Tender, tasty pork chops in a creamy vegetable sauce. I paired it with Carol Bullock's Greek Potatoes (Recipe #8926) and it was a big hit. Also served green beans and sliced carrots. I omitted the salt from the chops as there was enough in the (low sodium) soup for our tastes.

4 -6 pork loin chops, 3/4-inch thick
salt and pepper, and
paprika
2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon parsley
1 (10 ounce) can reduced-fat reduced-sodium condensed cream of mushroom soup
1 (10 ounce) can mushroom stems and pieces, drained
1/3 cup water or 1/3 cup milk

Steps:

  • Season chops with pepper and paprika. Saute chops at low temperature in butter. Season with salt*(optional).
  • Transfer loin chops to baking dish or casserole.
  • Combine celery, onions, parsley flakes, mushroom soup, mushrooms and water.
  • Pour the mushroom mixture over the pork chops.
  • Cook convered, in 350F oven for 30 minutes.
  • Turn chops, stir sauce and cook for another 30 minutes or until meat is no longer pink.
  • *add optional salt after chops are browned.

This recipe is one of my favorites for using pork chops. The meal turns out to be very tasty and tender. I got this many years ago from Nova Scotia, where I am originally from.

4 -6 pork loin chops, 2cm thick (3/4-inch")
1 dash salt
1 dash pepper
paprika, to taste
2 tablespoons butter or 2 tablespoons margarine
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon parsley flakes
10 ounces condensed mushroom soup
10 ounces mushroom stems and pieces (I use fresh mushrooms)
1/3 cup water or 1/3 cup milk

Steps:

  • Season chops with pepper and paprika.
  • Saute chops at low temperature in butter.
  • Season with salt after chops are brown.
  • Transfer chops to baking dish or casserole.
  • Combine celery, onions, parsley, soup mushrooms and water. Pour over chops.
  • Cook covered in 180 C or 350 F oven for 30 minutes. Turn chops over and cook for another 30 minutes or until done and the meat is no longer pink.
  • Serve with rice or noodles.
  • Enjoy!

2 chopped onions
1/4 cup butter
1 cup sliced mushrooms
2 cups white rice
2 (10 1/2 ounce) cans beef consomme
parsley, to color

Steps:

  • melt butter in a skillet on top of the stove and sauté onions until clear in the butter.
  • then add in rice and fry the rice until well colored and slightly browned. (Its kind of like rice a roni).
  • place mixture into a covered casserole dish.
  • add consomme`.
  • drop in the mushrooms and parsley; add salt and pepper to taste and bake at 350F for about 45 minutes until the mushrooms rise to the top of the rice mixture.
  • uncover and mix the mushrooms and fluff the rice.
  • Then serve!

A simple Country Pork Chop and Rice Bake is an easy dinner recipe with just 10 minutes of prep.

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

2 tbsp vegetable oil (30 ml)
2 lbs pork shoulder (boneless, cubed, 900 g)
4 large scallions (chopped, )
8 oz mushrooms (sliced, 225 g)
2 cups chicken stock (500 ml)
1 cup long-grain rice (250 ml)
1/4 cup orange juice (60 ml)
1/4 cup soy sauce (60 ml)
1 tsp ginger (5 ml, grated)
1 tsp orange zest (5 ml,grated)
ground pepper (to taste)
1 cup peas (fresh or thawed, 250 ml)

Steps:

  • Heat the oil in a skillet over moderate heat and saute the pork until browned on all sides.
  • Transfer to a greased baking dish. In the same skillet, saute the scallions and mushrooms until tender, about 5 minutes.
  • Stir in the remaining ingredients except for the peas and bring to a boil.
  • Pour over the pork and bake covered in a preheated 350F (180C) oven until the rice is tender and the liquid is absorbed, about 45 minutes.

1 can cream of mushrooms soup
3/4 cup rice
1 cup water
1/2 teaspoon garlic (granulated)
1/2 teaspoon onion (granulated)

1/4 teaspoon teaspoon (pepper)
5 baby bella mushrooms (chopped)
5 spears asparagus (chopped)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium sized bowl mix together the rice, cream of mushrooms soup, water, asparagus, mushrooms, and seasoning
  • Pour the rice mixture into a casserole dish.
  • Season the pork chops with salt and pepper and then also some parsley, garlic, and onion.
  • Place the pork chops on top of the rice mixture and then cover the dish with aluminum foil.

