This cabbage salad really has been a favorite for decades. It is easy to make and travels well for potluck suppers. -Edna Culbertson, Jenison, Michigan

1 small head cabbage, shredded
1/2 cup chopped green pepper
1/2 cup chopped onion
3 tablespoons mayonnaise
2 tablespoons white vinegar
1 tablespoon sugar
1/4 teaspoon salt
4 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine cabbage, green pepper and onion. In a small bowl, combine mayonnaise, vinegar, sugar and salt. Pour over cabbage mixture and toss to coat. Cover and refrigerate at least 4 hours. Stir in bacon just before serving.

1 teaspoon Dijon mustard
1 teaspoon sugar
Kosher salt
Fresh ground pepper
1 cup finely shredded green cabbage
1 cup finely shredded red cabbage
1/2 cup julienned carrot
1/2 cup julienned red pepper
1/4 cup finely slivered red onion
1 small bunch chives, cut into 2-inch lengths

Steps:

  • In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.
  • In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.
  • Drizzle the salad with the vinaigrette, and toss to coat.

1 teaspoon salt

20g pack parsley , roughly chopped
2 Cox's apples , quartered, cored and sliced
handful of radishes or 2 celery sticks, sliced
3 tbsp toasted pine nuts
1 tbsp pumpkin seeds
2 tbsp each sunflower seeds and linseeds
2 tsp grated root ginger
1 tsp clear honey
2 tbsp lemon juice
4 tbsp light olive oil

Steps:

  • Prepare all the ingredients for the salad and mix them in a large bowl.
  • Put all the dressing ingredients into a small bowl. Season and whisk until slightly thickened. Pour over the salad and toss until evenly coated.

Cabbage, carrot and bell pepper are marinated in a light dressing, and tossed with fresh crumbled bacon just before serving. One of our favorite summer salads. To make it easy, I use a food processor for the shredding.

1 small head green cabbage, cored and shredded
1 carrot, peeled and shredded
1 small green bell pepper, seeded and chopped
1 small onion, chopped
3 tablespoons mayonnaise
2 tablespoons white vinegar
1 tablespoon sugar
¼ teaspoon salt
4 slices bacon

Steps:

  • In a large bowl, toss together the cabbage, carrot, green pepper and onion. In a small bowl, whisk together the mayonnaise, vinegar, sugar and salt. Pour over the cabbage mixture, and toss to coat. Cover and refrigerate for at least 4 hours, or overnight.
  • Place the bacon in a large deep skillet. Cook over medium heat until evenly browned, turning occasionally. Drain, cool and crumble. Toss crumbled bacon with salad just before serving.

1 head napa cabbage
6 green onions, chopped
1 cup canola oil
1/2 cup sugar
1/4 cup vinegar
2 teaspoons soy sauce
2 (3 ounce) packages ramen noodles
1 tablespoon sesame seeds
1 cup sliced almonds
1/2 cup unsalted butter

Steps:

  • chop napa cabbage and put in large bowl.
  • chop onions and mix with cabbage.
  • dressing: I save my large mayo jars or any large jar will do.
  • add all dressing ingredients together and shake, shake, shake, until well mixed. Leave out on counter top.
  • crush ramen noodles ( remove seasoning package and throw away ).
  • melt butter in medium fry pan on top of stove,add sesame seeds, ramen noodles, and almonds and fry until lightly browned.
  • 1/2 hour before serving, add noodle mixture to cabbage and onions, pour dressing a little at a time until desired taste has been reached. Put any left over dressing in fridge for later use.
