PORK ROAST WITH ROASTED APPLES AND BRAISED RED CABBAGE
This recipe for pork roast with roasted apples and braised red cabbage is sure to appeal to the entire family.

Steps:
- Preheat oven to 400 degrees. Line a roasting pan with parchment paper. Place a roasting rack inside pan and spray with cooking spray.
- Generously season the pork with salt and pepper. Transfer to roasting rack, bone side down. Grate the onion on the large holes of a box grater. Press onion evenly over the pork, covering as much of the meat as possible. Sprinkle thyme over pork and generously drizzle with oil; roast for 1 hour.
- Place apples, cut side up, around the pork, on the rack. Top each apple with 1/2 teaspoon butter, and season with salt. Return to oven; roast until a meat thermometer inserted in the center of the pork registers 140 degrees. about 45 minutes. Remove pork, and let stand 20 minutes before carving.
- Slice the pork evenly between the rib bones, and serve with cabbage and roasted apples.
RED CABBAGE WITH PORK AND NEW POTATOES
This is a quick to put together meal and requires minimal attention while cooking. The original recipe calls for cooking the oven but I think it would work equally well in the crock pot on low for about 4 hours. Serve with a hearty rye bread for a delicious meal.

- Warm olive oil in heavy dutch oven over medium high heat; add the pork loin chops and brown on all sides. Remove meat and set aside.
- In same skillet saute the onion until golden, about 5 to 10 minutes; adding in a touch of wine and scraping up the brown bits from the meat.
- Stir in cabbage, potatoes and sliced apples. Sprinkle with brown sugar, salt, pepper and red wine vinegar. Place browned chops on top of all and pour 1 cup of white wine over all.
- Cover and bake, stirring once or twice, in a preheated 375 degree oven for 90 minutes or until tender. To keep meat moist, submerge into cabbage mixture as it cooks.
BRAISED PORK WITH CABBAGE AND APPLES

- Preheat oven to 350 degrees. Season pork all over with salt and pepper. Heat 2 tablespoons oil in a large, heavy-bottomed ovenproof pot over medium-high heat. Add pork and cook until browned on all sides, turning as needed, about 8 minutes total. Remove from pot.
- Reduce heat to medium. Add remaining 1 tablespoon oil if pan is too dry, along with onion, garlic, caraway seeds, and a splash of water. Cook, stirring occasionally, until onion is translucent, 1 to 2 minutes. Add flour and cook, stirring, 30 seconds. Add vinegar and bring to a boil, then add cider and broth and return to a boil. Add cabbage, fennel, and 1 apple. Return to a boil, then reduce to a vigorous simmer, cover, and cook 7 minutes, stirring once.
- Add pork, nestling it into vegetables. Transfer to oven and cook, uncovered, 15 minutes. Remove pork and add remaining 2 apples, turning vegetables and pushing apples down into liquid. Return pork to pot and continue cooking until a thermometer inserted in thickest part of pork registers 138 degrees, 20 to 25 minutes more. Remove pork and let rest at least 10 minutes before slicing. If necessary, return vegetables and apples to oven and cook, covered, until fork-tender, 10 to 20 minutes more.
- Transfer vegetables and apples to a platter. Slice pork and add to platter. Stir butter into liquid in pot, then season with salt and vinegar. Serve pork and vegetables with sauce on the side.

- Put the cabbage, pears, ginger, stock and vinegar into a pan. Bring to the boil, then reduce heat. Cover, then gently cook, stirring occasionally, for 40 mins. Stir in the walnuts.
- Split the pork fillet almost in half down its length, then open out like a book. Rub on all sides with the oil and smear with mustard. Grill for 15 mins, turning once, until the pork is browned and just cooked. Cover with foil, rest for 2 mins, then slice and serve with the cabbage.

- 1. Remove the pork from the fridge 3 hours before cooking. Using a sharp knife, make cuts in the pork skin to the flesh in the same direction as the bones, about 3mm apart. Rub the red wine vinegar and ground sea salt into the skin. Set aside to dry.
- 2. Preheat the oven to 180°C. Place the pork on a wire rack in a roasting tin and put in the oven. Cook for 30 minutes, then turn the heat down to 160°C and cook for another 30 minutes. Check the meat's core temperature and remove from the oven when it reaches about 65°C. Turn the oven off and leave the door ajar, then allow the meat to rest in the oven for 30 minutes. The meat's core temperature should rise to around 70°C – be sure to check.
- 3. Meanwhile, slice the cabbage. Heat the olive oil in a deep saucepan and sweat the onion, garlic and salt over low heat for 2 minutes, or until soft. Add the cabbage and cook until it is soft and melting, about 5-7 minutes.
- 4. Add the apple, vinegar and sugar and cook for 3 minutes, then add the wine and leave to simmer for about 30 minutes, stirring occasionally. Add the stock and simmer for 1 hour until most of the liquid has evaporated.