4 thick cut pork chops (frozen)
2 cups long grain or parboiled white rice
two 10.5 ounce cans condensed mushroom soup
three 10.5 ounce cans water (use the empty cans from the soup)
2 tablespoons dry onion soup mix
10 saltine crackers
1 cup shredded cheddar cheese
parsley to garnish

Steps:

  • Preheat your oven to 350 °F.
  • Whisk together the rice, soup, water and soup mix until the lumps in the soup are smoothed out and mixed in. To get three cans of the water, simply fill up the empty mushroom soup cans and use to measure. It also helps clean out the extra soup!
  • Pour into a large deep large lidded casserole dish or Dutch oven like I used. This recipe is too big for a 9x13 usually, with those thick chops.
  • Place your frozen pork chops on top of the rice and gently immerse the chops into the soup and cover it completely so that the pork chops don't dry out.
  • Cover with foil or a lid and cook for 1 1/2 hours OR until the rice is tender and the pork has reached a temperature of 145°F .
  • Remove from the oven and sprinkle the crackers, then the cheese on top. Return to the oven and broil for 2-3 minutes until the crackers are browned and the cheese has melted.
  • Remove and serve.

1 lb pork tenderloin, cut into 1/2 inch slices
3 slices bacon, diced
1 medium onion, chopped
1/2 cup canned sliced mushrooms
1 teaspoon salt
1/8 teaspoon pepper
1 egg, beaten
1/4 cup mushroom liquid
1 cup fine cracker crumb

Steps:

  • Panfry bacon in skillet until browned.
  • Remove with a slotted spoon.
  • Saute onion and mushrooms in bacon fat until tender.
  • Remove with slotted spoon and combine with bacon.
  • Season tenderloin pieces.
  • Dip in beaten egg, then roll in cracker crumbs.
  • Brown in remaining bacon fat.
  • Fill a 1-QT casserole dish with alternate layers of the browned tenderloin slices and the browned bacon, onions, and mushrooms.
  • Add the mushroom liquid, cover and bake at 350*F for 30 minutes.
  • VARIATIONS: I most often substitute orange juice or apple juice for the mushroom liquid.
  • Makes it even more delicious!

1 Cup Long-Cooking Rice
10.75 oz Can Cream of Chicken Soup

1.25 Cups Water
1.1 oz Package Onion Dip Mix
½ Tablespoon Seasoning Salt
1 teaspoon Worcestershire sauce

  • Place chops evenly on the bottom of the crock.
  • Stir together remaining ingredients until blended well.

1 cup of long grain rice
4 tablespoons butter
2 cups of fresh sliced mushrooms
1 cup of chopped onion
1 cup of chopped celery
2 1/2 cups of water
2 beef bouillon cubes
1 can condensed mushroom soup (if you want creamy rice)

Steps:

  • Preheat your oven to 350 degrees. Take 2 tbsp of the butter and grease a medium sized lidded casserole.
  • Take your rice and in a bare hot pan, brown it. Don't use the butter, the rice browns from the heat alone. Make sure to swirl it around so it doesn't burn. At this point, start your kettle boiling for the water you need.
  • When the rice is beautifully browned, put it into the casserole dish that you are going to bake it in.
  • Take all your veggies and 2 tablespoons of the butter, and fry them up. You want the mushrooms to lose most of their moisture and the onions and celery to be soft.
  • Take your 2 cubes of bouillon, and dissolve into the 2 1/2 cups of boiling water. When it's dissolved, mix in the mushroom soup, then put it into the pan with the veggies, and bring to a boil.
  • Once it's boiling, remove it from the stove and pour over the browned rice in the casserole dish.
  • Bake at 350 degrees for about 35 minutes, until the liquid is all absorbed. Remove from the oven. If you made the non-soup version lightly toss with some butter, while fluffing the rice. Then serve!

1 ½ pounds leftover roast pork, cubed

Steps:

1 pound lean pork loin (or about 2 cups diced leftover pork)
1 tablespoon vegetable oil
1/2 cup onion (chopped)
1 cup celery (chopped)
1 1/2 to 2 cups cooked rice
1 (10.5 ounces) can condensed cream of chicken soup
3 tablespoons soy sauce

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Grease a shallow 2-quart casserole dish .
  • Cut the pork into small cubes. If you are using leftover pork, dice it and set it aside.
  • Heat the vegetable oil in a large skillet over medium heat.
  • Cook the raw cubed pork, stirring frequently, until browned.
  • Add the chopped onion and celery to the pork, and continue cooking until the onion is golden. If using leftover diced pork , add it at this point and continue cooking for about 4 to 6 minutes or until the pork is lightly browned.
  • Add the remaining ingredients-cooked rice, cream of chicken soup, and soy sauce-and mix to blend thoroughly.

1 can Campbell's French Onion Soup
2 cups beef broth or stock or bouillon
Salt and pepper, or seasoned salt to taste

Steps:

  • Preheat oven to 400 degrees
  • Pour rice in 9 X 13 pan or casserole dish
  • Pour soup and broth over top of rice and mix
  • Place pork chops on top of rice, and spoon some liquid and onions from the soup on top of chops
  • Season pork chops with salt and pepper, or your favorite seasoning
  • Cover dish with lid (like my mom always had for the casserole dish) or seal with aluminum foil
  • Bake in oven until liquid is absorbed and rice is cooked (about an hour)
