SUMMER GNOCCHI WITH SWEET CORN AND MIXED MUSHROOMS



Summer Gnocchi with Sweet Corn and Mixed Mushrooms image

You'll want to make this quick and easy weeknight dinner all season long, thanks to the combination of fresh leek, corn and wild mushrooms along with store-bought potato gnocchi. We added a splash of vinegar and honey to play up the sweetness of the corn, then finished the dish with fresh basil for the ultimate summer pasta dish.

3 tablespoons olive oil
12 ounces sliced mixed mushrooms, such as shiitake, cremini and oyster mushrooms
Kosher salt and freshly ground black pepper
1 small leek, white and light-green parts only, halved lengthwise and thinly sliced (see Cook's Note)
4 ears of corn, shucked and kernels sliced off
2 cloves garlic, thinly sliced
2 tablespoons white balsamic vinegar
2 tablespoons honey
4 tablespoons cold unsalted butter, cut into pats
One 17.5-ounce package refrigerated potato gnocchi
Torn fresh basil leaves, for serving

Steps:

  • Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the mushrooms in an even layer and cook, undisturbed, until golden brown, about 3 minutes. Toss mushrooms, season with a pinch of salt and a few grinds of pepper, then continue to cook until tender and golden brown all over, about 3 minutes more. Transfer to a plate and set aside.
  • Return the skillet to medium-high heat and add the remaining 1 tablespoon olive oil. Add the leek, a pinch of salt and a few grinds of pepper. Cook until leek is just tender, about 2 minutes. Stir in the corn and garlic, then continue to cook until corn is bright yellow and tender, 2 to 3 minutes more. Stir in the vinegar and honey, then stir in the reserved mushrooms and toss to combine.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the gnocchi and cook according to package directions. Reserve 1/4 cup of the cooking water, then drain the gnocchi and add to the skillet with the corn and mushroom mixture. Add the reserved cooking water and cook over low heat, stirring to coat, about 1 minute. Add the butter, 1 pat at a time, until well coated and saucy. Remove from heat. Season with salt and pepper and top with fresh basil.

1 tablespoon extra-virgin olive oil
3 slices thick-cut bacon, cut into 1/2-inch strips
8 ounces cremini mushrooms, sliced
4 ears corn, kernels cut off (about 2 cups)
3 scallions, thinly sliced (dark green parts separated)
Freshly ground pepper
1 17.5-ounce package potato gnocchi
3 tablespoons unsalted butter
1/4 cup grated Parmesan cheese, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, heat the olive oil in a dutch oven or other large wide pot over medium-high heat. Add the bacon and cook, stirring occasionally, until lightly browned, about 3 minutes. Add the mushrooms, season with salt and cook, stirring, until tender and lightly browned at the edges, 3 to 5 minutes. Add the corn, season with salt and cook, stirring occasionally, until crisp-tender, about 3 minutes. Stir in the white and light green scallion parts, season with salt and pepper and keep warm over low heat.
  • Add the gnocchi to the boiling water and cook as the label directs. Reserve 1 1/4 cups cooking water, then drain. Add 1 cup cooking water and the butter to the pot with the cooked vegetables. Increase the heat to medium and cook, stirring and scraping up the bottom of the pot, until the butter melts and a light brown sauce forms, about 30 seconds.
  • Add the gnocchi to the pot with the vegetables and stir to coat, adding more cooking water, 1 tablespoon at a time, if it seems dry. Stir in the Parmesan and season with salt and pepper.
  • Divide the gnocchi among shallow bowls. Top with more Parmesan and the dark green scallion parts.

1 cup/250 ml dry porcini
3 large baking potatoes, boiled in salted water,
2 cups/500 ml flour, plus more for dusting and as needed
1/2 cup/125 ml finely grated Parmigiano cheese
Salt and freshly ground black pepper
2 tablespoons/30 ml unsalted butter
Fresh sage leaves
1 cup/250 ml finely grated Parmigiano cheese

Steps:

