KIELBASA SAUSAGE CHEESY POTATO CASSEROLE

This cheesy kielbasa sausage and potato casserole is hearty and delicious, with tender chunks of potatoes and kielbasa in a creamy cheese sauce and then baked.

1 lb sausage kielbasa, (cut 1/4" thick then cut each piece into 4)
3 large potatoes, (peeled, diced into 1/2" cubes)
1 cup diced onions
2 cloves garlic, (minced)
1 tsp Slap ya mama® seasoning
1 tsp pepper
1 cup chicken broth
1 cup heavy cream
10.5 oz can cheddar cheese soup ((I used half a can))
1 cup sharp cheddar cheese
1/2 cup water, (may need more, use 1/8 cup at a time)

Steps:

  • Preheat oven to 350° and lightly spray a 13 x 9 baking dish or a 3 quart baking dish with non stick cooking spray. Set aside.
  • In a Dutch oven or larger stock pot, add cut sausages with about 1/2 cup of water (might need to add more water as sausage browns. Add 1/8 of a cup at a time).
  • Cook over medium heat until water is evaporated and sausage is browned a bit then add diced onions, cook for 3-4 minutes and add garlic. Cook until onions are translucent
  • After sausage has browned and onions are translucent, add diced potatoes to pot.
  • Pour chicken broth, heavy cream, 1/2 can of cheddar cheese soup, seasoning and pepper into pot. Stir.
  • Cook over low heat just until mixture starts to boil. Turn off heat and add cheese to pot.
  • Mix everything together and pour into prepared baking dish. Add additional cheddar cheese on top, if desired.
  • Cover with foil and bake for 65-75 minutes or until potatoes are tender.
  • Remove from oven and remove foil. Place back in the oven for 10 additional minutes.
  • Carefully remove from oven and enjoy!

1 package (14 oz) fully cooked kielbasa sausage, cut in half lengthwise, then cut in 1/2-inch slices
1 cup diced onions
1 box (4.7 oz) Betty Crocker™ scalloped potatoes or au gratin potatoes
2 cups water
1/2 cup frozen sweet peas
4 oz (half of 8-oz package) cream cheese, cubed and softened
1 cup shredded Cheddar cheese (4 oz)
2 green onions, thinly sliced

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Melt butter in skillet; add sausage and onions. Cook 7 to 9 minutes, stirring occasionally, until sausage is lightly browned on edges.
  • Add potatoes and sauce mix (from potato box), and 2 cups water; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in frozen peas; cook 3 to 5 minutes or until potatoes are tender and sauce is thickened.
  • Remove from heat; stir in cream cheese, and continue stirring until cheese is melted. Top with Cheddar cheese and green onions; serve immediately.

Nothing is more rib-sticking good than kielbasa and potatoes together. Add cheese and you have this delicious and easy casserole. Can also be cooked on the BBQ grill!

16 oz kielbasa or smoked sausage
1 10.75 oz condensed cheddar cheese soup
1/4 cup caramelized onions (optional, but add lots of flavor)
4 large potatoes (pared and cut in chunks*)
1 cup milk
1 1/2 cups shredded cheese (divided)
1/2 tsp pepper

Steps:

  • *I strongly suggest partially cooking the potatoes. I used raw and baked for 1 hour and the potatoes in the center of the casserole were still slightly underdone. Stirring the casserole midway through the baking time probably would have helped. If you partially cook the potatoes, reduce casserole cooking time to 30 minutes.
  • Cook On The Grill:
  • Use either a flame-proof ceramic or metal (disposable is fine) baking dish. Proceed as directed except cover with aluminum foil and place on the UNLIT side of the grill for approximately 1 1/2-2 hrs. This is good prepared with other grilled foods that require indirect cooking.
  • Conventional:
  • Preheat oven to 350 degrees F. Lightly spray a 2 1/2 quart (11×7) baking dish.
  • Cut kielbasa into pieces about 1/2-inch thick. Set aside.
  • In a large bowl, mix soup with milk, adding milk slowly while stirring to prevent lumps. Mix in the potatoes, pepper, caramelized onion, 1 cup of the cheese and kielbasa. Stir well.
  • Turn into prepared pan and bake for 45 minutes, stirring half way through cooking time so potatoes cook evenly (see note above-I did not do this, which could account for the undercooked potatoes at the center of the casserole). However, I still suggest partial cooking of the potatoes or even using canned or leftover baked potatoes-you'll reduce the baking time too if you do this.
  • Top with the remaining cheese and bake for an additional 15 minutes.

