2 teaspoons seeded and minced jalapeno pepper
1 clove garlic
¾ teaspoon minced fresh ginger
⅓ cup lime juice
¼ cup packed cilantro leaves
2 tablespoons honey
2 teaspoons balsamic vinegar
½ teaspoon salt, or to taste
⅓ cup extra-virgin olive oil
1 pound flat iron steak
salt and ground black pepper to taste
1 cup corn kernels
1 cup chopped yellow bell pepper
½ cup thinly sliced red onion
1 plum tomato, diced
½ jalapeno pepper, thinly sliced
8 cups torn romaine lettuce
½ cup crumbled feta cheese
1 cup tortilla chips, or to taste

Steps:

  • To make the dressing, blend jalapeno, garlic, and ginger in a blender until finely chopped. Add lime juice, cilantro, honey, balsamic, and salt; pulse to blend. With blender running, drizzle in oil until well incorporated.
  • Preheat oven broiler. Season steak with salt and black pepper, then transfer to a foil-lined baking sheet.
  • Broil 4 inches from heat until an instant-read thermometer inserted into the center registers 135 degrees F (57 degrees C) for medium-rare, 3 to 4 minutes per side. Let rest about 10 minutes, then thinly slice against the grain.
  • Stir together corn, bell pepper, red onion, tomato, and jalapeno (if using) in a bowl.
  • Divide lettuce among 4 plates; drizzle each with about 2 tablespoons dressing. Top with steak slices, then with corn mixture. Sprinkle with feta and garnish with chips.

1 pound top sirloin (cut into 2-inch cubes)
5 tablespoons low-sodium gluten-free soy sauce (or coconut aminos)
3-5 drops stevia glycerite (omit if using coconut aminos)
1 tablespoon lemon juice
1/4 teaspoon steak tenderizer (or salt)
1/8 teaspoon black pepper (fresh ground)
4 ounces low-fat cream cheese (or kite hill cream cheese if dairy-free)
1/4 cup 4% cottage cheese (or 1/4 cup mayo or aioli if dairy-free or higher fat)
1/4 cup water
2 cloves garlic
1 tablespoon lime juice (or more to taste)
1/4 teaspoon salt
1 cup cilantro (1 bunch, including stems)
1/8 teaspoon pepper
1 head iceberg lettuce (or butter lettuce, torn)

Steps:

  • Marinate steak in coconut aminos, salt, and lemon for at least 30 minutes.
  • While the steak marinates, prepare the sauce. Combine all ingredients un a high power blender and blend until completely smooth. Adjust seasoning to taste, adding more salt and a bit of coconut aminos if it is more sour than you like. Set aside.
  • Heat a nonstick pan over medium-high heat. Add the beef along with the marinade and cook until browned on all sides cooked to your liking, about 7 minutes for medium rare (125ºF).
  • Serve over a bed of lettuce with the sauce drizzled over top.

1/2 cup hoisin sauce
1/2 cup soy sauce
1/4 cup sesame oil
1 tablespoon heaping chili-garlic sauce
8 garlic cloves
4 sirloin steaks
1 bunch chopped green onion
1/2 cup chopped cilantro
2 tablespoons toasted sesame seeds
1 lb linguine, cooked al dente

Steps:

  • mix first 5 ingrediants together and place 1/2 the marinade with steaks in a gallon size zip lock bag.
  • Reserve the other 1/2 for noodles.
  • Marinade for at least 2 hours.
  • Heat broiler, place steaks on broiler pan brushing 1/2 of the marinade from the bag over the steaks.
  • Broil 4-6 inches from the heat. Broiling 8-10 minutes for medium rare or till desired doneness, turning only once and brushing the other side with the other 1/2 of marinade from the bag.
  • Place the reserved marinade that was not used with the steaks in the bottom of a large bowl.
  • Place hot cooked noodles on top and toss till well coated.
  • After steaks have been allowed to rest for a minute slice into strips and place over noodles.
  • Sprinkle with cilantro green onions and sesame seeds.

4 beef sirloin steaks, 1 inch thick (about 1 1/2 lb)

Steps:

  • Heat gas or charcoal grill. In food processor, place cilantro, onion, garlic, chile, lime juice, oil and 1/4 teaspoon of the salt. Cover; process until finely chopped. Blend in 2 to 3 teaspoons water to make sauce thinner, if desired. Transfer to small bowl; set aside until serving time.
  • In small bowl, combine cumin, pepper and remaining 1 teaspoon salt; rub evenly over steaks. Place steaks on grill over medium heat. Cover grill; cook 7 to 10 minutes for medium-rare (145°F), turning once halfway through cooking.
  • Serve 2 tablespoons chimichurri over each steak.

1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 1 1/4-pound top sirloin steak, about 1 inch thick
3 tablespoons olive oil
4 large garlic cloves, thinly sliced
3/4 pound plum tomatoes, seeded, diced
1 cup chopped fresh cilantro leaves

Steps:

  • Rub cumin and chili powder onto both sides of steak, then sprinkle with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add steak to skillet and sauté until cooked to desired doneness, about 4 minutes per side for medium-rare. Transfer steak to plate. Add remaining 1 tablespoon oil to skillet. Add garlic and stir 1 minute. Add tomatoes and cilantro. Cook until tomatoes begin to soften, about 4 minutes. Season sauce with salt and pepper.
  • Cut steak crosswise into thin slices. Arrange slices on platter. Mix any steak juices into sauce. Spoon sauce over steak.

4 (1 lb) steaks (ribeye, t-bone, sirloin, each steak approx. 1 lb)
salt and pepper
3/4 cup salted butter
1 bunch cilantro
4 garlic cloves
1/2 teaspoon paprika
1 teaspoon lemon juice

Steps:

  • Select steaks approx 1 inch thick. Allow steaks to come to room temperature so they cook quickly and evenly.
  • Place slightly softened butter, garlic, cilantro, paprika and lemon juice in food processor, and pulse until well blended. Refrigerate resulting herb butter.
  • Salt and pepper steaks.
  • Grill steaks uncovered on hot bbq for 5 minutes on one side. Don't worry if it flames a bit.
  • After 5 minutes, turn steaks, place lid on BBQ, close top vent half-way and cook about 8 minutes more. During this period, be sure to turn steaks every two minutes for even cooking. This should give you medium-rare to medium doneness.
  • Remove steaks from grill.
  • Place large dollops of herb butter on steaks, and allow steaks to rest 5 minutes on plate, covered, so juices get re-absorbed. This 5 minutes is a great time to use the BBQ to grill some veggies. I make grilled zucchini, yellow squash and portabella mushrooms. After grilling veggies, add some of the herb butter to them.
  • For best flavor, use a charcoal grill with mesquite natural charcoal, but you can use a gas grill.
