6 pork chops, trimmed of fat
1 (10 1/2 ounce) can cream of celery soup
1/2 cup sour cream
1 (24 ounce) package o'brien frozen potatoes, thawed
1 cup shredded cheese, cheddar or 1 cup colby-monterey jack cheese
1 (2 7/8 ounce) can French-fried onions
1/2 cup milk
1/4 teaspoon pepper
seasoning salt

Steps:

  • Brown pork chops in a lightly greased skillet; sprinkle with seasoned salt and set aside.
  • Heat soup, milk, sour cream, pepper and 1/8 tsp seasoned salt in a large saucepan.
  • Stir in potatoes, 1/2 c cheese and 1/2 can fried onions; spoon into a 9x13" baking dish.
  • Arrange pork chops over potatoes.
  • Bake covered, @ 350 degrees for 40 minutes.
  • Top with remaining cheese and onions; bake uncovered 5 minutes longer.

6 pork loin chops (1/2 inch thick)
1 tablespoon vegetable oil
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 cup whole milk
1/2 cup sour cream
1/4 teaspoon pepper
1 cup shredded cheddar cheese, divided
1 can (2.8 ounces) french-fried onions, divided
1 package (28 ounces) frozen O'Brien potatoes, thawed
1/2 teaspoon seasoned salt

Steps:

  • In a skillet over medium-high heat, brown pork chops in oil; set aside. Combine the soup, milk, sour cream, pepper, 1/2 cup cheese and 1/2 cup onions; fold in potatoes. Spread in a greased 13x9-in. baking dish. Arrange chops on top; sprinkle with salt. , Cover and bake at 350° for 40-45 minutes or until pork is tender. Uncover; sprinkle with remaining cheese and onions. Return to the oven for 5-10 minutes or until cheese melts.

I got this recipe out of the 1994 edition Great American Cookbook and have used it many times. My wife and I like it as well as the rest of the family if they happen to be around. It's very easy to make and smells wonderful while it cooks. I served this today with a baked white acorn squash and buttered brussel sprouts.

1 tablespoon vegetable oil
6 pork chops, cut 1/2 to 3/4 in. thick
seasoning salt
1 (10 3/4 ounce) can condensed cream of celery soup or 1 (10 3/4 ounce) can cream of chicken soup, which ever you like
1/2 cup milk
1/2 cup sour cream
1/4 teaspoon fresh ground black pepper
1 (28 ounce) bag O'Brien potatoes, thawed
1 cup shredded cheddar cheese
1 (2 7/8 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees.
  • In a large siillet heat the oil and brown the pork chops on both sides. Drain.
  • Season the chops with the Seasoned Salt.
  • Set chops aside.
  • In a large bowl combine soup, milk, sour cream, pepper and 1/2 tsp Seasoned salt.
  • Stir in potatoes, 1/2 cup cheese and 1/2 can of French Fried onions.
  • Spoon the mixture into a 9 x 13 inches baking dish.
  • Arrange the pork chops on top.
  • Bake, covered at 350 degrees for 40 to 45 minutes or until pork chops are done.
  • Top the chops with the remaining cheese and onions.
  • Bake (uncovered) 5 minutes until cheese is melted and onions are brown.

1 seasoned salt
1 ground black pepper
1 (10 3/4 ounce) can Campbell's® Condensed Cream of Celery Soup
1/2 cup milk
1/2 cup sour cream
1 (24 ounce) bag frozen O'Brien or hash brown potatoes, thawed
1 cup shredded cheddar cheese
1 1/3 cups Original Crispy Fried Onions

Steps:

  • HEAT oven to 350°F. Heat oil in large skillet, brown pork chops on both sides; drain. Sprinkle chops with seasoned salt and black pepper to taste; set aside.
  • COMBINE soup, milk and sour cream in 3-quart baking dish. Stir in potatoes, 1/2 cup cheese and 2/3 cup Crispy Fried Onions. Arrange pork chops on top.
  • BAKE, covered, for 40 minutes or until pork chops are done. Top chops with remaining cheese and onions. Bake 5 minutes until onions are golden.

1 Tbsp oil
6 pork chops, browned in oil
1 can(s) cream of celery soup
1/2 c milk
1/2 c sour cream
1/4 tsp pepper
1 bag, (24 oz.) frozen o'brien potatoes, thawed
1 c cheddar cheese, shredded and divided
1 can(s) french fried onions, divided

Steps:

  • 1. Sprinkle pork chops with seasoned salt and brown in a skillet with the oil. Once brown remove to a plate and keep warm.
  • 2. In a large bowl, combine soup, milk, sour cream, pepper and 1/2 salt. Stir in thawed potatoes, 1/2 cup cheese and 1/2 cup fried onions. Spoon into a greased 13"x9" dish and place pork chops on top. Bake covered (use foil if no lid for dish) at 350 degrees for 35-40 minutes.
  • 3. During the last 5 minutes of baking; remove the cover and top with remaining cheese and fried onions. Cook until cheese melts and onions are golden brown.
  • 4. NOTE: If you'd like, you can use hash browns in place of the O'Brien potatoes.

8 ounces beer (or apple juice)

Steps:

  • Lightly flour 4 pork chops; brown in a little butter. Add sliced mushrooms and onion to pan and stir in 8 ounces beer or apple juice.

From the cookbook, "Harlem Really Cooks" by the late Harlem historian and gourmand Sandra Lawrence. "Obie" was a friend of hers who owned a nightclub/restaurant and smothered chops were one of the many specialties made there. The use of pancake mix in lieu of plain flour gives this dish a slight sweetness along with the sugar as well. The only change I made was the addition of mushrooms to the gravy. 6 center cut 1-inch pork chops
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/4 cup aunt jemima's pancake mix
2 tablespoons corn oil
3 medium onions, sliced
4 ounces of sliced raw mushrooms
1 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon sugar
1/4 cup all-purpose flour
2 cups boiling water

Steps:

  • Preheat your oven to 350 degrees.
  • Rinse chops, then pat them dry. Sprinkle with spices mentioned above. Then dredge into pancake mix.
  • Heat the oil in a large skillet over medium heat. Place the chops into the skillet. Brown the chops on both sides. Remove from the skillet and place in a roasting pan.
  • In the skillet, now saute the onions and mushrooms with the salt, pepper and sugar until slightly browned.
  • Stir in the flour until absorbed. Gradually add the boiling water, stirring constantly, until the gravy thickens and boils.
  • Place chops in the pan; cover tightly with heavy-duty aluminum foil. Bake for 1 hour and twenty minutes; the chops and gravy should be a rich golden brown.
  • Place chops on a serving platter; either place gravy on top, or strain through sieve and put gravy in a gravy boat; skim fat off top and serve.
