CHEF JOHN'S SMOTHERED PORK CHOPS

Chef John's Smothered Pork Chops image

You know that when a recipe has 'smothered' in the name, it's going to be easy. It's a beautiful combination of dark, rich onion gravy covering pan-fried pork chops. Serve over hot cooked rice.

Provided by Chef John

Categories     Main Dish Recipes     Pork     Pork Chop Recipes

Time 1h10m

Yield 4

Number Of Ingredients 11

4 large bone-in pork chops, about 1 inch thick
1 teaspoon poultry seasoning
salt and freshly ground black pepper to taste
2 tablespoons vegetable oil
1 tablespoon butter
1 large yellow onion, sliced
4 cloves garlic, minced
1 ½ tablespoons all-purpose flour
1 ½ cups chicken broth
¼ cup buttermilk
¼ cup water

Steps:

  • Sprinkle pork chops with poultry seasoning, salt, and black pepper on both sides. Heat vegetable oil in a large skillet over medium-high heat; brown pork chops well on both sides, about 5 minutes per side. Transfer to a plate.
  • Discard excess grease from pan and melt butter in the same skillet. Reduce heat to medium and stir onion in the hot skillet with a pinch of salt until onion is very browned and caramelized, about 15 minutes. Stir in garlic and cook for 1 minute; stir in flour and cook for 2 minutes.
  • Pour chicken broth into skillet and stir, dissolving browned bits of food in the bottom of the skillet. Pour juices that have accumulated on plate containing pork chops into the sauce. Mix in buttermilk until smooth. Add water. Bring sauce to a simmer, reduce heat to low, and cook until onions begin to break down and sauce is thickened, 15 to 20 minutes.
  • Place pork chops into sauce, spooning sauce over meat to coat. Turn heat to low and simmer until chops are tender and cooked through, about 10 minutes. Adjust levels of salt and pepper and serve chops with gravy on top.

PORK CHOPS SMOTHERED IN ONION GRAVY

Pork Chops Smothered in Onion Gravy image

This recipe calls for 4 pork chops because that's about what you can fit into a standard frying pan, though I've squeezed 6 smaller chops in before. I recommend you double the recipe because my husband eats them two at a time. Serve the smothered pork chops over cooked rice with your favorite vegetable side dish and cornbread.

Provided by Lolita Contreras Murrah

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Braised

Time 1h40m

Yield 4

Number Of Ingredients 11

2 teaspoons seasoned salt
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon paprika
4 pork chops, 3/4-inch thick, or more to taste
½ cup self-rising flour
¼ cup vegetable oil
1 yellow onion, thinly sliced
1 cup sliced fresh mushrooms, or more to taste
1 teaspoon water, or as needed
2 cups water

Steps:

  • Mix seasoned salt, garlic powder, black pepper, and paprika together in a bowl; rub about 3/4 teaspoon spice mixture onto each pork chop. Thoroughly coat each pork chop with flour, saving remaining seasoning and flour for the gravy.
  • Heat vegetable oil in a heavy skillet over medium-high heat; cook pork chops in the hot oil until browned, about 3 minutes per side. Transfer pork chops to a plate, retaining drippings in the pan. Cover pork chops with paper towels.
  • Cook and stir onion in the drippings in the heavy skillet over medium heat until browned, 5 to 10 minutes. Add mushrooms, remaining flour, remaining spice mixture, and about 1 teaspoon water if needed to moisten; cook and stir until onion is golden brown, about 5 minutes.
  • Stir 2 cups water into onion-mushroom mixture until gravy is smooth; bring to a boil. Place pork chops in the gravy, reduce heat, cover skillet, and simmer until pork chops are tender, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

PORK CHOPS SMOTHERED IN CARAMELIZED ONIONS

Pork Chops Smothered in Caramelized Onions image

I created this dish for my husband, as he loves the flavor of deeply caramelized onions. It was a big hit and is sure to become one of our regular meals. I served it with homemade applesauce and skillet country potatoes. Yummm!

Provided by MarthaStewartWanabe

Categories     Pork

Time 45m

Yield 2 serving(s)

Number Of Ingredients 9

2 boneless pork chops, with as much fat removed as possible
1/2 teaspoon garlic powder
1/4 teaspoon ground sage
1/4 teaspoon ground thyme
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
3 tablespoons butter
1 cup onion, thinly sliced
2 teaspoons sugar

Steps:

  • Season both sides of pork chops with garlic powder, sage, thyme, salt and pepper.
  • Melt 2 tbs. butter in a large skillet over medium heat, evenly coating the bottom of the skillet.
  • Increase heat to medium-high. Cook both sides of chops for 10-15 minutes until lightly browned. (Note: It is okay if the chops are not completely done, as there is more cooking time to come.).
  • Push chops to outside edges of skillet. Melt the remaining 1 tbs. butter in the center of the skillet and add onions to the center of the skillet, sprinkling with sugar.
  • Replace skillet cover and cook for 10 minutes, frequently tossing and stirring onions with a spatula. Onions are caramelized when tender and medium-brown in color. My husband prefers cooking them until slightly burned, as the flavor intensifies. (Note: Don't forget to watch your chops to make sure they don't burn.).
  • Check chops for doneness before serving. They will be done when a fork piercing the thickest part of the chop draws clear juice. If the juice is pink, cook chops a bit longer until done. (Note: Make sure to watch onions, so they don't burn.).
  • Serve pork chops with caramelized onions piled on top.

  • Fry bacon in cast iron skillet or heavy ovenproof pan over medium heat, stirring occasionally, until lightly browned, 8 to 10 minutes. Using slotted spoon, transfer bacon to a paper towel-lined plate, leaving fat behind. There should be about 2 tablespoons bacon fat; if not, supplement with vegetable oil.
  • Pat pork chops dry with paper towels and sprinkle with 1/2 teaspoon pepper. Brown chops in a single layer until deep golden on first side, about 3 minutes. Flip chops and cook until browned on second side, about 3 minutes longer. Add onions to pan when chops are flipped. Transfer chops to large plate and set aside while onions finish cooking.
  • As onion cooks, add the tablespoon oil and two tablespoons water. Cook onions until softened and lightly browned and water is evaporated. Add in garlic and cook for a moment longer. Reduce heat and sprinkle flour over the top of the onions. Whisk in until smooth and cook, whisking frequently, until mixture is light brown, about the color of peanut butter, about two to three minutes. Whisk in chicken broth in slow, steady stream; increase heat to medium-high and bring to boil, stirring occasionally.
  • Return chops to skillet in single layer, covering chops with onions. Cover, and simmer gently or place in oven (350 degrees) and cook until pork is tender, about 25 to 30 minutes, depending on the thickness of the chops. Check by inserting a paring knife into the chops. There should be very little resistance,