Steps:

  • Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.

Easy slow cooker casserole adapted from Taste of Home's Potato Sausage Supper. I adapted this from the 2 cans of cheese soup to make it lighter but still flavorful. Notes *The cups of milk are an approximate, I fill the soup can with milk to mix then after putting the hotdish in the slow cooker I pour more milk over the top until it just covers the potatoes. *I have been using Cambell's new Cream of Chicken and Mushroom soup

6 medium russet potatoes
1 (10 ounce) can cream of mushroom soup or 1 (10 ounce) can cream of chicken soup
8 ounces cheddar cheese, shreds
1 teaspoon morton's nature's seasoning
1/2 teaspoon dill weed
1 lb Polish sausage
4 cups skim milk
1/4 cup breadcrumbs, italian flavor
1/4 small sweet onion, minced (optional)
1/4 cup cheese, shreds for topping
salt and pepper

Steps:

  • I use a 6 qt slow cooker.
  • Peel and cut potatoes into chunks.
  • for a medium potato that is about 6 chunks. If you slice them too thin the potatoes will turn to mush in the slow cooker.
  • Slice polish sausage into 1/2 inch slices.
  • In a large mixing bow combine potato chunks, onion, 8oz of cheese shreds and cream soup. Add one soup can of milk and stir.
  • Spray Slow Cooker with non-stick spray.
  • Layer potato mix and sausage slices in the cooker, sprinkle each layer with seasonings so the flavor cooks into each layer. Pour additional milk on top until it almost covers potatoes. I top with additional cheese and the bread crumbs.
  • Cook on Low 6-8 hours.

4 small red potatoes, halved
1 medium onion, halved and sliced
1 medium sweet red pepper, cut into 1-inch pieces
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup heavy whipping cream
Minced fresh parsley

Steps:

  • In a small bowl, combine the sausage, potatoes, onion and red pepper. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Transfer to a greased 1-qt. baking dish. , Cover and bake at 375° for 45 minutes. Stir in cream; cover and bake 10-15 minutes longer or until vegetables are tender and the cream has thickened. i found this on all recipes.com. It was submittted by Geneva. I tweeked it a bit and everyone loves it. It's also an excellent dish to take to a potluck dinner. Some reviewers stated it was "soupy".I adjusted the milk to 1/2 cup. I just keep baking it until it get's thick. Sometimes I have to bake it 2 hours. It really does get thick. The last few times I made it I made it with 1 cup of milk. It seemed to get thicker quicker. I am going to change the amount of milk. One reviewer noted that the spices were too much. My family does not like all the garlic either. They said that there is enough in the kielbasa. I don't use it when making this recipe to please them not me. I sometimes top this bake with Frenches French Fried Onions (Cheddar Cheese or Original)

I have eaten, but never prepared this casserole made with frozen hash browns instead of sliced potatoes. I will attempt to provide those directions also. My family really likes sauces, so this recipe is 1 1/2 times the original amount of sauce.

1 1/2 lbs kielbasa, sliced into bite sized rounds
6 -7 large potatoes, peeled and sliced (you may substitute with 1 pkg. frozen hash brown potatoes)

4 1/2 tablespoons flour
4 1/2 tablespoons butter
2 1/4 cups milk
