Number Of Ingredients 11

1 teaspoon freshly grated nutmeg
1 1/2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons chopped fresh sage
2 1-pound pork tenderloins, trimmed
Kosher salt and freshly ground pepper
1 small butternut squash, peeled and cut into 1-inch pieces
2 cooking apples, peeled and cut into 1/2-inch pieces
1 medium red onion, cut into 1/2-inch pieces
1 tablespoon honey mustard
1 sprig fresh rosemary
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 425 degrees. Mix the nutmeg, 1 teaspoon garlic and the sage in a bowl. Rub over the pork and season with salt and pepper.
  • Toss the squash, apples, onion, the remaining 1/2 teaspoon garlic, the honey mustard, and salt and pepper to taste in a bowl. Spread out on a long sheet of foil. Add the rosemary and 3 tablespoons butter, then bring the ends of the foil together and crimp to seal into a packet. Place the packet on a baking sheet and roast on the upper rack until tender, 30 to 35 minutes. Poke holes in the packet to release steam.
  • Meanwhile, heat a large ovenproof skillet over medium-high heat. Add the remaining 2 tablespoons butter, then brown the pork on all sides, about 8 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan, then transfer the skillet to the lower oven rack and roast until a thermometer registers 150, about 15 minutes. Transfer the meat to a cutting board and let rest 5 minutes.
  • Return the skillet to medium heat. Add 1/2 cup water, scrape up any browned bits and simmer about 2 minutes. Slice the pork and drizzle with the pan juices. Serve with the squash and apples.

4 lean pork loin or rib chops, about 1/2 inch thick (about 1 pound)
1 teaspoon dried sage leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
1 medium onion, cut into 1/4-inch slices
1/2 cup chicken broth
1 acorn squash (about 1 1/2 pounds)
1 medium unpeeled cooking apple, cored and cut into eighths
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Trim fat from pork. Mix sage, 1/2 teaspoon salt, 1/4 teaspoon pepper and the garlic; rub on both sides of pork.
  • Cook pork in 10-inch nonstick skillet over medium heat about 3 minutes on each side until brown. Place onion on pork. Pour broth around pork. Heat to boiling; reduce heat.
  • Cut squash crosswise into 1-inch slices; remove seeds and fibers. Cut each slice into fourths. Place squash and apple on pork; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover and simmer about 15 minutes or until pork is slightly pink when cut near bone and squash is tender.

1 pork tenderloin
5 cups (1-inch) cubes peeled, seeded butternut squash
2 Granny Smith apples, cut into 1-inch wedges
1 white onion, cut into 1/2-inch slices

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a rimmed 13x18-inch baking sheet with cooking spray.
  • Whisk 1 tablespoon olive oil, honey, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper in a bowl.
  • Place tenderloin on the prepared baking sheet; rub honey mixture onto pork.
  • Mix butternut squash, apples, and onion in a bowl; drizzle with remaining 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper; toss until well coated. Place around pork tenderloin.
  • Bake in the preheated oven until vegetables are tender and pork is cooked, 30 to 35 minutes; baste pork with honey mixture several times during roasting. An instant-read thermometer inserted into the center of the pork should read at least 145 degrees F (63 degrees C).

4 pork chop loins
- dash(es) garlic
8 basil leaves, or dried to cover pork chops
1 to 2 c apple juice
pinch pinch salt

Steps:

  • 1. Warm Skillet to medium heat or 180 degrees electric skillet.
  • 2. Add pork chops. Season with Garlic and cover pork chops with Basil Leaves, or dried Basil
  • 3. Pour in 1 cup Apple Juice, (or more) to almost cover pork chops. Be sure to leave tops without liquid so not to wash away the seasonings.
  • 4. Cover skillet and cook for about fifteen minutes.
  • 5. Check pork chops often to make sure they don't get too done or apple juice dries out. When the pan is getting brown on the bottom, turn the chops over and cook approximately 30 minutes more.
  • 6. Serve hot. Pour juice on potatoes or bread. or make a gravy with the juices. Yum, Yum

My friend gave me this simple recipe when I was expecting our first baby. It's a gret fall/winter meal. We also use it for OAMC/freezer meals and it works great (freeze meat/veggies separate from sauce and combine when thawed). Also try with 2 1/4 lbs turkey thighs (skin removed)instead of pork.

4 -6 boneless pork chops (thick)
1 lb cooking apple (half green, half red, cored and cut into quarters)
1 lb acorn squash (seeded and cut into 8 wedges)
1/4 cup apple juice
4 1/2 tablespoons maple syrup
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
brown rice

Steps:

  • In 13 x 9-inch baking pan, place pork chops in one half of pan. Arrange apple quarters and squash wedges in other half of pan.
  • In a small bowl, combine apple juice, maple syrup, cinnamon and nutmeg; pour over chops, apples and squash.
  • (If freezing, freeze meat/veggies and sauce separately. Thaw when ready to bake, then continue steps below).
  • Cover pan with aluminum foil wrap and bake at 350 degrees for 1 hour.
  • Remove foil and baste with pan juices. Bake uncovered for another 15 minutes.
  • Serve with cooked brown rice.

  • Prepare the pork chops. Season pork chops with salt, pepper, and Italian seasoning on both sides. Set aside.
  • Melt 2 tablespoons of butter of medium-high heat in a large skillet. Carefully add the pork chops to the skillet and cook, undisturbed, on each side for approximately 5-6 minutes (time will vary depending on thickness). The outside should be golden-brown and the internal temperature should register nearly 145 degrees F with a digital meat thermometer. Transfer pork chops to a plate and set aside.
  • To the same skillet, add one more tablespoon of butter and the butternut squash. Stir well to coat the squash. Cook the butternut squash for approximately 5-8 minutes, stirring frequently. Add the onion and continue to cook until onion turns soft and translucent approximately 3-5 minutes.
  • Once the butternut squash just starts to soften (but isn't quite soft) and the onions are translucent, add the minced garlic, fresh rosemary, brown sugar, and cinnamon to the butternut squash. Mix well to combine. Cook for 1-2 minutes.
