2 pound pork loin
2 tablespoon vegetable oil
1 tablespoon garlic and ginger paste
1 tablespoon olive oil
1 tablespoon sesame oil
1/2 cup soy sauce
4 tablespoon sugar
1 1/2 cup water
1 tablespoon chili garlic sauce
2 green onions (chopped (optional))

Steps:

  • Cut the pork in about 1 inch pieces and saute in a pan with the vegetable oil for about 3 minutes over medium-high heat, until the pork is no longer pink and starts to brown.
  • In a medium bowl mix the rest of the ingredients. Pour over the pork and bring to a boil. You may think there's too much water, but it will reduce. Once it's boiling turn the heat down to low and let simmer for about 30 minutes uncovered, stirring occasionally, or until there's only about 3 tbsp of sauce left.
  • Garnish with green onions. Serve over noodles or steamed rice.

3 tablespoons coriander seeds, toasted and cooled
5 cups plus 2 tablespoons water
3/4 cup chopped shallots (3 large)
8 garlic cloves, chopped
1/4 cup vegetable oil
1 (3 1/2- to 4-inch) cinnamon stick
3 tablespoons yellow soybean sauce, mashed with back of a spoon to a coarse paste
2 tablespoons sugar
1/2 teaspoon ground cloves
2 1/2 lb boneless pork shoulder (sometimes called pork butt; in 1 or 2 solid pieces), cut into 1 1/2-inch cubes
1 tablespoon dark soy sauce
1 (1 1/4-lb) can sliced bamboo shoots, drained and rinsed
Garnish: 3 (5 1/2-inch) fresh Holland red chiles, halved lengthwise, seeded, and thinly sliced; 1 cup fresh cilantro sprigs

Steps:

  • Finely grind coriander seeds in grinder. Stir together ground coriander and 2 tablespoons water in a small bowl.
  • Coarsely purée shallots and garlic in mini processor, scraping down side occasionally. Heat oil in a 6- to 7-quart wide heavy pot over moderately high heat until hot but not smoking, then cook shallot purée with cinnamon stick, stirring occasionally and scraping up any brown bits, until pale golden, 4 to 5 minutes. Add coriander mixture, mashed soybean sauce, sugar, and cloves and cook, stirring, 2 minutes. Increase heat to high, then add pork and cook, stirring occasionally, until pork is no longer pink on the outside, 2 to 3 minutes. Add soy sauce and remaining 5 cups water and bring to a boil, stirring occasionally. Reduce heat and simmer, partially covered, until meat is tender, 1 1/2 to 1 3/4 hours.
  • Meanwhile, blanch bamboo shoots in a large saucepan of boiling water 1 minute, then drain well in a colander. Stir bamboo shoots into braised pork and simmer, uncovered, until tender, about 15 minutes. (Liquid should be reduced to about 2 cups. If necessary, transfer pork and bamboo shoots with a slotted spoon to a bowl and boil liquid to reduce, then stir in pork and bamboo shoots.) Discard cinnamon stick and season with salt.

1 bulb garlic ((separated but not peeled))
1 tsp peppercorns ((cracked or smashed))
2 cloves garlic ((minced))
1½ lbs boneless pork ribs (or pork shoulder, cut into bite size pieces (675g))
3 tbsp sweet soy sauce
2 tsp sugar
¾ cup water ((180ml))
½ tsp salt ((or to taste))
4 hard boiled eggs ((peeled))

Steps:

  • Heat vegetable oil in a medium sized pot. Saute garlic cloves, cracked peppercorns, and minced garlic for 1 minute.
  • Add pork and fry to seal in the juices. This should take about 3 minutes.
  • Add sweet soy sauce, sugar, and water.
  • Bring liquid to a boil. Reduce heat to low and simmer for 20 minutes.
  • Add salt and hard boiled eggs. Cover and simmer for another 15 minutes.
  • Turn eggs occasional to coat evenly with soy sauce. Turn off stove.
  • Serve warm with steamed rice.

Pork belly in soy sauce is a very tender and succulent Chinese braised meat dish, with an intensely flavoured and addictive umami soy sauce!

