Steps:
- Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
- After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

CORNED BEEF
I know there are a lot of fancier versions of corned beef on here, but this is the way my Mum always makes it, and my sister, and until now, it has always been my way of doing it too. I plan to start trying some of the other recipes on here, but something tells me I'll keep coming back to this one.

Steps:
- Place vinegar, sugar, and sauce into the crockpot. Add about a cup of water and blend all the ingredients.
- Add silverside, and add enough water to cover. Cook on high for at least 4 hours, adding the carrots for the last hour.
- I like to leave mine simmering in the crockpot for asd long as possible, all day is best, but 4 hours is enough.
- To serve, cut the meat against the grain, and serve with the carrots, and some mashed potatoes, green beans, and white sauce. Yum!

CORNED BEEF
The way my mum made it, the way I make it. Mum used to cook her veggies (potatoes, carrots, parsnips, tiny onions) in the water, putting them in about 45 minutes before the meat was cooked. I find them over salty done this way. Reserve a half a cup of strained cooking liquid to make my Mustard Sauce for Corned Beef recipe #21617.Leftovers make good sandwiches with relish or chutney.

ULTIMATE CORNED BEEF
This is THE BEST corned beef recipe ever. It's from 'The Brooklyn Cookbook' by Lyn Stallworth and Rod Kennedy, Jr. The secret is that it's roasted not boiled. I usually cook 2 pieces of meat - as much as I can fit in my large roasting pan - to be sure there are leftovers. ;) I either roast my cabbage in wedges or make one of the MANY wonderful cabbage dishes here. Please don't just boil the stuff! .

Steps:
- Preheat the oven to 300°F.
- Line a roasting pan with a double layer of heavy-duty aluminum foil, enough to wrap the meat tightly.
- Rinse the corned beef and pat it dry. Place it on the foil. Arrange the onion and orange slices over and around the meat. Sprinkle on the pickling spices, lay on the celery stalks, and pour on the water. Wrap very tightly and pinch the edges well to seal.
- Bake the corned beef for 4 hours, or until a few bubbles begin to escape.

Steps:
- Stir together coleslaw, 3 tablespoons water, salt, and pepper in a medium microwave-safe bowl. Cover with a damp paper towel. Microwave until lightly steamed, about 1 minute and 30 seconds. Shred corned beef with hands or kitchen scissors, and add to coleslaw mixture along with Swiss cheese. Stir until evenly combined.
- Fill a small bowl with remaining 1/3 cup water. Lay out egg roll wrappers on a clean work surface, and top each with about 1/3 cup of corned beef filling. Dip your finger in a bowl of water and wet edges of wrappers; tightly wrap, roll, and seal. Repeat this process with remaining egg roll wrappers and filling.
- Heat oil over medium-high in a deep fryer or large Dutch oven until a deep-fry thermometer inserted in oil registers 350 degrees F (175 degrees C).
- Working in batches, fry egg rolls until golden brown, 3 to 4 minutes, turning if necessary to ensure even browning. Let drain and cool on paper towel-lined plate or sheet tray, about 10 minutes.
- While egg rolls cool, prepare dipping sauce by mixing mayonnaise, ketchup, relish, lemon juice, paprika, and salt together in a bowl. Place cooled egg rolls on a plate and serve with sauce.

- Mustard Sauce. One of the things I love most about my holiday meals is the fact that they are never the same and are always changing. That means I get to try out new combinations and see what works best in my kitchen.
- Horseradish Sauce. Corned beef is a traditional food that is enjoyed all over the world and is served in many different ways. There is no one particular side dish that is best for it, but the key is to make sure that you pair it with something that works.
- Creamy Gravy. You may not think that you would be pairing gravy with corned beef, but in a lot of countries, this is the classic dish to pair with the roast.
- Mornay Sauce. There are so many different flavors in corned beef. From the salty, rich flavor of the beef and the sweet brine, there is just so much to love.
- Sweet and Sour Sauce. The classic sweet and sour combination can also be a great pairing with corned beef. It’s especially great in this case because it has so many options when you want to make the dish.
- Tomato-Onion Sauce. It is no secret that most corned beef recipes call for a red or tomato-based sauce. These sauces are often the foundation of a number of dishes and they are the go-to pairing when it comes to the famous holiday sandwich.
- Sour Cream & Caraway Sauce. Sour cream and caraway sauce are a match made in heaven. The high-fat content of corned beef does mean that it can be fairly greasy or oily, and the tart, sour cream, and caraway combination really helps to cut through the fat perfectly.
- Hot Sauce. The combination of sweet and salty is the most basic and satisfying flavor combination we have in our culinary toolbox. Hot sauce goes especially well with corned beef because it provides an extra kick of heat and spiciness to cut through the richness of the meat.
- Plum Sauce. Plum sauce is a must-have in every kitchen. It is always good to keep a bottle on hand and it can be used for all sorts of recipes. It goes perfectly with corned beef, especially when it is served on top of mashed potatoes.
- Guaiwei Sauce. Corned beef is a hearty, traditional cut of meat, but one that can be a bit intimidating to pair with. There are so many options available for cooking and serving corned beef.
