PORK TENDERLOIN MEDALLIONS WITH CARAMELIZED ONIONS



Pork Tenderloin Medallions with Caramelized Onions image

This is excellent with proscuitto wrapped poblano stuffed peppers, sauteed mushrooms, and caprese salad.

1 medium pork tenderloin
3 large red onion
1/2 c teriyaki sauce
1/2 c soy sauce
black pepper, coarse ground
salt
1 tsp sugar
1 Tbsp balsamic vinegar

Steps:

  • 1. Slice pork tenderloin medallions to desired thickness. You will need 8 large medallions. Pepper the tenderloin medallions with the black coarse ground pepper to taste then place pork tenderloins in a bag or container with a well-fitting lid. Add the teriyaki sauce and soy sauce and coat well. Marinate at least 2-3 hours for best results. Turn medallions in marinade at least once every hour.
  • 2. Freeze any remaining medallions or increase recipe ingredients for more servings.
  • 3. Peel onions and cut in half then slice onions and place aside. Place 3 tablespoons of butter and 1 tablespoon of olive oil in skillet. Add onions when the butter has melted. Coat onions well. After 10 minutes add one or two pinches of salt. Add 1 tsp of sugar after the onions have cooked about 20-30 minutes. Cook the onions for 30 minutes to 1 hour over medium heat until caramelized. In the beginning it won't be necessary to stir often but as the onions become more caramelized more stirring will be necessary as you don't want the onions to burn but to brown. Use a spatula to turn the onions and keep the onions from sticking and then when the onions are caramelized add the balsamic vinegar to deglaze the pan and coat the onions. To caramelize onions is a slow process but it is worth it.
  • 4. Grill the pork tenderloin medallions . The thickness of the medallions will determine the length of time to grill. Grill pork until done but moist. The juices will run clear. Remove from grill to serving plate.
  • 5. Top the grilled medallions with the caramelized onions. Serve.

1 boneless rib-end pork loin roast
Salt and freshly ground pepper
5 tbsp. unsalted butter
1/2 c. dry white wine
2 c. low-sodium chicken broth
2 clove garlic
1 bay leaf
1 sprig thyme plus 1 teaspoon chopped thyme
1/2 small yellow onion
3/4 lb. pearl onions
2 tbsp. all-purpose flour
1/2 lb. Red and green grapes

Steps:

  • Season the pork with salt and pepper. In a small enameled cast-iron casserole, melt 2 tablespoons of the butter. Add the pork and brown well over moderately high heat, 10 minutes; transfer to a plate. Pour off the fat from the casserole. Add the wine and boil over high heat, scraping up the browned bits, until reduced by half, 3 minutes. Add the broth and bring to a boil. Add the garlic, bay leaf, thyme sprig, yellow onion and the pork. Cover and simmer over very low heat, turning once, until an instant-read thermometer inserted in the center registers 160 degrees F, about 1 hour.
  • Meanwhile, in a medium saucepan of water, boil the pearl onions until almost tender, 5 minutes; drain and peel. In a bowl, blend the 2 tablespoons of softened butter with the flour to form a paste.
  • Transfer the pork to a plate. Strain the cooking liquid and return to the casserole; boil until reduced to 2 cups, 4 minutes. Whisk 1/2 cup of the cooking liquid into the flour paste until smooth, then whisk the mixture into the cooking liquid. Simmer over moderately high heat, whisking, until thickened. Simmer over low heat, stirring, until no floury taste remains, 5 minutes. Stir in the chopped thyme and season with salt and pepper. Return the pork and its juices to the casserole and add the pearl onions. Cover and bring just to a simmer, turning the pork a few times in the sauce to heat it up.
  • In a skillet, melt the remaining 1 tablespoon of butter. Add the grapes and cook over moderately high heat, shaking the skillet, until the skins start to burst. Thickly slice the pork and transfer to plates. Spoon the sauce, pearl onions and grapes on top; serve.

This recipe is from my good friend, Ginny, who is an excellent cook. You can change the fruit with the season for this recipe: Peaches would be good in early summer; fresh figs in late summer; apples and pears in the winter. The one thing you need to calibrate is the time it takes for the fruits to cook; so add the fruit earlier if you're using apples or pears, or later if you're using peaches or figs. To Make Ahead: Prepare Steps 1-3 and freeze until ready to use. Defrost pork chops overnight, reheat, and then complete Step 4.