900 g pork belly (skin left on)
4 tbsp light soya sauce
4 tbsp dark soya sauce
2 tbsp sugar
1/2 tsp ground white pepper
3 potatoes (peeled, quartered)
12 dried Chinese black or shiitake mushrooms (soaked in warm water till softened, stems removed, soaking water reserved)
15 shallots (peeled, chopped)
6 garlic cloves (peeled, chopped)
4 tbsp vegetable oil
1 cinnamon bark (5-cm (2-inch) length)
2 star anise
1 1/2 tbsp salted soy beans or soy bean paste (tau cheo)
3 - 4 cups water (including water reserved from soaking mushrooms)

Steps:

  • Cut pork belly into 2 cm x 5 cm (1 in x 2 in) thick slices. Sprinkle light soy sauce, dark soy sauce, sugar and pepper. Mix well to coat the pork slices evenly and set aside to marinate for 30 minutes.
  • Blend the shallots and garlic in a food processor to a fine paste. Add a little oil to grease the blades, if necessary.
  • In a wok or skillet, heat up cooking oil over low-medium heat, and stir-fry the garlic-shallot paste for 2 minutes. Add cinnamon bark and star anise and stir-fry for a few seconds. Add the salted soy beans or soy bean paste, and stir-fry for 30 seconds. Add the mushrooms (without the soaking water) and stir-fry for 1 minute.
  • Drain the pork slices in a sieve, reserving the marinade sauces. Increase the heat to high, add the pork slices and stir-fry until it starts to change colour, about 3 to 4 minutes. Return the marinade sauces to the wok or skillet, and add enough water (including the mushroom soaking water) to just cover the pork. Bring to the boil, then lower the heat and cover. Let simmer until the pork is tender, about 45 mins to 1 hour.
  • When the pork is tender, add the potatoes and more water if needed. Cover and simmer, stirring occasionally to evenly cook the potatoes. Continue to simmer until the pork is very soft, another 15 to 20 minutes.
  • Towards the end of cooking, add more water if you like a gravy with a thinner consistency. For a more intense and bold flavour, allow the sauce to reduce until slightly thickened, but not thick or dry.

500g (1 pound) pork belly
1 stalk scallion
1cm (1/2 inch) length ginger
1.5 tbsp sugar
1 tbsp cooking oil
2 tbsps Shaoxing wine
1.5 tbsp light soy sauce
1 tbsp dark soy sauce
1 stalk scallion
1cm (1/2 inch) length ginger
1 star anise
water to braise and blanch the pork

Steps:

  • Bring a pot of water to boil. Add the ginger, scallion, and blanch the pork belly pieces over medium heat for about 5 minutes.
  • After five minutes, clean the pork under running water and keep them dry with cloth or kitchen towel. Reserve some blanching water and pass it through a wire mesh strainer.
  • Heat the sugar and oil in a nonstick pan. When the sugar turns to amber color, add the dried pork pieces into it.
  • Pan-fry the pork for two minutes until all the sides are sear and colored.
  • Add the pork, soy sauce, ginger, scallion, wine, star anise, and blanching liquid enough to submerge all the pork pieces to a pot.
  • Braise the pork over low heat with the lid on for 1 1/2 hours or until the meat is soft and tender. Turn the heat to medium and boil it uncovered until the braising liquid has reduced to a thick sauce.
  • Dish out and garnish with thinly sliced scallion. Serve.

1 whole head of garlic

Steps:

  • Put the pork ribs in a shallow dish and sprinkle over the dark soy sauce. Cover and let marinate in the refrigerator for at least 20 minutes.
  • Break the garlic head into cloves, leaving the individual skins intact.
  • Heat the oil in a preheated wok or deep pan over high heat. Add the garlic cloves and stir-fry for 1 minutes. Toss in the cinnamon and star anise and stir-fry for 1 minutes. Add the pork and stir-fry until beginning to brown, then stir in the light soy sauce, sugar, and water and cook, stirring, until the sugar has dissolved.
