan and stir-fry for 2-3 mins. Mix 1 tbsp soy sauce with the cornflour to make a paste. Add the remaining soy sauce, the chilli sauce and 2 tbsp water. Drain the noodles and add to the pan with the sauce. Cook until the sauce coats the noodles, adding a splash of water if needed, then serve.

- Add 3 Tbsp. marinade to meat in shallow dish; stir to evenly coat meat with marinade. Refrigerate 30 min. to marinate. Mix remaining marinade with flour and 1/4 cup water until blended; reserve for later use.

MANDARIN PORK STIR-FRY WITH SESAME NOODLES
When the budget is tight try dressing up leftovers and serving as a stir-fry over ramen noodles. This can be made with uncooked pork loin or with leftover pork. If using precooked pork you only need to reheat the pork with the other ingredients. This inexpensive recipe makes a delicious meal for a family of four or six. If serving to children you might need to adjust the Sambal Oelek accordingly.

- In a small bowl, whisk together soy sauce, cold water, cornstarch and Sambal olek; set aside.
- Coat a cool, nonstick wok with cooking spray. Preheat wok over high heat, then add 1 teaspoon oil. When the oil is hot, add pork strips and cook 3-4 minutes or until pork is browned and cooked through, stirring constantly. Remove pork from wok and set aside. If using leftover pork loin strips; skip this step and add the meat in only to warm after the vegetables are cooked.
- To the wok add the pepper strips, onions, garlic, carrot and cook 2-3 minutes or until vegetables are crisp tender, stirring constantly. Add mushrooms and cook an additional 2-3 minutes, stirring constantly.
- Return the cooked pork back to wok. Stir soy sauce mixture well and pour it over the ingredients in the wok; stir in the grated ginger. While stirring constantly, heat for 1 minute or until the sauce thickens and bubbles; add mandarin oranges and toss gently to coat.
- Cook the ramen noodles as per package directions, drain and toss with 2 teaspoons sesame oil.
- Serve stir-fry over the noodles and garnish with toasted sesame seeds.
