PORK CHOP SOUP
A cheap but tasty, hearty soup that you'll always have seconds of. Serve fresh, with bread if desired.

Steps:
- Place pork chops, paprika, oregano, garlic powder, salt, pepper, chili powder, bay leaf, chicken broth, water, and soy sauce in a large stock pot. Bring to a boil, uncovered, then reduce heat to medium low and let simmer for 1 hour. Remove the pork chops and set aside to cool.
- Whisk 3/4 cup of the cooking liquid with the flour; set aside. When the pork chops are cool remove and discard any bones or fat. Chop or shred the meat into bite size pieces.
- Add the potato, broccoli, carrot, onion, celery, and cooked pork back to the pot. Bring the mixture to a boil, stir in the flour mixture. Reduce heat and simmer for 1 hour. Remove the bay leaf and gently mash the potatoes before serving.

QUICK 'N EASY HOMEMADE PORK SOUP
For the pork in this recipe, pork chops would be fine. I cut away the meat part in some particularly fatty "boneless ribs" and used that for the meat in this soup. Ham could work too but I haven't tried it.

Steps:
- Put water in saucepan and set to medium heat.
- When water is boiling, drop in beef bouillion cubes and stir until desolved.
- Add sweet basil, rosemary, onion, and garlic powder. Stir and let boil.
- Cut meat into bite-sized pieces. Brown them on one side. Add salt and pepper while that side is cooking. Then flip and brown on the other side. Add meat to soup.
- Add chopped vegetables to soup. Let soup boil for 10 minutes or less, depending on how crisp you want your vegetables.

PULLED PORK SOUP

- Make the soup: Combine the bacon, onion, garlic, tomato paste, smoked paprika, Creole seasoning and chili powder in a food processor; pulse to make a coarse paste.
- Heat the vegetable oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the bacon-spice paste and cook, stirring occasionally, until dark brown, about 6 minutes. Add the ribs, turning to coat. Stir in the vinegar and molasses, scraping up any browned bits from the bottom of the pot.
- Stir in the tomatoes, chicken broth and 2 cups water. Cover and bring to a simmer, then reduce the heat to low and gently simmer, stirring once or twice, until the ribs are tender, 2 hours to 2 1/2 hours.
- Transfer the ribs to a cutting board and shred the meat; discard the fat and bones. Position the pot halfway off the burner and increase the heat to medium. The fat will migrate to the cooler side; use a ladle to skim it off. Reposition the pot over the burner and add the shredded pork and the beans. Cook, stirring occasionally, until heated through, about 10 minutes.
- Meanwhile, prepare the bread: Spread each slice evenly with the butter and relish. Top with the scallions and parsley. Ladle the soup into bowls and serve with the bread.
PORK SOUP RECIPE WITH AMERICAN GINSENG, LEAN PORK AND DATES
American ginseng is reputed to be a gentle cooling herb and candied dates gives extra sweetness to the clear broth. The recipe here uses the thermal cooker but you can use the slow cooker too. Use a normal soup pot for the first 20 minutes and shorten the cooking time by about 1 hour.

- Cut the lean pork into medium-sized chunks.
- Parboil the pork for about 5 minutes.
- Crush the american ginseng slightly with the side of your knife.
- Bring the water to a boil in the inner pot of the thermal pot and add all the ingredients.
- Bring the water back to a boil and cook for about 20 minutes.
- Remove inner pot from heat and transfer to the outer pot, cover and let it cook for 2 hours.
- Season with some salt before serving.

- In a large heavy saucepan, brown and crumblepork. Stir in onion and garlic, cook and stir until onion is soft, about 3 minutes. Stir in all remaining ingredients and bring to a boil, lower heat and simmer about 10 minutes. Serve it with love. Enjoy.
