1/4 cup chopped onion
3 tablespoons lemon juice
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
2 pounds boneless pork, cut into 1-inch cubes
CUCUMBER YOGURT SAUCE:
1 cup plain yogurt
1/2 cup chopped cucumber
1 tablespoon chopped onion
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/8 teaspoon garlic salt
Pita bread

Steps:

  • In a resealable plastic bag or shallow glass container, combine the first 8 ingredients; add pork and toss to coat. Seal or cover and refrigerate overnight. , Meanwhile, combine sauce ingredients; cover and refrigerate for several hours. Drain pork and discard marinade; thread pork on skewers, leaving a small space between pieces. , Grill, uncovered, over medium heat for 8-10 minutes or until the meat is no longer pink, turning frequently. Serve in pita bread with sauce.

¼ cup reduced-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
1 teaspoon Dijon-style mustard or ½ teaspoon Chinese Five Spice
1 small red or orange sweet pepper, cut into 1-inch squares* (See Cook's Note)
6 ounces shiitake mushroom caps or white mushroom caps, halved if needed* (See Cook's Note)
1 small zucchini, halved lengthwise and cut into ¾-inch pieces* (See Cook's Note)
¼ cup pepper jelly or orange marmalade, melted
8 skewers

Steps:

  • In a self-sealing plastic bag combine cubed pork, soy sauce, vinegar, ginger and Dijon-style mustard (or Chinese Five Spice); seal bag and refrigerate for 1 to 4 hours.
  • Prepare medium-hot fire with charcoal or preheat gas to medium high.
  • Remove pork from marinade, and discard marinade. Thread pork, sweet peppers, mushrooms, and zucchini alternately onto 8 skewers. Grill kabobs directly over fire, turning to brown evenly, for 5 minutes. Brush kabobs with the melted jelly. Continue to grill for 3 to 10 minutes more or until tender. Let rest 3 minutes before serving.

Steps:

  • Cut meat into medium-sized pieces. Cut onion into similar-sized slices. Grate garlic.

This Oven Baked Pork Souvlaki recipe is deliciously marinated resulting in the most tender, juicy and flavorful pork kabobs.

2 lbs pork loin, cut into large cubes (trim the fat)
2 bell peppers, diced into large squares
1 red onion, diced into large squares
¼ cup olive oil
2 Tbs lemon juice
3 cloves garlic, minced
2 tsp dried oregano
1 tsp garlic salt
½ tsp black pepper
½ tsp garlic powder
About 15 skewers

Steps:

  • Put all the cut-up pork, bell peppers and onions in a large Ziploc bag or deep baking dish
  • Prepare the marinade by mixing together the olive oil, lemon juice, garlic, oregano, salt, pepper, and garlic powder in a small bowl
  • Once mixed, pour the marinade all over the pork, bell peppers and onions. Mix thoroughly until everything is coated well
  • Cover and place in the fridge to continue marinating for AT LEAST 30 minutes but preferably 2 hours or overnight
  • When you're ready to cook, preheat oven to 375 degrees and line a large baking sheet with parchment paper. If you're using wooden skewers, you can soak them in cold water for 15 minutes before adding the pork and veggies to them (this will prevent the skewers from burning in the oven)
  • Remove the marinated pork and veggies from the fridge and start threading them through the soaked skewers. You can use any pattern you like when adding them to the skewers
  • Place the kabobs side by side on the prepared baking sheet making sure there is some space in between each kabob (this will ensure better heat distribution and even cooking). You can use a second baking sheet if you don't have enough space
  • Place the kabobs in the oven and bake for about 12 minutes. Then flip all the kabobs and bake for an additional 12 minutes
  • Serve immediately with pita bread, hummus, lemon slices or your choice of salad!

1 red onion, 16 pieces
8 bamboo skewers, soaked in water for 30 minutes
1/3 cup vegetable oil
1/4 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons soy sauce
1 tablespoon garlic, chopped
1 tablespoon gingerroot, chopped
1 1/2 teaspoons sugar

Steps:

  • Thread 2 pieces of pork and 2 pieces of onion alternately on each skewer.
  • Season with salt and pepper.
  • Arrange kebabs in 13x9x2-inch glass baking dish.
  • Whisk all remaining ingredients in medium bowl.
  • Pour marinade over kebabs.
  • Let stand up to 2 hours at room temperature or cover and refrigerate up to 1 day, turning occasionally.
  • Preheat broiler.
  • Drain marinade into small saucepan.

