"FAUXRIZO" TACO FILLING

5 to 6 tablespoons coconut oil
1 cup finely diced yellow onions
1 package (12 to 14 ounces) ground meat substitute, such as seitan
2 tablespoons sweet paprika
1 tablespoon ground cumin
1 tablespoon granulated garlic
2 teaspoons ancho chile powder
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon
3 tablespoons apple cider vinegar
1 cup frozen grilled corn
Salt and freshly ground black pepper
Eight 6-inch corn tortillas, warmed
Jicama and Cilantro Creme Fraiche Slaw, recipe follows
4 radishes, thinly sliced
Lime wedges, for serving
3 tablespoons creme fraiche
3 tablespoons mayonnaise
1 lemon, juiced (1 to 2 tablespoons)
Salt and freshly ground black pepper
1 cup shredded white cabbage
1 cup julienned jicama
1/4 cup chopped fresh cilantro

Steps:

  • Warm 5 tablespoons of the coconut oil over medium heat in a cast-iron skillet. Add the onions and saute until golden brown, about 5 minutes. Add the meat substitute and stir to coat and just warm through, adding more oil as needed to prevent it from sticking.
  • In a small bowl, combine the paprika, cumin, granulated garlic, ancho chile powder, coriander, cayenne, oregano and cinnamon. Stir in 3 tablespoons water and the vinegar. Pour the spice mixture over the meat substitute and stir to completely combine. Add the corn. Continue to cook until the mixture is hot, 10 to 15 minutes. If it starts to stick, add a little more water, 1 tablespoon at a time. Season with salt and pepper prior to serving.
  • Fill each tortilla with some of the mixture and top with some of the Jicama and Cilantro Creme Fraiche Slaw and radish slices. Serve with lime wedges.
  • Whisk together the creme fraiche, mayonnaise and lemon juice in a large bowl and season with salt and pepper. Add the cabbage, jicama and cilantro and gently stir to combine. Taste and adjust the seasoning as needed.

BLACKBERRY-PLUM MOJITOS

1 1/4 cups sugar
2/3 cup fresh lemon juice (from about 3 lemons)
2 pounds plums, pitted and cut into wedges
18 ounces fresh blackberries
1 cup fresh basil leaves, plus more for serving
2 to 3 cups vodka
6 cups sparkling water

Steps:

  • Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar is dissolved, 3 minutes. Remove from heat; let cool 15 minutes. Syrup can be refrigerated for up to 1 month.
  • Combine lemon juice, fruit, and basil in a bowl. Add syrup; mash lightly to release juices. Refrigerate at least 1 day and up to 4 days.
  • Combine fruit mixture and vodka in a pitcher or punch bowl; ladle about 1/3 cup into each glass. Fill with ice. Top with sparkling water, garnish with more basil, and serve.

1/2 cup sour cream
1/4 cup mayonnaise
Juice of 2 limes (1/4 cup)
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

1/2 green cabbage, sliced (about 8 cups)
1/2 cup packed fresh cilantro leaves, chopped
Canola oil, for frying
1 pound catfish or other firm white fish fillets, cut into 1-by-2-inch pieces (about 24 total)
3 teaspoons taco seasoning
1 cup breadcrumbs
1 cup all-purpose flour
1 teaspoon baking powder
1 large egg
1/4 cup pilsner or lager beer
1/4 cup hot sauce, plus additional for assembly and serving
Four 10-inch tortillas, such as flour, spinach or sun-dried tomato
1 avocado, sliced
1 cup crumbled tortilla chips
1/2 cup thinly sliced radishes

Steps:

  • Combine 1/4 cup sour cream, the mayonnaise, lime juice, cayenne, salt and pepper in a large bowl. Add the cabbage and cilantro and toss to combine. Cover and refrigerate until ready to serve.
  • Heat 1/2 inch of the oil in a cast-iron skillet to 345 degrees F. Lay out the fish pieces and pat dry with a paper towel. Sprinkle them with salt, pepper and 1 teaspoon taco seasoning.
  • Combine the breadcrumbs, flour and baking powder in a bowl and sprinkle with salt and pepper. Combine the egg, beer, hot sauce and remaining 2 teaspoons of taco seasoning in a second bowl. Dip the fish in the egg mixture, letting any excess drip off, and dredge in the flour mixture. Working in batches, fry in the hot oil, turning once, until golden brown, 3 to 5 minutes total. Remove with a slotted spoon or tongs and place on a paper towel-lined plate. Season with salt.
  • Lay out 1 tortilla on your work surface. Pile the following ingredients on top of each other in the middle of the tortilla in this order: 1 cup slaw, 6 pieces of the fried fish, a quarter of the avocado slices, a quarter of the crumbled tortilla chips and a quarter of the radishes. Smear 1 tablespoon of the remaining sour cream on the tortilla next to the avocado and add a few dashes of hot sauce; this will act as the glue to keep help keep everything together.
  • Carefully roll up the tortilla into a burrito and place seam-side down on your work surface. Insert 6 evenly-spaced skewers crosswise through the roll. Using a serrated knife, trim and discard the very ends of the roll (or eat them), and then slice between the skewers to create 6 skewered rounds. Repeat with the remaining ingredients.

8 ounces mustard greens
1 tablespoon white miso paste
2 teaspoons Sriracha or other chili-garlic sauce
2 teaspoons coconut oil

Steps:

  • Stem and chop the kale and mustard greens, discarding half of the stems and chopping the rest. Combine the miso paste, Sriracha and 2 tablespoons water in a small bowl. Set aside.
  • Heat the oil in a large saute pan over medium heat. Add the stems, cooking until tender, about 3 minutes. Add the chopped greens, pour the miso mixture over them and cook until the greens are tender, about 5 minutes.
