ROAST PORK MARINATED IN GARLIC ALLSPICE-CUMIN ADOBO: CERDO BRUJO

Roast Pork Marinated in Garlic Allspice-Cumin Adobo: Cerdo Brujo image

Provided by Food Network

Yield 8 servings

Number Of Ingredients 10

1 head garlic, separated into cloves and peeled
2 teaspoons black peppercorns
2 teaspoons ground cumin
2 teaspoons allspice berries or ground
1 tablespoon salt
3/4 cup bitter orange juice (juice of about 6 oranges) or a mixture of orange juice and lime juice
1 cup orange juice
1/4 cup sweet sherry or port, for deglazing
1 (8 to 9 pound) leg of pork
1 teaspoon salt

Steps:

  • For the marinade: Place all the ingredients except the juice in a large mortar and pound to a paste with a pestle. Stir in the bitter orange juice. If desired puree these ingredients in a blender or food processor. Set aside.
  • For the pork: Trim the skin only from the back of the leg. Wipe the leg of pork clean. Make several deep incisions all around the leg, except for the skin. Rub with salt. Allow to rest for a few minutes. Rub pork all over with the marinade, pushing it in the deep gashes made all over the leg. Cover with plastic film and refrigerate, preferably overnight or for a couple of hours. Wipe the marinade from the skin with a clean cloth.
  • Cooking the pork: Preheat oven to 400 degrees F.
  • Place the leg on a roasting pan. Bake uncovered with the skin side up for about 4 hours. Check the roast often, add some orange juice, and water if the pan juices dry out. Cook until the skin is like a crackling and the juices run clear when the meat is pierced on the thickest part of the leg (about 160 degrees F on a meat thermometer), about 3 1/2 hours

CUMIN PORK ROAST WITH WILD MUSHROOM SAUCE

Cumin Pork Roast With Wild Mushroom Sauce image

I serve this flavorful roast with its rich mushroom gravy with garlic mashed potatoes and either spinach or sautéed carrots. I have also found that when I want to deglaze a pan and scrape up the brown bits, I don't use a non-stick pan, it is much better and more flavorful that way. I tried to say in the recipe that you can use a combo of the shrooms if you wish, but it would not let me. Prep time is approximate. This recipe is adapted from Bon Appetit magazine, Feb 1997.

Provided by Scoutie

Categories     Pork

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 15

3 1/2 lbs center-cut pork loin
4 teaspoons ground cumin
3 tablespoons butter
14 ounces oyster mushrooms or 14 ounces portabella mushrooms, thickly sliced
1/2 cup chopped shallot, plus
1 tablespoon chopped shallot
2 tablespoons finely chopped garlic (or more if you love garlic like I do)
1 tablespoon finely chopped jalapeno (with seeds)
1 teaspoon finely chopped jalapeno (with seeds)
2 tablespoons finely chopped fresh oregano or 2 tablespoons dried Italian seasoning
1 (14 1/2 ounce) can low sodium chicken broth
2 tablespoons all-purpose flour
1/4 cup dry red wine
salt (to taste)
pepper (to taste)

  • Preheat oven to 375°F Sprinkle pork with salt and pepper. Rub 3 teaspoons cumin over pork. Place in roasting pan. Roast pork until meat thermometer inserted into center registers 150°F, about 50 minutes.
  • Meanwhile, melt 2 tablespoons butter in large skillet over medium-high heat. Add mushrooms, 1/2 cup shallots, garlic and 1 tablespoon jalapeño; sauté until mushrooms are very tender and beginning to brown, about 15 minutes. Remove from heat. Stir in mushroom mixture and any accumulated juices from pork on platter. Boil until mixture thickens to sauce consistency, stirring occasionally, about 5 minutes. Season with salt and pepper.

ROAST PORK WITH CHERRY SAUCE

Roast Pork With Cherry Sauce image

I found this recipe in a weekly magazine that comes with our newspaper. I am not a big meat eater, but I figured that matching the pork with the cherries was a good mix and boy was I right. I hope you enjoy this as much as my husband and I did! The cherry sauce did call for putting in 12 whole cloves when you are simmering it with the sugar and cinnamon, and then removing them. I did not do this as I don't like cloves.

BEST ROAST PORK I'VE EVER EATEN

Best Roast Pork I've Ever Eaten image

This really is the best pork roast I've ever eaten. I use fresh rosemary from my herb garden but dried will work. Even though the Marsala is optional, it's just not the same without it, in my opinion.
