GRILLED PORK CHOPS AND GREENS WITH RED PEPPER SAUCE



Grilled Pork Chops and Greens with Red Pepper Sauce image

1 large leek, halved lengthwise and crosswise
5 tablespoons extra-virgin olive oil
2 large jarred roasted red peppers
2 tablespoons raw almonds
1 lemon (1/2 juiced, 1/2 sliced into wedges)
1/2 teaspoon sugar
1/4 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 large bunch collard greens, stems removed and leaves cut into large pieces
4 bone-in pork chops (1/2 inch thick; about 6 ounces each)
2 tablespoons chopped fresh chives

Steps:

  • Preheat a grill to medium. Brush the cut sides of the light-colored half of the leek with 1 tablespoon olive oil. Grill, covered and turning occasionally, until slightly charred and tender, about 8 minutes (reduce the heat or move the leek if it gets too dark). Transfer the grilled leek to a blender along with the roasted peppers, almonds, lemon juice, sugar, paprika, 1/2 teaspoon each salt and pepper and 2 tablespoons each olive oil and water. Puree until smooth.
  • Wash the collards, leaving a lot of excess water on the leaves. Transfer to a large bowl and drizzle with the remaining 2 tablespoons olive oil; season with salt and pepper and toss. Grill the collards and the dark green half of the leek, turning often, until wilted and slightly charred, 8 to 10 minutes. Remove to a cutting board and tent the collards and leek with foil to steam.
  • Season the pork chops with salt and pepper. Grill until well marked and cooked through, about 4 minutes per side.
  • Thinly slice the collards and leek; toss together. Divide the red pepper sauce among plates and top with the greens and pork chops. Sprinkle with the chives.

1 medium shallot, thinly sliced into rings
2 teaspoons mustard seeds
2 teaspoons sugar
1/4 cup plus 2 tablespoons white wine vinegar
1/2 teaspoon kosher salt, plus more
4 bone-in pork rib chops (about 12 ounces each)
Freshly ground black pepper
3 tablespoons olive oil, plus more for drizzling
1 tablespoon whole grain Dijon mustard
2 teaspoons honey
1 bunch mustard greens, tough stems trimmed

Steps:

  • Place shallot and mustard seeds in a small bowl or heatproof jar. Bring sugar, 1/4 cup vinegar, 1/2 teaspoon salt, and 2 tablespoons water to a boil in a small saucepan, stirring to dissolve sugar and salt. Pour over shallot and mustard seeds; set aside.
  • Pound pork chops between 2 layers of plastic wrap to 1/4-1/2" thickness; season with salt and pepper. Heat 3 tablespoons oil in a large skillet over medium-high.
  • Working in batches if needed, cook pork chops until browned and cooked through, about 3 minutes per side. Transfer to a large plate.
  • Reduce heat to medium-low and add mustard, honey, remaining 2 tablespoons vinegar, and a splash of water to skillet. Bring to a simmer and cook, scraping up browned bits from bottom of skillet, until liquid is slightly reduced, about 1 minute. Season with salt and pepper. Remove pan sauce from heat.
  • Place greens in a large bowl; season with salt and pepper. Drizzle warm sauce over greens and toss to coat. Drain shallot and mustard seeds.
  • Serve pork chops with greens topped with pickled shallot and mustard seeds and drizzled with more oil.

1/2 bulb fennel, trimmed and very thinly sliced crosswise
1/4 cup unseasoned rice-wine vinegar
Four 14-ounce bone-in pork rib chops
1/2 cup extra-virgin olive oil
1 tablespoon fennel seeds
1 tablespoon chopped garlic
Coarse salt and freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon curry powder
1/2 teaspoon ground coriander
1/2 teaspoon fine salt
1 bunch dandelion greens, trimmed
1 tablespoon sherry vinegar

Steps:

  • In a medium bowl, mix together fennel and rice-wine vinegar. Cover, and refrigerate overnight. Place pork chops in a large bowl. Add 1/4 cup oil, fennel seeds, and garlic; toss to coat. Cover and refrigerate overnight.
  • Preheat a grill pan over high heat. In a small bowl, combine cayenne, curry, coriander, and fine salt. Remove pork from marinade and season with salt, pepper, and spice mixture. Place on grill pan, and cook until pork is firm to the touch, 6 to 8 minutes on each side.
  • Meanwhile, drain fennel; discard liquid. In a large bowl, toss together dandelion greens and fennel. In a small bowl, whisk together vinegar and remaining 1/4 cup oil. Drizzle over the dandelion green-fennel mixture; toss to combine. Divide evenly among 4 plates.
  • Remove pork chops from grill, and serve alongside the dandelion green-fennel mixture.

