PORK AND MUSHROOM CASSEROLE
Tender, tasty pork chops in a creamy vegetable sauce. I paired it with Carol Bullock's Greek Potatoes (Recipe #8926) and it was a big hit. Also served green beans and sliced carrots. I omitted the salt from the chops as there was enough in the (low sodium) soup for our tastes.

Steps:
- Season chops with pepper and paprika. Saute chops at low temperature in butter. Season with salt*(optional).
- Transfer loin chops to baking dish or casserole.
- Combine celery, onions, parsley flakes, mushroom soup, mushrooms and water.
- Pour the mushroom mixture over the pork chops.
- Cook convered, in 350F oven for 30 minutes.
- Turn chops, stir sauce and cook for another 30 minutes or until meat is no longer pink.
- *add optional salt after chops are browned.

- then add in rice and fry the rice until well colored and slightly browned. (Its kind of like rice a roni).

- Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
- Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
- Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
- Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

- Preheat your oven to 350 °F.
- Whisk together the rice, soup, water and soup mix until the lumps in the soup are smoothed out and mixed in. To get three cans of the water, simply fill up the empty mushroom soup cans and use to measure. It also helps clean out the extra soup!
- Pour into a large deep large lidded casserole dish or Dutch oven like I used. This recipe is too big for a 9x13 usually, with those thick chops.
- Place your frozen pork chops on top of the rice and gently immerse the chops into the soup and cover it completely so that the pork chops don't dry out.
- Cover with foil or a lid and cook for 1 1/2 hours OR until the rice is tender and the pork has reached a temperature of 145°F .
- Remove from the oven and sprinkle the crackers, then the cheese on top. Return to the oven and broil for 2-3 minutes until the crackers are browned and the cheese has melted.
- Remove and serve.

- Panfry bacon in skillet until browned.
- Remove with a slotted spoon.
- Saute onion and mushrooms in bacon fat until tender.
- Remove with slotted spoon and combine with bacon.
- Season tenderloin pieces.
- Dip in beaten egg, then roll in cracker crumbs.
- Brown in remaining bacon fat.

- Preheat your oven to 350 degrees. Take 2 tbsp of the butter and grease a medium sized lidded casserole.
- Take your rice and in a bare hot pan, brown it. Don't use the butter, the rice browns from the heat alone. Make sure to swirl it around so it doesn't burn. At this point, start your kettle boiling for the water you need.
- When the rice is beautifully browned, put it into the casserole dish that you are going to bake it in.
- Take all your veggies and 2 tablespoons of the butter, and fry them up. You want the mushrooms to lose most of their moisture and the onions and celery to be soft.
- Take your 2 cubes of bouillon, and dissolve into the 2 1/2 cups of boiling water. When it's dissolved, mix in the mushroom soup, then put it into the pan with the veggies, and bring to a boil.
- Once it's boiling, remove it from the stove and pour over the browned rice in the casserole dish.
- Bake at 350 degrees for about 35 minutes, until the liquid is all absorbed. Remove from the oven. If you made the non-soup version lightly toss with some butter, while fluffing the rice. Then serve!