1 small red onion, cut into 2-inch wedges, layers separated

  • Cut up Pork into 1 inch cubes, put into a bowl and pour your Ranch Dressing in. Mix up and marinade for 1-3 hours Also while your meat marinades, be sure and soak your skewers in water if they are wood..this is so that they don't catch on fire while grilling.
  • Now gather up the rest of your ingredients...Onion and Bacon...pat the excess Ranch off of the Pork with paper towels.
  • Cut onion so that you have some slices to put at each end of the Skewers. Now begin to thread onto Skewer!
  • First the onion, then the Bacon...just the end of the Bacon, then a piece of meat. Then put the Bacon over the meat, then another piece of meat, then Bacon and so on. The trick is to keep the Bacon hanging down AND to keep all of the ingredients at the end of the Skewer until you have everything on...
  • Put another piece of onion on the end. Then you can spread everything out just enough so that everything cooks evenly..
  • Now sprinkle with your Seasoning of your choice and put on lightly greased Grill on Medium Heat...
  • Cook each side for about 3-4 min. and since there are 4 sides..that equals about 16 min. Inside meat temp should be 160 degrees if you want to check. These are deelish!!
  • This can be made with any of your favorite meats!

  • Do the prep work. If using wooden skewers, soak the skewers in water for about an hour. Preheat your grill to medium heat, about 375° - 400° F. Wash and slice the zucchini into rounds. Dice the red onion into 1 inch pieces. Remove the stem and seeds from the bell peppers and cut them into bite sized pieces. Slice the pork into bite-sized pieces.
  • Make the salad dressing / marinade. Mix the balsamic vinegar, oil, and Italian seasoning together. Season to taste with salt and pepper.
  • Season & assemble the skewers. Add the bell peppers, zucchini, onion and pork pieces to a large bowl. Drizzle with half of the marinade/salad dressing, and toss to mix and coat each piece. Thread the meat and vegetables onto each skewer.
  • Grill the kebabs. Lay the skewers on the grill, and cook for about 10 minutes. Turn the kebabs every 2-3 minutes, until they’re lightly charred on all sides and cooked through. Use a meat thermometer to check the internal temperature of the pork, to ensure it’s cooked through to 145° F.Once the pork reaches temperature, set the skewers aside and allow them to rest for at least three minutes. Transfer the kebabs to a platter to rest for at least 3 minutes, then sprinkle with sliced fresh basil and a little salt and pepper.

  • Put on a large (5-6 quarts) stock pot of water over high heat for the spaghetti noodles. Turn the grill on medium and allow to heat. Cut all of your veggies and meat. (This is the step that takes the longest - if you do this ahead as prep - in the morning or the night before - then your dinner will be ready in minutes!). Cut the mushrooms first and while you are cutting everything else, sprinkle the soy sauce onto the mushroom gills and sprinkle with a small amount of kosher salt. Place the ½ stick of butter, the minced garlic and capers in a small sauce pot and place on low heat on the stove (if you are using an older pot that isn’t that important to you, you can simply place the butter on the grill with your skewers - but this could lead to your pot getting smoked - which isn’t so pretty and can be difficult to remove).
  • Once all of the veggies and meat are cut into cubes, slide them onto a skewer alternating as you go, meat, mushroom, bell peppers, onion, repeat.
  • Once all of the skewers are made, sprinkle with olive oil (to help keep from sticking to the grill). Sprinkle with salt and pepper. By the time you have done all of this, your water should be ready for the spaghetti noodles. Put the noodles in to cook and put the meat/veggies on the grill. Allow the skewers to cook for about 6 minutes on one side and then flip. (Don’t forget to stir the spaghetti noodles). Cook for another 5 minutes and remove from the grill and place on a platter. Place tin foil tented over the top and allow to rest for 5 minutes. Your spaghetti should be ready at about the same time as the skewers, pour the noodles into a colander and drain. Remove the butter from the stove top.
  • Once everything is removed from the heat, you are ready to serve! Serve the skewers with the noodles and offer the butter as a sauce! Garnish with the fresh cherry tomatoes, Parmesan and basil.
