2 tablespoons all-purpose flour
1 pinch ground black pepper
¼ cup shredded Cheddar cheese
¼ cup crushed jalapeno potato chips (such as Miss Vickie's®)
1 ½ teaspoons grated lime zest
2 bone-in pork chops
2 teaspoons olive oil
1 teaspoon margarine

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Whisk egg in a shallow bowl. Combine flour and pepper in another shallow bowl. Mix Cheddar cheese, jalapeno chips, and lime zest in a third bowl.
  • Toss pork chops in the flour to coat. Shake off excess, then dunk in egg. Coat chops in the chip and cheese mixture.
  • Heat oil and margarine in a medium skillet over medium-high heat. Fry each pork chop until browned on the outside, 2 minutes per side. Transfer chops to a baking dish or foil-lined baking pan.
  • Bake in the preheated oven until pork is no longer pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1/2 cup plus 3 Tbsp. extra-virgin olive oil, divided, plus more for grill
4 bone-in pork rib chops (about 10 oz. each)
Kosher salt, freshly ground pepper
2 tsp. coriander seeds
1/4 cup apple cider vinegar
1 tsp. sugar
2 large jalapeños
1/4 medium white onion, very thinly sliced

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat pork chops dry and season generously all over with salt and pepper. Place on a rimmed baking sheet and let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toast coriander seeds in a dry small skillet over medium heat, tossing often, until golden brown and fragrant, about 2 minutes. Transfer seeds to a cutting board and let cool. Using a flat-bottomed mug or a heavy skillet, lightly crush. Place in a small bowl and add vinegar, sugar, and 1/2 cup oil. Season with salt and pepper and whisk until sugar and salt are dissolved. Set marinade aside.
  • Toss jalapeños and 1 Tbsp. oil in a small bowl to coat; season with salt and pepper. Pat pork chops dry again (the salt will have drawn out more moisture) and rub with remaining 2 Tbsp. oil. Grill jalapeños, turning often, until softened and blackened in spots, about 5 minutes. Transfer to a cutting board. Grill pork chops, turning every 2 minutes or so, until cooked through but still medium-rare closest to the bone (an instant-read thermometer inserted near the bone should register 145°F), 8-12 minutes. Transfer to cutting board and let rest 10-15 minutes.
  • Cut pork along the bone to remove meat in one piece; slice 1/2" thick and transfer to a rimmed platter. Slice jalapeños crosswise into rounds and scatter over pork. Pour reserved marinade over and let sit at least 15 minutes and up to 1 hour before serving. To serve, scatter onion over.

1/2 cup dry white wine
1/2 cup reduced-sodium chicken broth
2 tablespoons unsalted butter
1 teaspoon fresh lemon juice
1/4 cup coarsely chopped flat-leaf parsley

Steps:

  • Roast bell peppers on racks of gas burners over high heat (or on rack of a broiler pan about 2 inches from heat), turning with tongs, until skins are blackened, 10 to 12 minutes. Transfer to a large bowl and tightly cover with plastic wrap. Let stand, covered, 20 minutes. Peel, then halve lengthwise, discarding stems and seeds. Cut peppers into 1-inch pieces.
  • While peppers stand, mince and mash half of garlic to a paste with 3/4 teaspoon salt. Combine with rosemary, 1 tablespoon oil, and 1/2 teaspoon pepper. Rub onto chops.
  • Heat remaining 2 tablespoons oil in a large heavy nonstick skillet over medium-high heat until it shimmers. Sauté pork, turning once, until pale golden in spots and just cooked through, 4 to 6 minutes. Transfer to a plate and keep warm, loosely covered with foil.
  • Add roasted peppers to skillet with onion, remaining garlic, cherry peppers, and 1/4 teaspoon salt. Cook, stirring occasionally, until onion is softened, 5 to 6 minutes. Add wine and broth and boil until liquid is reduced to a glaze, about 5 minutes. Add meat juices from plate and remove skillet from heat. Add butter, stirring until incorporated. Stir in lemon juice, parsley, and salt to taste and spoon over chops.

Transfer to a platter and cover with foil. Return pan to heat and add more extra-virgin olive oil and bell peppers. Saute, stirring frequently, 5 minutes. Add hot cherry peppers and a splash of their brine to the pan, cook a minute. Add wine or stock and scrape up pan drippings. Arrange peppers over chops and serve.

2 tbsp all-purpose flour*
1 tsp salt
1/2 tsp pepper
2 tbsp olive oil
2 tbsp butter
3/4 cup heavy cream
2 tbsp Dijon mustard
2 tbsp honey
3-4 sprigs thyme or dill for garnish

Steps:

  • Mix the flour, salt and pepper on a plate. Dredge the cutlets in the mixture and shake off excess. Set aside.
  • Heat a heavy bottomed pan such as cast iron skillet over medium-high. Add 1 tbsp olive oil and 1 tbsp butter. Sear 3 or 4 thin pork chops at a time, for just over 1 minute per side until they just begin to turn golden. Remove from pan. Repeat with the rest of the olive oil, butter and chops.
  • Lower the heat to medium and to the same pan add the cream, mustard and honey. Whisk until combined and bring to simmer. Add the seared pork chops to the sauce and cover the skillet partially with a suitable lid or simply a round baking sheet that fits. Simmer for 5-6 minutes to cook the pork chops through. Garnish with fresh thyme or dill and serve.