1 teaspoon kosher salt, plus more for the pot
12 cipolline onions, peeled (12 oz.)
2 pork tenderloin, about 2 lbs total
4 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
3/4 cup all-purpose flour (for dredging)
1/2 cup dry white wine
6 fresh sage leaves
1 tablespoon balsamic vinegar
8 ounces green seedless grapes, removed from stem (2 cups)

Steps:

  • Bring a medium pot of salted water to boil, add the onions, and cook until almost tender but not falling apart (about 8-10 minutes). Drain and set aside, reserving 1 cup of the onion-cooking broth.
  • Cut each pork tenderloin into 6 chunks. With a meat mallet, pound each to a thickness of about 1/2 inch.
  • In a large skillet, over medium heat, melt 2 tbsp of the butter in the olive oil. Spread flour on a plate for dredging. Season the pork with 1/2 tsp of salt, and lightly dredge it in the flour. Brown the pork on both sides, about 2 minutes per side, and remove to a plate.
  • Add the onions to the skillet, and let them cook a few minutes until lightly carmelized. Add the white wine, and bring to a boil. Once the wine is almost reduced, add the sage, the reserved onion-cooking broth, and the remaining 1/2 tsp of salt. Let the sauce simmer for a few minutes, until it is reduced by almost half. Whisk in the vinegar and the remaining 2 tbsp of butter. Add the pork back to the skillet with the grapes, and simmer until the sauce is thickened and grapes just begin to soften (about 3-4 minutes).

1 cup panko bread crumbs
1 tablespoon garlic powder
Salt and freshly ground black pepper
1 (1 to 1 1/2 pound) pork loin, sliced into medallions and pounded thin
Milk, as needed to moisten pork
2 tablespoons grapeseed oil

Steps:

  • Mix bread crumbs, garlic powder, salt and freshly ground black pepper. Moisten pork medallions with milk, and coat with bread crumb mixture allowing most of the excess to fall away. Add grapeseed oil to the pan over medium-high heat and cook pork leaving each side undisturbed for the first few minutes to allow the caramelization process to begin and prevent the coating from crusting off.

1 cup quinoa, rinsed
1 lb pork tenderloin, cut into 1-inch-thick slices
1 tablespoon olive oil (extra-virgin)
2 teaspoons fennel seeds
4 green onions, sliced
2 garlic cloves, chopped
1 1/2 lbs pears, peeled, cored, and sliced (Anjou or Bartlett)
1 tablespoon fresh lemon juice

Steps:

  • Prepare quinoa as label directs.
  • Press pork with palm of hand to flatten. Sprinkle with 1/8 teaspoon salt and 1/4 teaspoon freshly ground black pepper.
  • In 12-inch skillet, heat oil on medium-high. Add pork; cook 5 to 6 minutes or until browned on both sides, turning over once. Transfer to plate.
  • Reduce heat to medium. To same skillet, add fennel seeds; cook 30 seconds, stirring.
  • Add green onions, 1/3 cup water, and garlic; cook 1 minute, stirring. Add pears, lemon juice, and 1/4 teaspoon salt; cook 2 minutes or until pears begin to soften, stirring occasionally.
  • Return pork to pan, along with any juices. Cook 3 to 6 minutes or until pork is slightly pink in center (145F).
  • Serve pork with quinoa; top with pear mixture. Garnish with additional green onion, if desired.

2 tablespoons seasoned bread crumbs
1 tablespoon grated Parmesan cheese

Steps:

  • Cut pork into 4 slices; flatten to 1/4-in. thickness. In a large shallow dish, combine the bread crumbs, cheese, salt and pepper. Add pork, 1 slice at a time, and turn to coat. , In a large skillet over medium heat, cook pork in oil until meat is no longer pink, 2-3 minutes on each side. 2 whole boneless, very lean pork tenderloins, about 1 1/2 pounds
Salt and freshly ground pepper to taste
2 tablespoons vegetable oil
1 teaspoon cumin
2 teaspoons fresh chopped rosemary, or 1 teaspoon dried
1 bay leaf
12 pearl onions or small peeled white onions
8 small waxy red potatoes, peeled
1/4 cup chicken broth, fresh or canned

Steps:

  • Preheat oven to 425 degrees.
  • Sprinkle tenderloins with salt and pepper.
  • Put the tenderloins in a small roasting pan large enough to hold them side by side, and brush with oil. Sprinkle evenly with cumin and rosemary. Add bay leaf. Cook the pork over medium heat on top of the stove, turning so the pieces are lightly browned all over. Put in the oven.
  • Meanwhile, put the onions and potatoes in a saucepan. Cover with water and salt to taste. Bring to a boil and simmer 5 minutes. Drain well.
  • Scatter the onions and potatoes around the meat. Turn the pork, and continue baking 30 minutes, basting once in a while.
  • Drain fat from the pan, and discard bay leaf. Add chicken broth, return to the oven, and bake 5 minutes more.
  • Remove from oven, and cut pork crosswise into slices. Sprinkle with parsley, and serve immediately with onions, potatoes and pan gravy.

1 tbsp olive oil
600g pork medallions
2 tbsp unsalted butter
2 banana shallots , thinly sliced
250g chestnut mushrooms , sliced
1 garlic clove , crushed
1 tbsp plain flour
100ml madeira or sherry
400ml chicken stock
4 sprigs thyme
½ tbsp wholegrain mustard
100ml double cream
mashed potato and wilted greens, to serve

Steps:

  • Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
  • Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
  • Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.
