Pan-Roasted Pork Chops with Cranberries and Red Swiss Chard image

Categories     Leafy Green     Pork     Roast     Cranberry     Red Wine     Fall     Chard     Shallot     Gourmet

Yield Makes 4 servings

Number Of Ingredients 16

For Swiss chard
1/3 cup minced shallots (2 medium)
1 tablespoon minced garlic
2 tablespoons unsalted butter
1 lb red Swiss chard, stems and center ribs cut out and chopped together, leaves coarsely chopped separately
For pork chops
4 (1 1/4-inch-thick) rib pork chops
1 1/2 tablespoons extra-virgin olive oil
For sauce
1/3 cup minced shallots (2 medium)
1/2 cup dry red wine
1 cup fresh or thawed frozen cranberries (4 1/2 oz)
3/4 cup chicken stock or broth
3 tablespoons packed light brown sugar
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried, crumbled
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 400°F.
  • Prepare Swiss chard:
  • Cook shallots and garlic in butter in an ovenproof 12-inch heavy skillet over moderate heat, stirring, until golden, about 5 minutes. Add chard stems and center ribs and cook, covered, stirring occasionally, until crisp-tender, 3 to 4 minutes. Add leaves and cook, uncovered, stirring occasionally, until tender, 6 to 7 minutes. Season with salt and pepper, then transfer chard to a heavy saucepan and wipe out skillet.
  • Cook pork chops:
  • Pat chops dry and season with salt and pepper. Heat oil in skillet over moderately high heat until hot but not smoking, then brown chops, about 3 minutes per side.
  • Transfer skillet to oven and roast until an instant-read thermometer inserted horizontally 2 inches into meat registers 155°F, 7 to 9 minutes. Transfer chops with tongs to a platter, leaving fat in skillet, and cover chops loosely with foil to keep warm.
  • Make sauce:
  • Sauté shallots in fat remaining in skillet over moderately high heat, stirring, until golden, about 5 minutes. Add wine and deglaze by boiling over high heat, scraping up brown bits, until reduced by half. Add cranberries and stock and simmer, stirring occasionally, until cranberries begin to burst, about 2 minutes. Stir in brown sugar and thyme and simmer, stirring, until berries are collapsed, about 3 minutes. Remove from heat and stir in butter until incorporated, then season with salt and pepper.
  • Assemble dish:
  • While sauce is cooking, reheat chard over moderate heat, stirring. Divide among 4 plates and top with chops, then spoon sauce over.

PORK CHOPS WITH PUMPKIN GRITS AND SWISS CHARD

Pork Chops with Pumpkin Grits and Swiss Chard image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 11

3/4 cup quick-cooking grits
Kosher salt and freshly ground pepper
1 1/2 cups shredded pepper jack cheese (about 4 ounces)
3/4 cup canned pure pumpkin
1 tablespoon vegetable oil
4 boneless pork chops (3/4 inch thick; 1 1/4 to 1 1/2 pounds)
3 tablespoons unsalted butter
8 sage leaves
1 shallot, thinly sliced
1 bunch rainbow chard, stems removed and thinly sliced, leaves cut into 1-inch ribbons
1 tablespoon apple cider vinegar

Steps:

  • Bring 3 cups water to a boil in a medium saucepan. Whisk in the grits, 1/2 teaspoon salt and a few grinds of pepper. Reduce to a gentle simmer and cook, whisking, until thickened, 5 to 7 minutes. Stir in the cheese and pumpkin until smooth; season with salt and pepper. Remove from the heat and cover to keep warm.
  • Meanwhile, heat a large skillet over medium-high heat; add the vegetable oil. Season the pork chops with salt and pepper, add to the skillet and cook until browned on the bottom, about 3 minutes. Flip the pork and cook until almost cooked through, 2 to 3 more minutes. Add the butter and sage and cook until the butter is melted. Tip the skillet slightly and spoon the butter over the pork; cook, basting with the butter, until the pork is cooked through and the butter is golden brown, 1 to 2 more minutes. Remove the pork to a plate, leaving the butter in the skillet. Place the sage leaves on the pork chops; tent with foil to keep warm.
  • Return the skillet to high heat and add the shallot and chard stems. Cook, stirring, until tender, about 3 minutes. Stir in the chard leaves and cook until just wilted, 1 to 2 minutes. Add the vinegar and cook until dry, about 1 minute; season with salt and pepper. Divide the grits and chard among plates. Top with the pork chops.