  • For the gnocchi: Put the porcini in a large bowl and add enough hot water to cover the porcini. Allow the porcini to soak for a few minutes or until soft. Then finely chop the porcini to a paste-like consistency.
  • On a work table, peel and mash the potatoes with the back of a fork or use a potato ricer. Add the porcini to the mashed potatoes and then add the flour, Parmigiano, salt, and pepper. Combine together and knead until the mixture becomes regular dough consistency, smooth and slightly sticky. Add more flour if needed, which will absorb any excess moisture.
  • On a lightly-floured work surface, take pieces of the dough and roll them out into thin logs, approximately 1/2-inches thick. Cut them 1-inch long.
  • Make the ridges on each gnocchi by using the back of a fork in a rolling action.
  • Cook's Note: The imprints will allow the sauce to get trapped on the surface of the gnocchi.
  • Put the gnocchi on a tray in a single layer and place a cloth over the top to prevent them from drying out. They may also be set in refrigerator or freezer until needed.
  • Cook the gnocchi in a pot of boiling salted water for about 1 to 2 minutes or until they float to the surface.
  • For the sauce: Melt the butter in a saucepan and add the fresh sage leaves. Remove the gnocchi from the boiling water with a slotted spoon or drain and add them directly to the saucepan with about 1/2 cup pasta water. Cook the gnocchi with the sauce for about 30 seconds and then remove them from the heat. Add the Parmigiano and mix well. Plate and serve.

1 ounce dried porcini mushrooms*
1 1/2 cups boiling water
3 tablespoons olive oil, divided
8 ounces sliced crimini (baby bella) mushrooms
2 garlic cloves, minced
Coarse kosher salt
2 1/2 cups dry white wine, divided
1 pound boneless country-style pork ribs, cut into 1/2-inch cubes
2 ounces 1/4-inch-thick slices coppa or prosciutto, chopped
6 ounces fresh mild Italian sausages, casings removed (about 2 links)
1 medium onion, finely chopped
1 carrot, peeled, finely chopped
1 celery stalk, finely chopped
2 cups crushed tomatoes or crushed tomatoes with added puree (from one 28-ounce can; preferably San Marzano or Muir Glen)
1 cup (or more) low-salt chicken broth
2 bay leaves
1 tablespoon chopped fresh basil
Potato Gnocchi
1 cup grated Parmesan cheese

Steps:

  • Place dried porcini mushrooms in medium bowl; pour 1 1/2 cups boiling water over. Let stand until mushrooms are soft, about 45 minutes. Using slotted spoon, transfer mushrooms to cutting board and chop coarsely. Reserve soaking liquid.
  • Meanwhile, heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add crimini mushrooms and garlic; sprinkle with coarse salt and pepper and sauté until beginning to soften, 2 to 3 minutes. Add 1/2 cup wine and simmer until crimini mushrooms are soft, about 4 minutes. Set aside (there may still be liquid in skillet).
  • Heat remaining 2 tablespoons oil in heavy large pot over medium-high heat. Sprinkle pork with coarse salt and pepper. Add pork to pot and sauté until browned in spots, about 6 minutes. Using slotted spoon, transfer pork to medium bowl. Pour off all but 1 tablespoon fat from pot. Reduce heat to medium. Add coppa and stir 1 minute. Add sausages and cook until brown, breaking up into small pieces with back of spoon, about 3 minutes. Add onion, carrot, and celery. Cover pot and cook vegetables until soft, stirring occasionally, about 8 minutes. Add remaining 2 cups wine; bring to boil, scraping up any browned bits. Simmer until almost all liquid is absorbed. Add tomatoes, 1 cup broth, bay leaves, reserved pork, and porcini mushrooms. Pour in reserved porcini soaking liquid, leaving any sediment behind in bowl. Bring to boil; reduce heat to medium-low and simmer uncovered until pork is tender, adding more broth by 1/4 cupfuls if dry, about 1 hour.
  • Stir crimini mushroom mixture in skillet into ragù. Season with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cool slightly. Chill uncovered until cool. Cover; keep chilled. Rewarm before continuing.
  • Spoon off fat from surface of ragù stir in basil. Add Potato Gnocchi; toss gently to coat. Simmer over medium heat until gnocchi are heated through, 3 to 5 minutes.
  • Divide gnocchi and ragù among bowls. Sprinkle with some of cheese and serve, passing remaining cheese alongside.
  • Available in the produce section of many supermarkets and at specialty foods stores and Italian markets.
  • What to drink:
  • Pair this rich dish with a medium-bodied red with good acidity, like the 2007 Danzante Chianti ($11, Italy).
