PORK CHOPS THAT ACTUALLY STAY MOIST!
Seriously folks, I thought moist pork chops were a myth... until I found this recipe! Cornstarch added to the flour coating is the trick to keeping these puppies moist and tender. This is a recipe from Emeril Lagasse.

Steps:
- Season the chops on both sides with 2 tablespoons of the creole seasoning.
- Combine the flour, cornstarch and remaining tablespoon of creole seasoning in a shallow bowl. Dredge the pork chops in the flour mixture.
- In a large cast-iron skillet or saute pan, heat the oil over high heat. Add the pork chops in batches and cook until golden brown and medium, 5 to 6 minutes per side.
- Remove and drain on paper towels. Season lightly with salt and pepper.
MOLASSES BRINED PORK CHOPS
Steps:
- Make brine: Combine ingredients in a large non-reactive pan. Stir until salt and molasses are dissolved. Add chops to brine and refrigerate for 4 to 6 hours.
- Preheat a grill to medium.
- Remove chops from brine and pat dry. Place chops on grill and cook on each side for 10 to 15 minutes, depending on thickness; the internal temperature of the pork chops should measure 145 degrees F when measured with an instant-read thermometer. Serve immediately.
ALTON BROWN'S MOLASSES-AND-COFFEE PORK CHOPS
Steps:
- Combine the coffee, molasses, vinegar, mustard, garlic, 1 teaspoon salt, 1/2 teaspoon pepper, the ginger, thyme and pork chops in a 1-gallon zip-top bag; seal and shake to combine. Marinate in the refrigerator for at least 2 hours or overnight.
- Preheat a grill to medium-high. Remove the pork from the bag. Pour the marinade into a saucepan; boil gently over medium-high heat, stirring, until reduced to 1/2 cup, 12 to 15 minutes. Remove the thyme stems.
- Grill the pork chops for 3 to 4 minutes per side, or until they reach an internal temperature of 145. Let rest for 5 minutes; serve with the glaze.
OLE MOLE MEXICAN PORK CHOPS
A delicious taste of Old Mexico. Serve on a bed of rice and you've got dinner! Original recipes was an entry in RZ CrazeE recipe contest, however I have since modified the recipe to fit our taste.

Steps:
- In large bowl, mix together crushed tomatoes, chipotle pepper, cumin, chili powders, cocoa, oregano, beans and poblano peppers. Pour in beer and stir.
- In small skillet fry bacon until crisp: remove bacon to paper towel to drain, set aside.
- Saute chopped onions and garlic in one tablespoon of bacon fat for about three minutes, add to tomato mixture.
- Season pork chops with salt and pepper.
- Place sliced onions on bottom of crock pot; place pork chops on top of onions; this will prevent the chops from sticking.
- Add tomato mixture to crock pot.
- Cook on low for 6-7 hours (time may vary).
- Stirring is not necessary; removing the lid results in heat loss and may require extended cooking time.
- Stir in corn approximately 1 hour before serving.
- If the sauce is to thin, mix corn meal or masa harina with a little water and stir a little into the sauce until you've achieved desired thickness.
- Just before serving squeeze lime juice into pot and stir.
- To serve place pork chops on a bed of rice, spoon sauce on top and garnish with bacon bits and cilantro.

- Remove Chops and saute mushrooms and peppers in the same pan (more oil may be necessary).
- Add remaining ingredients along with Chops and simmer covered for 1 hour.

- Melt butter in a large skillet over medium heat. Brown chops on both sides, then add remaining ingredients, except lemon juice. Cover, reduce heat, and simmer about 20 minutes until chops are tender, turning once during cooking. Remove chops and place on a warm platter. Add lemon juice to pan juices and simmer 1 minute. Pour over chops and enjoy.
PORK CHOPS - SOUTHERN STYLE
Simple, quick and tasty. Something I threw together with the 'scraps' in my Fridge and surprised me with how great it tasted. Feel free to remove as much 'fat' from the pan as you need to... the more you leave, the better it tastes! Great with mashed potatoes!

Steps:
- In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
- Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
- Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
- Chop up bacon, and add both bacon and cooked onion to skillet.
- Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
- Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
- Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.
PORK CHOPS, MOLISE STYLE

- 1 In a small bowl, mix together the paprika, garlic, salt, and a generous pinch of crushed red pepper. Add the vinegar and stir until smooth. Place the chops on a plate and brush them on all sides with the paste. Cover and refrigerate 1 hour up to overnight. 2 Place a barbecue grill or broiler rack about 6 inches from the heat source. Preheat the grill or broiler. Cook pork chops until browned on one side, about 6 minutes, then turn the meat over with tongs and brown the other side, about 5 minutes more.
