SWEET-AND-SAUCY PORK CHOPS
This easy weeknight dinner recipe uses sugar to create succulent, caramelized pork chops in record time.

Steps:
- Season pork chops with salt and sprinkle evenly with 1/2 tsp. sugar. Heat 1 Tbsp. oil in a large skillet over medium-high. Cook chops, undisturbed, until well browned underneath, about 3 minutes. Turn and cook just until second side is lightly browned, about 1 minute. Transfer chops to a plate (they won't be fully cooked); reduce heat to medium.
- Pour remaining 1 Tbsp. oil into same skillet and add shallot and garlic. Cook, stirring often, until softened and just beginning to brown, about 3 minutes.
- Add vinegar and remaining 1 tsp. sugar to skillet. Cook, swirling pan occasionally, until vinegar is nearly evaporated, about 2 minutes.
- Add rosemary, capers, and 1/2 cup water to skillet; season with salt. Reduce heat as needed to maintain a very low simmer. Add butter and swirl pan continuously (and vigorously) until sauce becomes smooth, glossy, and emulsified.
- Return pork chops to skillet, arranging darker side up. Simmer gently in sauce, swirling occasionally, until chops are cooked through, about 3 minutes (a thermometer inserted near the bones should register 135°F).
- Transfer pork chops to plates and spoon sauce over.

Steps:
- Season pork chops with salt and pepper.
- Heat olive oil to medium high heat and saute chops, about three minutes per side. Remove to plate and keep warm.
- Add onions to same pan and cook, about three minutes. Add peppers and celery and cook until vegetables are tender and onions are translucent and fragrant.
- Add the tomatoes and their juice and salt and pepper to taste. Bring to a simmer.
- Cover pork chops in tomato mixture, turning to coat all sides.
- Simmer on medium low heat until pork chops are done, (150 degrees internal temperature) about 8 minutes.
- Serve with brown rice.

PORK CHOPS VERACRUZ

- In a large skillet, heat oil. Add pork chops. Brown well on both sides. Drain off excess fat. Sprinkle with flour, brown sugar, dry mustard, salt and garlic. Add onions and wine. Cover. Cook over low heat until chops are tender, about 1 hour. Add 1/2 cup water, or as needed, and spoon sauce over chops several times. Add green pepper 15 minutes before end of cooking time. Cook rice with 2-1/2 cups water, 1 teaspoon salt and butter or margarine according to package directions. Top pork chops with pimiento and serve with rice.

PORK CHOPS A LA VERACRUZANA
Flavorful chops braised in a sauce of tomatoes, peppers, onions, olives-a slightly different take on Mexico's classic fish dish from the state of Veracruz.

- Heat the oil in a large non-stick sautee pan or skillet over medium heat. Place the pork chops in the pan in a single layer. Fry, turning once, until each side of the chops is slightly browned. (Note: if pork chops have a bit of nice fat on the edges, you won't need as much oil, and maybe none at all.)
- Remove the chops from the pan and keep warm. Add the sliced onion and green pepper to the pan and sautee, stirring often, until the onion has become translucent, but not brown.
- Return the chops to the pan. Add the tomatoes, olives, chopped jalapeño, jalapeño liquid, garlic, and oregano. Cover the pan with a lid at an angle so that plenty of steam can evaporate. Let everything cook gently, stirring once in a while, for about 10 minutes.
- Add salt or bouillon powder/paste (vegetable or chicken work well) to taste and cook for 5 more minutes, until all the ingredients are well-cooked.
- Serve your flavorful Pork Chops a la Veracruzana with rice or cooked potatoes, if desired.

- Combine flour, salt, pepper and thyme in a shallow pan. Dredge pork chops in flour.
- Add butter and oil in pan and heat over med-high. Brown pork chops on both sides, about 4 minute.
- Add 1/2 cup vermouth, cover, lower heat and cook until chops are cooked through, about 4 more minute.
- Remove pork chops to platter, top with swiss chesse and cover to keep warm and melt cheese.
- Add mushrooms to skillet and cook over med-high heat until softened.
- Add remaining vermouth and scrape off brown bits from pan. Cook until sauce is slightly reduced.
- Spoon sauce over pork chops and serve.
PEPPERCORN PORK CHOPS WITH WARM PICKLED PEPPER RELISH
If you are a lover of pepper in all its forms, you really must experience this dish. With 4 kinds of peppercorns producing a fairly spicy crust, these tender, moist chops topped with a sweet and sour pickled pepper sauce are perhaps the most flavorful you will ever enjoy in your life. Serve with scalloped potatoes, if desired.

- Place all peppercorns on a cutting board and use the flat bottom of a heavy pan to crush them as finely or coarsely as you like. Transfer crushed pepper into the pan.
- Make 3 cuts through the fat on each pork chop and season generously with salt. Apply a generous coating of crushed peppercorns to both sides, pressing into the meat firmly as you do, until fully coated.
- Transfer chops to a rack set over a pan and let sit out at room temperature for 1 hour, turning halfway through and reapplying crushed peppercorns as necessary. Or, place in the refrigerator for 4 to 12 hours.
- Meanwhile, prepare the pepper relish while the chops are dry-brining: combine poblano pepper, orange and red bell peppers, garlic, salt, cayenne, and rice vinegar. Mix to combine and cover with plastic wrap. Leave on the counter for 1 hour.
- Heat oil in a pan over medium-high heat until very hot and starting to shimmer. Add pork chops and sear for 5 minutes per side. Use tongs to turn chops while you brown the edges for another 1 to 2 minutes. Reduce heat to medium if the pan is too hot and begins to smoke. Chops should firm up and spring back to the touch. Do not overcook. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
- Turn off the heat and transfer chops to a plate. Cover loosely with foil and let rest.
- Add chicken broth to the hot pan. Turn heat to high and bring to a rolling boil. Add pickled pepper relish and stir with a spoon, scraping all the bits from the bottom of the pan. Cook until liquid in the pan reduces by about half, about 3 minutes.
- Turn off the heat. Add cold butter and any accumulated juices from the plate of pork and stir until butter has melted.
- Serve pork chops with plenty of hot pickled pepper relish over top.
