4 Pork (from the hip, each 200 grams)
1 Tbsp clarified butter
1 Red onion (finely chopped)
2 Tbsps Brandy
300 milliliters Orange juice
1 Tbsp grainy Mustard
1 Tbsp liquid honey
1 Tbsp Worcestershire sauce
1 Orange (thinly sliced)
salt
freshly ground peppers
2 carrots
150 grams Snow peas
2 Tbsps butter

Steps:

  • Season the meat with salt and pepper and sear in in a pan in clarified butter over high heat for about 3 minutes on each side. Remove from pan, wrap in aluminum foil and keep warm.
  • Sauté onion in the butter that remains in the pan. Pour in brandy, bring to a boil and add orange juice, mustard, Worcestershire sauce and honey. Return to a boil, add orange slices and cook until syrupy over high heat. Season with salt and pepper.
  • Peel carrots and cut into slices. Rinse snow peas and cut off ends. Blanch carrots in boiling salted water for 4 minutes. Then add snow peas and cook another 4 minutes. Drain, rinse in cold water and drain.
  • Heat vegetables in a pan in 2 tablespoons melted butter, stirring to coat. Season with salt and pepper.
  • Add the meat to the sauce with accumulated juices, heat through and serve with the vegetables.

⅓ cup soy sauce
2 tablespoons chopped fresh rosemary
3 teaspoons minced garlic
2 (3/4 pound) whole pork tenderloins

Steps:

  • Make the orange marinade by whisking together the orange juice, soy sauce, rosemary, and garlic. Pour over pork tenderloin and marinate for at least one hour, preferably overnight.
  • Preheat oven to 400 degrees F (205 degrees C). Drain pork, reserving the marinade, and place on a baking sheet. Season with salt and pepper to taste. Roast for about 20 minutes until internal temperature has reached 145 degrees F (63 degrees C).

1 tbsp oil
2 eating apples , cored and cut into eight
1 onion , halved and sliced
small handful sage leaves, torn, or 2 tsp dried
100ml/3½ fl oz chicken or ham stock (from a cube is fine)
2 tsp Dijon mustard or wholegrain mustard

Steps:

  • Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.

  • Preheat oven to 375 degrees F (190 degrees C).

1 tablespoon vegetable oil
4 Red Delicious apples, peeled, cored, 1/3-inch wedges
1/4 cup Grand Marnier
1 1/4 cups chicken broth
4 tablespoons fresh parsley, chopped
3 tablespoons honey
1 teaspoon orange peel, grated
4 pork chops, 1 1/4-inch thick

Steps:

  • Melt butter with oil in heavy skillet over medium-high heat. Add apples and saute until tender and golden, about 10 minutes.
  • Add liqueur and bring to boil. Add broth, 2 tablespoons parsley, honey and orange peel. Simmer until liquid is slightly thickened, about 5 minutes.

1 tablespoon freshly ground black pepper
1 tablespoon kosher salt
1 tablespoon granulated sugar
2 teaspoons sweet smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 to 5 teaspoons chile flakes, depending on how spicy you like it
Four 1 1/4-inch-thick pork butt steaks
Olive oil, for drizzling
1 jalapeño, sliced
1 medium yellow onion, diced
1 teaspoon ground coriander
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 cups pitted fresh cherries (frozen work, too)
One 7.5-ounce can cherry soda, like Dr. Pepper
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
Juice of 1/2 lemon

Steps:

  • For the rub: In a mixing bowl, whisk together the pepper, salt, sugar, smoked paprika, garlic powder, onion powder and chile flakes. Liberally sprinkle the pork steaks on both sides and allow to marinate, refrigerated, for 3 hours or up to overnight.
  • Set up your grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Make the cherry barbecue sauce: Place a saucepan over the direct-heat side of the grill. Add a drizzle of olive oil along with the jalapeño and onion. Season with the coriander, cumin and salt and sweat until softened, 2 to 3 minutes. Add the cherries, cherry soda, molasses and Worcestershire sauce. Bring to a simmer and cook until the cherries have softened, about 10 minutes. Transfer to a blender and purée until smooth. Add the balsamic and lemon juice and purée again. Transfer back to the saucepan and place on the indirect-heat side of the grill. Cook until the sauce thickens and reduces, about 20 minutes. Remove from the grill and set aside.
  • Place the pork steaks on the indirect-heat side of the grill, close the lid and cook, keeping the temperature of the grill between 250 and 275 degrees F and basting with the cherry barbecue sauce once they have cooked for 2 hours, until the pork steaks are tender and an internal temperature reaches 195 degrees F, 3 to 4 hours total. Remove from the grill and allow the pork to rest for 10 minutes before serving. Serve with any remaining cherry barbecue sauce on the side.

2 pounds country-style pork ribs, or boneless steaks cut from shoulder, about 3/4 to 1 inch thick
Salt and pepper
1 1/2 cups freshly squeezed orange juice
1/4 teaspoon cayenne, or to taste
1 teaspoon ground cumin
1 shallot, minced
Vinegar or fresh lemon or lime juice, if necessary
1 teaspoon grated orange rind
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat oven to 450 degrees or heat broiler, adjusting rack so that it is about 4 inches from heat source. Put an ovenproof skillet large enough to hold pork in one layer on stove top and turn heat to high. Sprinkle meat with salt and pepper. Brown meat quickly on both sides, then transfer skillet to oven or broiler.
  • Meanwhile, combine orange juice, cayenne, cumin and shallots in a small saucepan and turn heat to medium. Cook, stirring, until it reduces to about 1/3 cup; taste and add salt as necessary, a touch more cayenne and cumin if you like, and some vinegar or lemon juice if sauce lacks acidity.
  • If broiling, turn meat once; if roasting, don't bother. When meat is firm but not tough and a little pink in center (about 10 minutes if broiling, 15 if roasting), remove it to a platter. Combine orange rind with parsley. Spoon sauce over meat, then top with orange rind-parsley mixture. Serve.

About 1 1/2 to 2 pounds 1-inch thick pork steaks, cut from the boneless loin or shoulder

1 cup fruity but sturdy red wine, like Barolo or a ready-to-drink Cabernet

Steps:

  • Preheat oven to 400 degrees. Combine a large pinch of salt with a few grindings of pepper, the cayenne and garlic, and sprinkle apples with this mixture. Put apples in a baking dish, pour white wine around them, and bake until apples are shriveled but moist, about 15 minutes.
  • Meanwhile, heat oil over medium heat in a skillet large enough to hold pork. Dust pork lightly with flour and sear it on both sides for a total of just a minute or so; it need not become brown. Add red wine and adjust heat so mixture boils energetically. Cook pork, turning occasionally, until it gains a beautiful deep color, is cooked through and wine reduces to a syrup; about 10 minutes. 1 Gala apple - peeled, cored, and thinly sliced
¼ cup orange juice
2 tablespoons jellied cranberry sauce

  • Melt butter in a large skillet over medium heat. Cook and stir apple, orange juice, cranberry sauce, and cloves in the melted butter until apples soften, about 2 minutes.

1/2 cup raisins
1/2 cup celery, chopped and cooked

3 tart apples, cored and halved

1 tablespoon olive oil
1/4 cup orange juice
1 tablespoon dried basil
1/4 teaspoon black pepper
1/4 teaspoon seasoning salt

Steps:

  • Put all ingredients in a medium sized freezer bag. Shake well. Let sit in the refrigerator at least 1/2 hour.
  • Preheat a pan on the stove (I recommend cast-iron) on medium heat.
  • Remove the pan from the heat to set the steaks in the pan.
  • Pour the marinade over top of the steaks.
  • Return the pan to the heat, flipping the steaks several times (every 3 minutes or so)until the marinade has cooked off and the steaks have browned (about 10-15 minutes).
  • Serve and enjoy! Can be doubled in a large enough pan.