DRY-RUB GRILLED PORK CHOPS OVER CANNELLINI GREENS

1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) cannellini beans, rinsed and drained
1 cup water-packed artichoke hearts, drained and chopped
3/4 cup pitted Greek olives, chopped
1/4 cup dry white wine or chicken broth
1/4 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon smoked paprika
1/4 teaspoon pepper
4 bone-in pork loin chops (8 ounces each)
2 teaspoons Greek seasoning or seasoning of your choice
5 ounces fresh baby spinach (about 6 cups)

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender 4-5 minutes. Add garlic; cook 1 minute longer. Stir in beans, artichokes, olives, wine, broth, salt. paprika and pepper. Bring to a boil; reduce heat. Simmer until liquid is almost evaporated, 12-15 minutes., Meanwhile, sprinkle chops with Greek seasoning. Grill pork chops over medium heat until a thermometer reads 145°, 6-8 minutes on each side. Let stand 5 minutes before serving., Stir spinach into bean mixture; cook and stir until wilted, 2-3 minutes. Serve with pork.

2 teaspoons sweet paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
Kosher salt and freshly ground pepper
4 bone-in pork chops (1 inch thick; about 6 ounces each)
3 tablespoons extra-virgin olive oil
1 onion, sliced
1 5-ounce package mixed hearty greens (such as kale, spinach and/or collards; about 5 cups)
1/4 cup pure maple syrup
2 15-ounce cans small white beans, drained and rinsed
2 tablespoons tomato paste
2 tablespoons apple cider vinegar

Steps:

  • Combine the paprika, cumin, coriander, 3/4 teaspoon salt and a few grinds of pepper in a small bowl. Season the pork chops all over with 1 tablespoon of the spice mixture; set aside the remaining spice mixture.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 3 minutes; remove to a plate. Reduce the heat to medium and add the remaining 1 tablespoon olive oil to the skillet. Stir in the onion and greens. Cook, stirring occasionally, until the onion starts softening and the greens wilt, about 4 minutes. Sprinkle with the remaining spice mixture and stir to combine.
  • Add 2 cups water, the maple syrup, beans, tomato paste and vinegar to the skillet. Bring to a simmer, then nestle the pork chops in the mixture. Simmer until the pork is just cooked through, 5 to 7 minutes; remove to a plate. Increase the heat to medium high and simmer until the greens are tender and the sauce thickens, 3 to 4 minutes. Season with salt and pepper. Serve with the pork chops.

Smothered Pork Chops with Collard Greens image

4 shoulder pork chops cut 1 1/2 inches thick
Salt and pepper to taste
1 tablespoon all purpose flour for chops, plus 2 tablespoons for sauteing vegetables
2 tablespoons reserved hock fat
1 green pepper seeded 1/4-inch sliced
2 medium onions 1/4-inch sliced
3 cups hock stock, hot
1/2 gallon ham hock stock
5 large bunches of collard greens chopped into 4-inch pieces
1 large onion peeled
1 jalapeno pepper, split in half lengthwise
Malt vinegar to taste
Salt and pepper to taste
10 pounds smoked ham hocks
10 pounds fresh ham hocks

Steps:

  • Season each chop with salt and pepper, then dust with flour. Heat a cast iron skillet just large enough to hold the pork over a medium heat. Add the reserved pork fat and brown the pork chop well-approximately 4 minutes per side. Remove the chops from the pan and set aside. If the pan is dry, add another tablespoon of fat. Add the onions and peppers. Increase the heat to medium high in order to brown the vegetables well. Sprinkle flour over the vegetables and cook, stirring constantly, for 5 minutes. Remove pan from the flame and stir in the hot hock stock until thickened and smooth. Bury the pork chops in the gravy. Cover the skillet and place in a 300 degree oven. Cook 2 hours, or until pork is very tender;
  • Collard Greens: Place hock stock in a large sauce pot over a medium high heat. Bring hock stock to a rapid simmer. Pack collards into the stock with the onion and jalapeno. Simmer 2 hours. Season to taste with salt, pepper and malt vinegar.;
  • Ham hock stock: Place ham hocks in a stock pot large enough to hold the hocks, leaving 6 inches of free space at the top of the pot. Pour enough cold water over the hocks to cover by 3 inches. Bring to a rapid simmer over a medium high heat. A thick foam will build on the top of the stock. Carefully remove all of the foam. Reduce heat to low and simmer 6 hours. Constantly skim the clear fat that builds at the top of the stock. Reserve the fat for cooking.
