Even though I can't eat chicken, this recipe is so ridiculously easy that sometimes I make it for my husband and daughter when I'm tired. It takes 10 minutes to throw together and has all the important food groups in it! If you use chicken thighs, its SUPER CHEAP too. Feel free to sub whatever "Cream of..." soup you like, we just happen to like mushrooms. Update: I think people were missing the part of the instructions that called for the 2 soup-can-fulls of water so I'm adding it into the recipe. This recipe is intentionally on the bland side, making it kid friendly or open to whatever spices and seasonings you prefer!

4 -6 chicken breasts or 4 -6 chicken thighs
2 (15 ounce) cans cream of mushroom soup
2 (15 ounce) cans water (just use the cream of mushroom soup cans!)
8 ounces frozen mixed vegetables (something with broccoli is yummy)
2 cups uncooked rice
1/2-1 teaspoon paprika
1/4 teaspoon pepper

Steps:

  • In a baking dish, mix together everything except the chicken.
  • Place chicken on top. Sprinkle with additional paprika and pepper if desired.
  • Bake uncovered at 375 for 1 hour.

1.5 cups minute brown rice
5 cups chopped broccoli florets (1 full head)
1/2 medium yellow onion (finely diced)
2 medium carrots (finely diced)
1.5 cups frozen green peas
2 cups chicken broth
1.5 cups 2% milk
8 oz. shredded cheddar cheese (divided (6 oz. and 2 oz.))
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon ground pepper
1.5 lb.s boneless (skinless chicken breast (raw))
1 oz. shredded parmesan cheese

Steps:

  • First, preheat oven to 375ºF and spray a large ceramic casserole dish with nonstick cooking spray.
  • Next, place minute brown rice, broccoli florets, yellow onion, carrots, and green peas on the bottom of the casserole dish.
  • Prepare cheese sauce by placing broth and milk into a small saucepan. Heat over medium heat.
  • Once simmering, turn down low/medium and add in 6 oz. shredded cheddar cheese, garlic powder, salt, and pepper. Continuously stir until the cheese melts and your cheese sauce has formed.
  • Immediately pour over rice and veggies and mix.
  • Next, slice chicken breasts into 1-inch cubes and add that to the casserole dish and mix making sure everything is fully coated in cheese sauce.
  • Bake at 375ºF, uncovered, for 30 minutes.
  • Then, add 2 oz. shredded cheddar cheese and 1 oz. shredded parmesan cheese to the top of the casserole dish and bake for an additional 15-20 minutes.
  • Let casserole rest on the stovetop for 15-20 minutes before serving to further thicken.

1 whole cooked chicken, cut into pieces
1 (16 ounce) package frozen mixed vegetables, thawed
2 cups cooked rice
⅔ cup water
½ cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the soup, chicken, cooked vegetables, cooked rice and water. Mix well and spread mixture in a 9x13 inch baking dish. Sprinkle crushed cracker crumbs on top and bake in the preheated oven for about 15 to 20 minutes. Let cool 10 minutes and serve.

1 1/4 cups rice (uncooked)
3 tablespoons butter
2 cups chicken broth
3 tablespoons flour
1/2 cup onion (finely chopped)
1 cup cream
10 ounces frozen mixed vegetable
3 ounces French fried onion (store bought)

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 x 13-inch baking dish with non-stick cooking spray. Add the rice to the bottom of the baking dish.
  • Cut the chicken breast into bite size pieces.
  • Melt butter in a skillet and add the onion. Cook the onion until tender 2 or 3 minutes. Add the flour and stir in. Add the chicken broth and cream and cook until it starts to thicken.
  • Add the chicken to the rice and top with the frozen vegetables. Pour the sauce over the ingredients in the baking dish.
  • Cover with aluminum foil and bake for 30 minutes. Remove from the oven and remove the aluminum foil. Sprinkle the French fried onions over the top of the casserole and bake for another 15 to 20 minutes

4 cups low sodium chicken broth
2 cups uncooked long grain brown rice
3 cups broccoli florets (, cut into bite sized pieces)
1 teaspoon olive oil
1 lb (450g) boneless skinless chicken breasts (, cut into bite-sized pieces)
3/4 teaspoon salt (, divided)
1/2 teaspoon freshly ground black pepper (, divided)
1/2 teaspoon garlic powder
5 tablespoons unsalted butter (, divided)
1/2 lb (225g) white button mushrooms (, finely chopped)
1/2 red bell pepper (, diced)
1 onion (, chopped)
1 clove garlic (, finely chopped)
2 cups milk (, divided)
2 tablespoons cornstarch
1/3 cup non-fat plain Greek yogurt
1 tablespoon Dijon mustard
1/2 cup grated Parmesan cheese
1 1/2 cups grated cheddar cheese (, divided)
1 cup panko bread crumbs
chopped parsley (, for garnish)

Steps:

  • Bring chicken broth to a boil in a large pot. Add the rice, cover, reduce heat to medium-low and simmer. When the rice has about 5 minutes left to cook, add broccoli on top. Cover and let cook for the remaining 5 minutes.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat and add chicken. Season with 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/2 teaspoon garlic powder. Saute until chicken is no longer pink outside, about 5 minutes. Remove chicken from pan and set aside.
  • Heat 3 tablespoons of butter in a large skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, for 3-4 minutes, until tender. Add the onion and bell pepper, and saute for 3 minutes, then add the garlic and continue to saute for another minute. Reduce heat to medium. In a small bowl, whisk the cornstarch with 1/2 cup of milk, making sure it dissolves completely.
  • Pour this mixture into the skillet, then stir in the remaining milk. Cook, stirring constantly, until starts to thicken, 3-5 minutes. Remove from heat and stir in Greek yogurt, Dijon mustard, 1/4 teaspoon salt, 1/4 teaspoon pepper, Parmesan cheese and 1 cup grated cheddar cheese.
  • Preheat oven to 375 degrees F. Lightly coat a large baking dish with cooking spray. Place the chicken and rice/broccoli mixture in a large mixing bowl. Pour in the prepared sauce and toss until thoroughly coated. Scoop mixture into a baking dish. In a small bowl, mix together the panko breadcrumbs, 2 tablespoons melted butter and remaining 1/2 cup grated cheddar cheese. Spread the mixture on top of casserole.
  • Cover with the foil and bake for 15 minutes. Remove the foil and continue baking for 10-15 minutes, or until golden brown on top and casserole is bubbling around edges. Let sit a few minutes before serving. Sprinkle with chopped parsley, if desired.

3/4 cup chopped sweet red pepper

1 medium onion, chopped
1 garlic clove, chopped

1 cup chicken broth
1 (10 3/4 ounce) can tomato soup
1 tablespoon brown sugar
2 tablespoons vinegar or 2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
4 boneless skinless chicken breasts
1 tablespoon flour
1 teaspoon garlic powder, divided
1 teaspoon onion powder, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup mozzarella cheese or 1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • Stir the rice, onion, garlic, broccoli, cauliflower, chicken broth, tomato soup, brown sugar, vinegar and worcestershire together in a 9x13 baking dish.
