1 tablespoon vegetable oil
2 pork chops s, with bone
salt
½ cup white wine
1 garlic clove, chopped
1 cup tomato sauce
coriander
10 black olives, sliced

Steps:

  • Heat a skillet and add 1 tablespoon vegetable oil. Add the pork chops and start cooking them.
  • Fry for 2-3 minutes on each side.
  • Add white wine and crush the garlic clove above the skillet.
  • Bring to a boil and afterwards add the tomato sauce. Add fresh coriander and black olives.
  • Keep on heat for 2 more minutes until the sauce thickens.

potatoes - 6, large
FOR THE TOMATO SAUCE
peppers - 1
tomatoes - 1 2/3 cups (400 g) canned
water - 1 2/3 cups (400 ml)
tomato paste - 1 cup (250 g)
paprika - 1/2 tsp sweet and 1/2 tsp hot
garlic - 1/2 tsp, powdered
lemons - 1 tablespoon lemon juice
worcestershire sauce - 2 tablespoons
salt
black pepper - to taste

Steps:

  • Gently tenderize the steaks if they are too thick, rub them with salt and black pepper and fry them in a pan with a little preheated oil, enough to brown them.
  • Peel and cut the potatoes coarsely, put them in a baking dish and arrange the meat on top. For the tomato sauce , mash the tomatoes , add the water with the tomato paste, add the chopped pepper and flavor with the spices, lemon juice and Worcestershire sauce.
  • Stir and pour the mixture into the dish. Put the dish to bake in a heated 360°F (180 °C) oven for about 1 hour.

Transfer the pork chops to a plate and tent with foil to keep them warm.

3 tablespoons grated parmesan cheese

  • In a small shallow bowl mix together the breadcrumbs with Parmesan cheese, seasoned salt and black pepper.
  • In another bowl slightly beat the egg.
  • Dip the pork chop/s firstly in the egg then coat in the breadcrumb mixture.
  • Heat oil and butter in a large skillet over medium heat.
  • Brown the chops on both sides then remove to a plate.
  • Add in more oil if needed to the skillet and add in onions, garlic, green bell pepper, oregano, basil and dryed chili flakes (if using) saute for about 3-4 minutes.
  • Add in the tomatoes with juice and tomato sauce; mix with a spoon and bring to a boil and simmer over medium-low heat for about 30-40 minutes (you can cook this for up to 1-1/2 hours if desired before adding in the chops, it only gets richer and thicker the longer the sauce is cooked for!).
  • Add in the browned pork chops and cook uncovered over medium-low heat for about another 25 minutes, or until the chops are cooked to desired tenderness.
  • Season with salt and pepper to taste.
  • Serve on cooked spaghetti and top with Parmesan cheese.

Came across this one in my current quest to change up the menu a bit and have fallen for fennel. With a distinctive licorice flavor, fennel has many natural pairings including both pork and tomatoes. In this recipe, grilled or pan cooked chops are given a zippy finish with a Italian inspired sauce. For those of us who don't always have time to marinade and do a lot of prep work, this seems like lovely dish to serve to family or friends.

2 (5 ounce) lean boneless pork chops, visible fat trimmed off
1 garlic clove, peeled and split in half lengthwise
salt and pepper
1 fennel bulb, thinly sliced (about 2-3 cups)

3 garlic cloves, minced
1 tablespoon olive oil
1 (14 ounce) canned diced tomatoes, use the regular or chunky, not petite diced

  • In a large non-stick skillet over medium-high heat, add the tablespoon of oil. Add onions and fennel and saute for 4 to 5 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a medium skillet over medium heat. Place pork chops in the skillet, and brown about 5 minutes on each side. Remove from heat.
  • In a small bowl, mix brown sugar, salt, pepper, and dry mustard.

2 (28 ounce) cans whole tomatoes
6 tablespoons olive oil
4 tablespoons butter
8 sage leaves, whole and fresh
1 teaspoon dried sage
2 lbs pork chops
1/2 cup dry white wine

Steps:

  • Heat 4 T. oil and 2 T. butter in heavy medium skillet over medium high heat.
  • Add tomatoes, reserving juice and dried sage. Cook until thickened to saucelike consistency, stirring frequently, about 15 minutes. Add Set aside.
  • Divide remaining 2 T. oil, 2 T. butter and whole sage leaves between 2 heavy large skillets.
  • Cook mixture over medium-high heat until butter melts.
  • Add 2 chops to each skillet. Cover and cook until brown, turning frequently, about 10 minutes.
  • Add 1/4 cup wine to each skillet. Boil uncovered until reduced to a glaze, about 5 minutes.
  • Divide tomato sauce between pans, spreading over chops.
  • Reduce heat, cover and simmer until chops are tender, about 30 minutes longer.
  • Degrease sauce; adding reserved tomato juice if you like a thinner sauce.
  • Season with salt and pepper.
  • Transfer chops to a platter, and spoon sauce over.

Pork Chops in Tomato & Chorizo image

Pork chops with a spicy spanish twist. A lovely dinner for two.

Number Of Ingredients 7

2 Pork chops
150g Chorizo (diced)
300g/ 1 tin Tomatoes
1 small onion, halved
1-2 cloves of garlic, peeled + left whole
30g unsalted butter
Salt and freshly ground pepper

Steps:

  • Pour tinned tomatoes into saucepan and chop small. (I use scissors for a more rustic look once cooked)
  • Peel and half a small onion and add place into saucepan. Peel garlic cloves and add to saucepan whole. Season with a pinch of salt and pepper.
  • Leave to simmer gently for 20 minutes before beginning on pork.
  • Roast pork chops in oven at 200c for around 25-30 minutes.
  • Pan fry the chorizo in 10g of butter for 3-5 minutes. Remove the garlic and onion from the sauce and add the chorizo + pan juices. Add the remaining butter and simmer for 5 minutes.
  • Spoon thick sauce over the pork chops and serve with potatoes or veg of your choice.
