Texans like brisket cooked on the smoker, but this recipe offers convenient prep in the oven. Sometimes I make extra sauce to serve on the side. Round out the meal with potato salad and slaw. -Katie Ferrier, Houston, TX

1 fresh beef brisket (4 to 5 pounds)
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon onion salt
1 tablespoon liquid smoke
2 teaspoons salt
2 teaspoons pepper
Dash hot pepper sauce
SAUCE:
1/2 cup ketchup
3 tablespoons brown sugar
1 tablespoon lemon juice
1 tablespoon soy sauce
1 teaspoon ground mustard
3 drops hot pepper sauce
Dash ground nutmeg

Steps:

  • Place brisket, fat side down, in a 13x9-in. baking dish. In a small bowl, mix Worcestershire sauce, soy sauce, onion salt, liquid smoke, salt, pepper and hot pepper sauce; pour over brisket. Turn brisket fat side up; refrigerate, covered, overnight., Remove brisket from refrigerator. Preheat oven to 300°. Bake, covered, 4 hours. In a small bowl, combine sauce ingredients. Spread over brisket. Bake, uncovered, 15-30 minutes longer or until tender. Cut diagonally across the grain into thin slices.

The pork brisket is precisely analogous to the beef brisket: it comes from the breast or lower chest, between the shank and the shoulder, or, in other words, the upper half of the "arm shoulder" primal. If you can get your butcher to leave the skin on, you will have acres of yummy crispy pork skin to snack on when this is done. 3 -4 lbs boneless pork brisket, skin on
salt
ground black pepper
1 tablespoon chopped fresh sage or 1 teaspoon dried sage
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
2 tablespoons olive oil or 2 tablespoons rendered lard
1 tablespoon minced garlic (about 6 cloves)
1 quart whole milk
2 bay leaves
1/2 lemon, juice of
1 lemon, zest of

Steps:

  • Rub the pork with salt, pepper, sage and thyme on both sides. Roll tightly and secure with butcher's twine. Cover loosely with plastic and refrigerate overnight.
  • Remove roast from refrigerator and preheat oven to 325°F for 20 minutes. Heat a Dutch oven over medium heat. Add oil or lard. When fat is shimmering but not smoking, add pork roast. Brown on all sides, about 3 minutes per side. When turning to the last side, add garlic and allow to saute alongside the roast.
  • Remove meat to a plate. Remove all but 1 tbsp of fat from pot; leave the garlic in the pot. Add milk and deglaze, scraping the browned bits (fond) from the bottom of the pot. Add bay leaves, lemon juice and lemon zest, and bring to a boil. Return the roast to the pot, skin side up, cover, and transfer to oven for 1 hour. Remove cover and roast another 30 minutes, until internal temperature is at least 160°F The skin should be golden-brown and crisp. Remove pot from oven.
  • Transfer roast to a baking sheet. Turn on broiler and place roast under broiler 30-60 seconds to further crisp the skin.
  • Meanwhile, place pot over medium heat and simmer 5-7 minutes, until light-brown curds form. Remove and discard bay leaves.
  • Slice the roast 1/2" thick, spoon sauce over and serve. Leftovers make good sandwiches.

1 tablespoon seafood seasoning (recommended: Old Bay Seasoning)
1 tablespoon coarsely ground black pepper
2 tablespoons dry mustard (recommended: Coleman's)

1 (4 pound) beef brisket, first-cut
Extra-virgin olive oil
1 tablespoon kosher salt, plus more for seasoning
Coarsely ground black pepper
3 large carrots, cut into chunks
1 onion, halved
2 celery stalks, cut into chunks
1 head garlic, cut in 1/2
1 (28-ounce) can whole tomatoes, hand-crushed (recommended: San Marzano)
3/4 bottle dry red wine
1 bay leaves
1/4 bunch fresh thyme, leaves only
4 sprigs fresh rosemary, leaves only
1 handful fresh flat-leaf parsley

Steps:

  • Preheat the oven to 325 degrees F.
  • Drizzle brisket liberally with olive oil then season the meat on both sides with salt and pepper.
  • Place a large Dutch oven or heavy-based pot over medium-high heat and add a 3-count of olive oil. Place the brisket in the pot and sear on both sides to form a nice brown crust. Remove from pot and set aside before adding carrots, onion and celery. Brown vegetables, then add the garlic, tomatoes, red wine, bay leaf, thyme, rosemary, and parsley. Add the brisket back to the pot, cover and roast in the oven for 3 hours until the brisket is fork tender.
  • Remove the brisket to a cutting board and let it rest for 15 minutes. Strain out the vegetables and pour off some of the excess fat, then pour over the brisket.
  • Slice brisket across the grain and serve over parsnip puree with roasted red onions and garnish with parsley.

A never fail way to bake a brisket that is always moist and tender! Please note that this must be marinated overnight and then baked for 7 hours the next day.

1 beef brisket
garlic salt
onion salt
celery salt
3 ounces liquid smoke
Worcestershire sauce
1 bottle barbecue sauce

Steps:

  • Trim fat from brisket.
  • Sprinkle meat liberally with all the salts.
  • Line a baking pan with enough foil to seal over the meat.
  • Put meat on foil lined pan and pour the whole bottle of liquid smoke over the meat.
  • Seal the foil and refrigerate overnight.
  • The next day drain the meat and sprinkle with worcestershire sauce.
  • Cover with the foil.
  • Bake 6 hours in a 250 degree oven.
  • Open foil and pour on the whole bottle of barbecue sauce and bake 1 hour longer.
  • Enjoy!