SAVORY SWISS CHARD WITH PORK CHOPS AND POTATOES

Savory Swiss Chard With Pork Chops and Potatoes image

A favorite ... This came from a little cook book a girlfriend sent me for a Christmas present one year. Now I added my twist, but basically, this was the recipe. A one dish wonder. Now I love swiss chard and kale and I think they are way under used, so I absolutely love this dish. Now the original dish didn't have potatoes, but I love to add some sliced new potatoes to this dish and it makes it a complete dish. Add some fresh homemade or a good bakery loaf of pumpernickel and roasted peaches over vanilla ice cream for desert.

Time 40m

Yield 4-8 Dishes, 4 serving(s)

Number Of Ingredients 13

4 pork chops (bone in, about 1-inch thick, 1/2 lb each)
1 1/2 lbs red swiss chard (stems removed and chopped in 1-inch pieces)
1 medium onion (cut in half and thin sliced)
12 small new potatoes, thin sliced with the skins on
1/2 cup chicken broth
3 tablespoons parmesan cheese, grated
3/4 cup fontina, grated
2 1/2 tablespoons olive oil (divided)
1/2 teaspoon dried thyme
1/2 teaspoon paprika
salt
pepper
2 tablespoons balsamic vinegar

Steps:

  • Casserole -- First remove the pork chops from the refrigerator and let them come to room temperature. Brush well with 1 tablespoon olive oil and then season well with salt, pepper and paprika on both sides.
  • Next, spray the casserole dish with a non stick spray and add the swiss chard and top with the sliced onions. Add some salt and pepper and drizzle with olive oil (1 tablespoon). Lightly toss. Then top with the chicken broth and the 4 pork chops.
  • NOTE: If you want you could pan sear the pork chops first if you want as one reviewer mentioned, but I don't. But if would give a nice color to the chops if you prefer.
  • Cheese -- Sprinkle the cheeses on top of the swiss chard and onions, around the pork chops.
  • Potatoes -- In a small bowl add the potatoes, remaining olive oil, salt, pepper and dried thyme and then add them on top of the swiss chard and cheese around the pork chops.
  • Bake -- 400 degrees for 20-30 minutes until the chops are done.
  • Garnish -- I love to put a good balsamic vinegar on the table so each person can just drizzle a little on if they want. For me the flavor is amazing.
  • Just Enjoy!

PORK THREE WAYS: BRINED PORK CHOPS, FENNEL-FONTINA SAUSAGE, AND SWISS CHARD WITH BACON AND FENNEL OVER POLENTA CAKES

Pork Three Ways: Brined Pork Chops, Fennel-Fontina Sausage, and Swiss Chard with Bacon and Fennel over Polenta Cakes image

Provided by Anne Burrell

Time 2h55m

Yield 4 servings

Number Of Ingredients 39

1/2 cup kosher salt
1/3 cup sugar
2 tablespoons coriander seed
1 teaspoon crushed red pepper flakes
Stalks and fronds from 1 fennel bulb, chopped
1 rib celery, chopped
2 cloves garlic
Water
4 bone-in pork rib chops
2 tablespoons wild fennel pollen, plus more, if needed
2 pounds pork shoulder, cut into 1-inch chunks (pork should have a good amount of fat)
3 cloves garlic, smashed
2 tablespoons kosher salt
1 tablespoon crushed red pepper flakes
1 tablespoon fennel seed
1 tablespoon ground coriander
1/4 cup cold water
1/2 cup Fontina cheese, small dice
Hog casing
Olive oil
Olive oil
2 cloves garlic, smashed
Crushed red pepper flakes
3 slices bacon, cut into lardons
5 Swiss chard leaves, stems removed and cut into 1/2-inch lengths, leaves cut into 1-inch lengths
1 fennel bulb, thinly sliced
1/4 to 1/2 cup chicken stock
Kosher salt
1 cup milk
2 cups water
1 bay leaf
Pinch cayenne pepper
Kosher salt
1 cup polenta
4 fresh sage leaves, finely chopped
1/4 cup mascarpone
Extra-virgin olive oil
4 tablespoons grated Parmigiano-Reggiano
Quality olive oil, for drizzling

