SLOW-COOKER PORK CURRY

- Toss the pork with the curry powder, 1 teaspoon brown sugar, the lime zest and a generous pinch each of salt and pepper in a large bowl; set aside. Put the potatoes in a 6- to 7-quart slow cooker and top with the cilantro stems and half of the red onion slices.
- Whisk the coconut milk with 1/4 cup water and the curry paste in a small bowl. Pour into the slow cooker. Add the pork and nestle into the vegetables and sauce. Cover and cook on low, 7 hours.
- Transfer the pork to a cutting board; let rest. Stir the green beans into the slow cooker and let stand, uncovered, 10 minutes. Toss the remaining red onion with the lime juice in a small bowl and let stand 10 minutes. Stir the remaining 1 teaspoon brown sugar into the curry sauce and season with salt and pepper.
- Divide the green beans, potatoes and sauce among bowls. Slice the pork and add to the bowls. Top each serving with the onion and any remaining lime juice in the bowl, the bean sprouts and cilantro leaves. Serve with lime wedges.

SRI LANKAN PORK CURRY
Steps:
- Heat the oil over medium high heat in a wok or large saucepan.
- When hot, add the black mustard seeds and cinnamon stick. When the mustard seeds begin to pop, add the cumin seeds and curry leaves.
- Stir this all around in the oil for about 30 seconds and then add the chopped onions. Fry the onions until soft and translucent and the pour in the ground spices and garlic and ginger paste.
- Add the chopped chillies and tomato paste, followed byth the tamarind pulp and coconut milk.
- Mix all these ingredients well and then add the pork with just enough water or stock to cover.
- Simmer for about 40 minutes or until the pork is fork tender.
- Season with salt and pepper to taste and sprinkle with the garam masala to serve.
LAMB, PORK OR BEEF MADRAS
This versatile recipe for a madras curry is from Madhur Jaffrey. Rich with southern Indian flavours and the heat of dried chilli, it can be made with lamb, pork or beef.

- Put the coriander seeds, peppercorns, fennel seeds, fenugreek seeds, cloves and chillies into a small, cast-iron frying pan and set it over medium heat. Stir the spices over the heat until they are a shade darker and give off a roasted aroma. Transfer to a bowl and leave to cool, then grind in a clean spice grinder or coffee grinder. Pour the oil into a wide, non-stick pan, and set it over medium-high heat.When the oil is hot, add the onions and cook, stirring, until they turn brown at the edges. Add the ginger, garlic and green chillies and stir-fry for 20 seconds. Add the meat and cook, stirring, for 5 minutes. Stir in the tomatoes, ground roasted spices, salt and coconut milk and bring to the boil. Cover the pan, turn the heat to low and simmer gently for 1 hour or until the meat is tender. Uncover the pan and boil away a lot of the liquid, until a thick sauce clings to the meat. Garnish with finely chopped coriander to serve. If you want to use pork, buy shoulder meat and cook it exactly like lamb. If you prefer beef, use good-quality stewing beef, add a little extra water and then cook it for 1½ hours or until tender.

- Heat oil in a large nonstick pan over medium heat. Add cloves and cardamom pods and wait until they sizzle, about 1 minute. Add onions and fry until dark brown, 7 to 10 minutes. Add chile peppers, ginger, and garlic; cook until fragrant, about 30 seconds. Add ground chile pepper, turmeric, cumin, coriander, and salt. Cook, stirring frequently, until blended in, about 1 minute more.
- Stir chicken and water into the pan with the spice mixture. Cook, while stirring, until water is incorporated, 2 to 3 minutes. Add tomato puree and nutmeg and cover the pan with a lid. Cook until chicken is tender over medium heat, about 20 minutes. When ready to serve, sprinkle with garam masala and cilantro.

- Mix all ingredients in a bowl, or use tightly covered Tupperware and shake to mix.
- (Madras curry often comes with whole bay leaves in the jar. Don't use these in the marinade!) Adjust the amounts of curry powder and orange juice to suit your personal taste.
- Goes well with chicken, pork, or shrimp.
- The longer the meat soaks in the marinade, the stronger the flavor will be.
- Poking holes in the meat with a fork will also help the flavor soak into the meat.
- Works well on the grill, in the oven, or under the broiler.
PORK MADRAS

- Mix together all the spices and add a few spoonfuls of coconut milk, enough to make a thin paste. Add enough cayenne to make it fairly hot; enough to give spicy heat to all the meat and onions.
- Heat the oil or butter, etc. and cook the onions and garlic until lightly browned.
- Add the paste and continue frying for a couple minutes.
- Add the meat and stir to cover with the paste and brown a bit. Add the beef broth, bring to a boil, then cover and simmer gently until the meat is very tender - at least 2 hours.
- Add the optional potatoes when the meat is tender and continue cooking until the potatoes are done.
- Stir in the remaining coconut milk and the lemon juice and continue simmering for 10 minutes until thickened a bit.
- Serve over any type of Indian style boiled rice.

SHRIMP MADRAS

- 1. Place the shrimp in a bowl. Add the Curry Powder, Garam Masala, kari leaves, garlic, and oil and crumble over shrimps.
- 2. Heat a frying pan over high heat until very hot. Add the shrimps and sear, shaking and tossing, for 1 minute, or until they begin to turn pink and curl up. Whisk the tomato paste into the coconut milk and add to the shrimps. Continue to cook until the sauce is reduced to a glaze and the shrimps are cooked through, about 5 minutes. Sprinkle with salt and lemon juice and turn off the heat.
- 3. Spread the watercress on a plate and mound the shrimps on top of it. Serve immediately.
SLOW COOKED BEEF MADRAS

- Heat oil in a pan and add chopped onion; cook slowly until golden.
- Add ginger, garlic , chilli and all the spices and fry for 1 minute.
- Add chopped tomatoes, tomato puree, coconut milk and 2 tbsn coriander and stir together for a minute.
- Add beef, stir and transfer everything to a slow cooker.
- Cook on LOW for 6 hours.
- Add sugar, yoghurt and cream (add slightly more or less according to taste and how hot you like your madras)
- Serve with the remaining coriander sprinkled on top.
- Taste even better if made the day before!
- Serve with basmati rice and naan.

- Heat the oil in a large deep frying pan and fry the onion for 5 mins. Add the ginger and garlic and fry for a further 5 mins. Stir in the curry paste and cook for 1 minute then add the pork and fry over a medium heat, stirring for 2-3 mins, until no longer pink.
- Add the chopped tomatoes and stock and bring to the boil. Reduce the heat to a simmer and cook for 20-25 mins until the pork is tender and cooked through, stirring occasionally.

- Knead the naan dough for a few minutes on a lightly floured work surface until combined and soft (we kneaded in a pinch of salt, too). Transfer to a lightly oiled bowl and cover loosely with oiled cling film, then rest for 30 minutes in a warm place.
