1 red onion, halved and thinly sliced
1 Roma tomato, seeded and finely chopped
1 ripe kiwi, diced
1 lime, quartered, divided
2 tablespoons chopped cilantro, divided
salt and ground black pepper to taste
4 tablespoons sour cream
olive oil
1 poblano pepper - cored, seeded, and finely chopped
10 ounces ground pork
1 tablespoon Mexican seasoning
2 tablespoons chicken stock
1 tablespoon tomato paste
6 flour tortillas

Steps:

  • Mince a few slices of onion to get 1 tablespoon. Add minced onion, tomato, kiwi, juice from 2 lime wedges, 3/4 of the cilantro, salt, and pepper to a small bowl. Mix into a salsa.
  • Juice 1/4 of the lime into another small bowl; mix in sour cream to make the crema.
  • Heat olive oil in a large pan over medium-high heat. Add sliced onion and poblano pepper. Cook, tossing occasionally, until softened and lightly charred, 3 to 4 minutes. Add pork and Mexican seasoning. Cook until pork is browned throughout, 4 to 5 minutes. Reduce heat to medium-low. Add chicken stock, tomato paste, salt, and pepper. Cook and stir until everything is coated, 1 to 2 minutes.
  • Wrap tortillas in a damp cloth and microwave for 30 seconds. Divide tortillas over plates; spread cream on top. Top tortillas with pork mixture and salsa. Garnish with remaining cilantro.

1 lb boneless pork shoulder, cut into 1 inch cubes.
1 tablespoon cooking oil
1 lb whole tiny new potatoes, quartered
2 medium onions, chopped
2 fresh poblano peppers, seeded and cut into 1 inch pieces
1 fresh jalapeno pepper, seeded and chopped
4 cloves garlic, minced
2 inches cinnamon sticks
3 cups chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon chili powder
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/4 cup snipped fresh cilantro or 1/4 cup parsley
hot cooked rice

Steps:

  • In a big skillet, brown the pork in hot oil (do this in batches if necessary); drain well.
  • Add the potatoes, onions, poblano peppers, jalapeno pepper, garlic, and stick cinnamon to a 4 quart slow-cooker.
  • Add the meat.
  • In a mixing bowl, combine the chicken broth, undrained tomatoes, chili powder, oregano, and black pepper; pour over ingredients in the slow-cooker.
  • Cover and cook on LOW for 8-10 hours.
  • Discard cinnamon stick.
  • Add in cilantro; stir.
  • Adjust seasoning to taste, if necessary.

One 2 1/2-pound boneless pork loin roast
1/4 cup olive oil
Kosher salt and cracked black pepper
1 poblano chile
3 tablespoons vegetable oil
1 yellow onion, chopped
4 cloves garlic, minced
3 tablespoons ground coriander
1 1/2 teaspoons ground cumin
2 cups salsa verde
4 cups low-sodium chicken broth
Kosher salt and cracked black pepper
Cooked white rice, for serving
1/2 cup crema
1/2 cup fresh cilantro, chopped
1 avocado, cut into wedges
1 lime, cut into wedges
1 red onion, minced
Crushed tortilla chips

Steps:

  • For the pork: Preheat the oven to 400 degrees F. Drizzle the oil over the pork and sprinkle liberally with salt and pepper. Transfer the pork to a rack over a heavy-bottomed roasting pan. Roast the pork until a meat thermometer inserted into the thickest part of the loin reads 140 degrees F, about 1 hour. Let the pork rest for 10 minutes. Set aside 1 1/4 pounds for the soup, cut into 1/2-inch chunks, and then reserve the rest for another recipe. For the soup: Roast the poblano over a flame until charred all over. Place the poblano in a bowl and cover with plastic wrap until it softens. Once cool enough to handle, remove the charred skin from the poblano as well as the stem and seeds. Cut into a 1/4-inch dice. Add the oil to a large Dutch oven or saucepot over medium heat. Add the onions and sweat until translucent and fragrant, about 8 minutes. Add the garlic and poblano and cook for 3 to 4 minutes. Add the coriander and cumin and cook until slightly darkened and fragrant, 2 to 3 minutes. Add the salsa verde and cook until it just comes to a boil, about 2 minutes. Add the stock and bring back to a boil. Meanwhile prep all of your garnishes. Once the soup comes to a boil, continue to cook for 5 minutes to allow the flavors to develop. Sprinkle with salt and black pepper. When you are ready to serve, add the roasted pork just to heat through. Serve over rice and with any or all garnishes.

4 large poblano peppers
2 jalapeno peppers
2 tablespoons extra-virgin olive oil
2 onions, chopped
3 to 4 cloves garlic, chopped or sliced
12 tomatillos, peeled and chopped
Salt and freshly ground black pepper
A handful fresh cilantro leaves
1 1/2 teaspoons ground cumin, half a palmful
1 tablespoon honey
2 cups chicken stock
1 1/2 pounds cooked pork, finely chopped
2 limes
2 cups chicken stock
1 cup milk
1 cup quick cooking polenta
1 cup shredded Manchego cheese
Serving suggestion: Serve with the cheesy polenta or warm tortillas, chips for dipping, wrapping or dunking.

Steps:

  • Char the poblano peppers all over by placing the peppers on stovetop burners or under a hot broiler until black, turning frequently. Place the charred peppers in a bowl and cover with plastic wrap to steam them as they cool. Rub the skins off the poblanos and jalapenos with paper towel or peel by hand, then seed the peppers and chop.
  • Meanwhile, heat the extra-virgin olive oil in a medium-size Dutch oven over medium heat, add the onions and sweat 10 minutes then add the garlic and tomatillos and cook 10 minutes more; season with salt and pepper. Place the cooked onion-tomatillo mixture in a food processor with cilantro, cumin, honey, and puree. Add the puree back to the Dutch oven, then stir in the chopped peppers and chicken stock. Bring the mixture to a boil, reduce the heat to low for the flavors to combine. Slice and finely chop the cooked pork and stir into the chili. When the soup returns to a bubble, turn off the stove, cool completely and store for make-ahead meal.
  • To reheat the chili: Place in covered pot over medium heat and cook until the pork comes to a bubble, stir in the juice of 1 lime and turn off the heat. Slice the remaining lime into wedges and serve alongside the chili.
  • For the cheesy polenta: In medium saucepan, bring the chicken stock and milk to a boil. Whisk in the polenta, stirring until the polenta just pulls from the side of the pot. Stir in the Manchego cheese and serve warm.

1 boneless beef chuck roast (2 to 3 pounds), cut into 1-inch cubes

1 carton (32 ounces) beef broth

1/3 cup minced fresh cilantro
1 tablespoon chili powder
1 teaspoon salt

2 large potatoes, peeled and cut into 1-inch cubes

Steps:

  • Broil poblano peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened.