Steps:

  • For the brine: In a large container, add the salt, sugar, coriander, red pepper flakes, fennel, celery, garlic, and enough water to cover the chops and stir to combine. Submerge the pork chops in the brine and let sit in the refrigerator until ready to cook, at least 30 minutes.
  • Bring the chops to room temperature before cooking. Remove the chops from the brine, discarding the brine.
  • For the chops: Preheat a cast iron pan.
  • Roll the fat edge of each pork chop in the fennel pollen. Place the pork chops gently in the heated pan.
  • Sear the chops on all sides and cook for about 9 minutes. Remove the chops from the pan and let rest in a warm place before serving. The doneness of the meat should be about medium to medium-well and be very juicy.
  • For the fennel-fontina sausage: Preheat the oven to 350 degrees F.
  • Season the pork shoulder with the garlic, salt, red pepper flakes, fennel seed, and coriander. Grind the pork twice through the large grind of a stand mixer fitted with a meat grinder attachment. Gently stir in the cheese. Add the cold water and mix lightly. Stuff the ground pork into a casing using the sausage horn attachment to the stand mixer and twist off into evenly sized links. Transfer to a parchment-lined sheet pan and roast in the oven for 15 to 20 minutes.
  • Preheat a saute pan and drizzle with olive oil. Remove the sausages from the oven and brown them in the pan.
  • For the Swiss chard: Coat a saute pan with olive oil. Toss in the garlic, red pepper flakes, bacon, and a couple drops olive oil. Bring the pan to medium heat. When the garlic is golden and very aromatic, remove it and discard.
  • When the bacon has become crispy, toss in the Swiss chard stems and fennel and saute for 5 minutes. Stir in the chicken stock, as needed, and season with salt. When the chicken stock has reduced, toss in the Swiss chard leaves and season with salt. Cook the leaves until they are just wilted, 3 to 4 minutes.
  • For the polenta cakes: In a saucepan, combine the milk, water, bay leaf, and cayenne. Bring the mixture to a boil over low heat and season generously with salt. (Take the seasoning to the edge of too salty. To do this you must taste as you go. Polenta acts as a salt eraser, if you don't season abundantly here you will never recover from it.)
  • Once the liquid is at a boil and is seasoned appropriately, sprinkle in the polenta, whisking constantly. Once the polenta is combined, switch over to a wooden spoon and stir frequently until the polenta has become thick. Taste the polenta to see if it has cooked through. If it still feels mealy and grainy, add some more milk or water and cook it to a thick consistency. Repeat this process, as needed, until the polenta feels smooth on your tongue, about 30 minutes. Remove the bay leaf and stir in the chopped sage and mascarpone.
  • Line a 7 by 7-inch square pan with plastic wrap. Pour the polenta into the prepared pan. Cover the top with more plastic wrap smoothed onto the surface of the polenta. Chill in the refrigerator until needed. (All of this can totally be done ahead of time, like yesterday! Cool!)
  • Remove the polenta from the pan and cut into desired shapes. Coat a nonstick saute pan with olive oil and bring to medium-high heat. Once the pan is hot and starting to smoke just a little, add the polenta shapes. Cook the polenta on both sides and finish by sprinkling with a little bit of grated Parmigiano.
  • For plating: Place 1 polenta cake on each plate and top with Swiss chard and bacon. Lean 1 chop on each polenta cake. Slice the sausages on the bias and plate 2 slices on each plate. Finish with a drizzle of olive oil.

SKILLET PORK CHOPS WITH SAUTEED SWISS CHARD (SBD P1)

Skillet Pork Chops With Sauteed Swiss Chard (Sbd P1) image

From newest book. Haven't tried. A member of the beet family, Swiss Chard is a cruciferous leafy winter green that delviers a good dose of beta carotene, potassium, and fiber. When preparing chard, cut off the thicker bottom inch or so of each stem and thinly slice the rest of the stem (it's tender), and add to the leaves when cooking. Spinche and kale make good substitutes for swiss chard when you want and change of pace.
