These moist tender chops get delicious flavor from Dijon mustard, onions and apple slices. Or try replacing the apples with pineapple rings for an appealing variation. I like to serve mashed sweet potatoes with this main course, along with a simple salad.

- In a large skillet, brown pork chops in oil on each side. Season with salt and pepper; remove and keep warm. In the same skillet, saute onions and apple wedges until crisp-tender. , Combine mustard and brown sugar; brush over chops. Return to the skillet; cook for 4 minutes or until meat juices run clear.

BAKED PORK CHOPS AND APPLES
I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

Steps:
- Peel, core, and slice the apples.
- Preheat the oven to 350 degrees.
- Melt the butter in a skillet.
- Brown the pork chops on both sides in the butter.
- Grease (or spray) a large baking dish.
- Put the apple slices in the bottom of the dish.
- Mix the brown sugar and cinnamon.
- Sprinkle the cinnamon and sugar over the apples.
- Place the pork chops on top of the apples.
- Cover with foil and bake for 1 and 1/2 hours.

I love sautéed apples with pork and this is really easy and the mix of savory and tart/sweet hits the spot.

Steps:
- Mix 2 tablespoons broth and cornstarch in a small bowl.
- Heat oil in nonstick skillet over high heat.
- Add chops and cook until browned on each side and cooked through. Transfer to plate.
- Reduce heat to medium-high and add onion to the pan. Cook stirring often until starts to soften, about 2-3 minutes.
- Add apple and cook, stirring often, until tender, about 3-5 minutes.
- Stir in remaining broth, juice, mustard, thyme, cream and cornstarch mixture.
- Bring to boil, stirring, until thickened and glossy, about 1 minute.
- Return chops to pan and heat through. Serve immediately.

PORK CHOPS WITH APPLES AND THYME
A huge sale on boneless pork loin launched me on a search for new recipes that using this ingredient to full advantage. This is an adaptation of a recipe from Eating Well magazine. This simple dish is easy to prepare and captures the flavors of fall. If you are cooking for 1 or 2, I would suggest making a full batch of the apples and sauce with just two chops as it is quite yummy.

- Using a fork, whisk together 2 tablespoons of the chicken broth and the cornstarch in a small bowl. Set aside.
- Heat oil in a large nonstick skillet over high heat. Add chops and cook until browned, 3 to 4 minutes per side. Transfer to a plate.
- Reduce heat to medium-high and add onion to the skillet. Cook for 2 to 3 minutes, stirring often. Onions should become somewhat translucent. Add the apple slices and cook, stirring often, until tender, 3 to 5 minutes. Stir in the remaining broth, cider (or juice), mustard, thyme and the cornstarch mixture.
- Bring the sauce to a boil, stirring, until thickened and glossy, about 1 minute. Season with salt and pepper to taste.
- Return the chops to the pan and heat through.

GARLIC-THYME PORK CHOPS

- Place pork chops on the unheated rack of a broiler pan. Arrange onions around pork chops. Set pan in oven and adjust oven rack so that top of meat is 4 to 5 inches from broiler element. Remove pan and chops. Preheat broiler. Return pan to the broiler and broil, without turning, for 9 minutes.
- Meanwhile, for glaze, in a medium saucepan bring apple juice or vermouth to boiling; boil uncovered on high for 5 to 6 minutes or until reduced to 1/2 cup.
- Meanwhile, combine cornstarch with cold water; stir into apple juice or vermouth. Cook and stir until slightly thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Stir in oil, garlic, 2 tablespoons of the fresh thyme or 1 teaspoon of the dried thyme, the pepper, and salt. Remove 2 tablespoons of the glaze and set aside. Turn pork; broil 9 to 13 minutes more or until juices run clear. Using a pastry brush, coat pork chops and onions with glaze during the last 5 minutes of cooking.
- Remove onions to a small serving bowl. Remove pork chops to serving platter or dish. Stir the reserved glaze and the remaining thyme into onions. Pass with pork chops. Garnish with fresh thyme sprigs, if desired.

ONE-PAN PORK FILLET WITH LEEKS, APPLES, MUSTARD & THYME

- Melt the butter over a medium heat in a large, shallow saucepan, frying pan or flameproof casserole until foaming. Season the pork slices, then fry for 2 mins on each side until browned. Use a slotted spoon to lift the pork onto a plate, then cook the apple wedges in the same pan for 3-4 mins until starting to caramelise. Lift onto the plate and set aside. Reduce the heat, scatter the leeks and thyme into the pan and cook for 15-20 mins until softened.
- Splash in the vinegar and simmer for 1 min, then pour the stock over the leeks, season and simmer for 10 mins more. Pour in the cream, then add the mustard and return the pork and apples to the pan. Season to taste and simmer for 5 mins more until the pork is cooked through but still tender and the apples are starting to soften. Serve the pork spooned over mash, if you like.

- Blot pork chops dry and sprinkle with salt and pepper. In a large skillet, heat oil over medium-high heat and add pork chops. Turn heat to high and sear chops 2-3 minutes on each side, until brown on each side. Remove chops to a plate.
- Reduce heat to medium and add butter. When butter is melted, add onion to skillet and cook, stirring occasionally, for at least twenty minutes. You may need to add a little water or turn the heat down.
- Add apple slices and continue to cook ten more minutes. Add wine, scraping up brown bits from the pan. Cook until wine is almost evaporated, about 2 minutes.
- Add broth to skillet and cook 1 – 2 minutes, stirring frequently. Whisk together the cream and mustard and add to skillet, stirring constantly until bubbling, about 2 minutes. Add chops back to skillet, turning to coat and scooping apples and onion over the top of the chops. Sprinkle thyme into skillet.
