Steps:
- Saute mushrooms in 1/4 cup butter for 2-3 minutes.
- Add salt, parsley and flour.
- Cover and cook over low heat for 10 minutes.
- Remove mixture from heat and add lemon juice and sour cream.
- Pour into a caserole dish sprayed with cooking spray.
- Melt 4 tbsp butter and stir into bread crumbs (enough to cover casserole dish).
- Spoon buttered bread crumbs over mushroom mixture.
- At this point, you can cover and refrigerate overnight to be made the next day.
- Before baking, sprinkle top with parmesan cheese.
- Bake for 30 minutes at 350 degrees.
- Sprinkle with paprika (optional) before serving.
EASY PORK CHOP CASSEROLE
This is delicious and easy to prepare. Serve with rice. You can also try baking it with other vegetables, or potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the mushroom soup, onion soup mix, water and mushrooms.
- In a large skillet over medium-high heat, brown the pork chops on each side. Transfer chops to a 9x9 inch baking dish, and cover with the mushroom soup mixture.
- Bake in the preheated oven for 1 1/2 hours, or until internal pork temperature reaches 145 degrees F (63 degrees C).

- Preheat oven to 400 degrees F (200 degrees C).
- Heat oil in a large skillet over medium high-heat. Place the pork chops in the oil, and sear.
- In a medium bowl, combine the soup and the milk. Arrange the potatoes and onions in a 9x13 inch baking dish. Place the browned chops over the potatoes and onions, then pour the soup mixture over all.
- Bake 30 minutes in the preheated oven. Top with the cheese, and bake for 30 more minutes.

- In a skillet, brown pork in butter. Transfer meat to an ungreased shallow 1-1/2-qt. baking dish. Sprinkle with salt and pepper; set aside. In the pan drippings, saute the onion, mushrooms and celery until tender. Combine flour and broth until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes. Pour over meat. This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
- Bake in the preheated oven until bubbly, 30 to 35 minutes.

CREAMY PORK CHOPS, MUSHROOM AND POTATO CASSEROLE
Total comfort food! You will need 3/4-inch thick pork chops for this, make certain to slice the potatoes the same thickness as the chops to assure that both are cooked at the same time. You can use fresh mushrooms instead of canned but they will need to be sauteed firstly to release their liquid. Serve this with hot cooked buttered egg noodles and green beans!

- Het oven to 325 degrees.
- Butter a 13 x 9-inch baking dish.
- Heat oil with butter in a skillet.
- Season the chops with seasoned salt and black pepper, add to the skillet and lightly brown on both sides; remove to a plate and set aside.
- To the same skillet (add in more butter and/or oil if needed) add in onion, garlic, celery and mushroom pieces; saute for about 3 minutes; remove from heat.
- Arrange the potato slices in the buttered baking dish, then top with the onion/celery mixture.
- In a bowl combine the mushroom soup with sour cream, milk and Parmesan cheese, 1 cup grated old cheddar cheese, 1 teaspoon seasoned salt and black pepper to taste.
- Spoon the soup mixture over the potatoes and onions.
- Arrange the browned chops on top.
- Cover with foil and bake about 1-3/4 to 2 hours or until the chops and potatoes are tender.
- Remove from oven and sprinkle with about 1 cup (or more or less) grated old cheddar cheese, then return to oven uncovered for another 8-10 minutes.
- Let stand about 10 minutes before serving.
SLOW COOKER PORK CASSEROLE

- Heat your slow cooker. Drizzle the oil in a wide frying pan over a high heat. Season the pork, then add to the hot pan. Avoid overcrowding the meat - you may want to do this in batches. Cook until deep brown all over, then transfer to the slow cooker. Add the onion and leeks to the frying pan and cook for a few mins, until they soften. Add a splash of water and scrape any tasty bits from the bottom, then tip everything into the slow cooker. Add the carrot, herbs, stock cube, mustard and vinegar, season, then add enough water to just cover the ingredients. Stir, then set your slow cooker on low for 6-8 hrs, or high for 5-6 hrs.
- In a saucepan, mix the cornflour and honey with 1-2 tsp of liquid from the slow cooker, until you have a smooth paste. Add 100ml more liquid, bring to a simmer until thickened, then stir back into the casserole. Serve with mash or dumplings, scattered with thyme leaves.

This is a very old recipe that I found years ago in one of my mother's cookbooks that she got when she first got married. It is very delicious and a favorite in my household.

Steps:
- Panfry bacon in skillet until browned.
- Remove with a slotted spoon.
- Saute onion and mushrooms in bacon fat until tender.
- Remove with slotted spoon and combine with bacon.
- Season tenderloin pieces.
- Dip in beaten egg, then roll in cracker crumbs.
- Brown in remaining bacon fat.
- Fill a 1-QT casserole dish with alternate layers of the browned tenderloin slices and the browned bacon, onions, and mushrooms.
- Add the mushroom liquid, cover and bake at 350*F for 30 minutes.
- VARIATIONS: I most often substitute orange juice or apple juice for the mushroom liquid.
- Makes it even more delicious!

- Saute chops at low temperature in butter.
- Season with salt after chops are brown.
- Transfer chops to baking dish or casserole.
- Combine celery, onions, parsley, soup mushrooms and water. Pour over chops.
- Cook covered in 180 C or 350 F oven for 30 minutes. Turn chops over and cook for another 30 minutes or until done and the meat is no longer pink.

- Add the pork and fry till browned slightly.
- Add the mushrooms, wine, cream, stock salt and pepper. Mixing it all in gently.
- Cook slowly on a low heat, stirring occasionally. This takes about 30 minutes or so to be ready.
- Add flour to thicken if needed. Serve with mashed potatoes and green vegetables and carrots.
