LEMON POPPY SEED CAKE

Categories     dessert

Time 3h45m

Yield 10 to 12 servings

Number Of Ingredients 16

1 cup buttermilk, shaken
1/3 cup poppy seeds (1.75 ounces)
Nonstick baking spray with flour, such as Baker's Joy
1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup grated lemon zest, loosely packed (4 to 5 large lemons)
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup freshly squeezed lemon juice, divided
1 cup sifted confectioners' sugar
1 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Pour the buttermilk into a 2-cup liquid measuring cup, stir in the poppy seeds, and set aside at room temperature for at least 2 hours.
  • Preheat the oven to 350 degrees F. Thoroughly spray the inside of a Bundt pan with the baking spray and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and 2 cups of the granulated sugar on medium speed for about 5 minutes, until light yellow and fluffy. With the mixer on low, add the eggs, one at a time, the vanilla, and lemon zest, scraping down the bowl with a rubber spatula.
  • Sift the flour, cornstarch, salt, baking powder, and baking soda into a medium bowl. Add 1/4 cup of the lemon juice to the buttermilk mixture. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture in thirds, beginning and ending with the flour. Scrape the bowl with a rubber spatula to be sure the batter is well mixed. Spoon the batter into the prepared pan, smooth the top, and bake for 40 to 50 minutes, until a cake tester comes out clean.
  • Meanwhile, place the remaining 1/2 cup of granulated sugar and the remaining 1/2 cup of lemon juice in a small saucepan and cook over high heat until the sugar dissolves. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes, then turn it out onto a baking rack set over a large plate. Spoon the warm lemon syrup slowly over the cake, allowing it to be absorbed into the cake. Set aside for at least 30 minutes to cool.
  • For the glaze, whisk the confectioners' sugar and lemon juice together in a small bowl, adding a little more sugar or lemon juice to make a smooth, thick, but pourable glaze. Drizzle over the cake, allowing it to drip down the sides. Transfer to a flat cake plate and serve at room temperature.

POPPY SEED MUFFINS

Poppy Seed Muffins image

These are the best muffins I have ever made. They are not low-fat but I don't worry. (I can watch other stuff - these are too good) I make them in the jumbo muffin pans but they will work in the normal size - just adjust the baking time.

Provided by Liz R.

Categories     Bread     Quick Bread Recipes     Muffin Recipes     Poppy Seed Muffin Recipes

Time 45m

Yield 12

Number Of Ingredients 15

3 eggs
2 ½ cups white sugar
1 ⅛ cups vegetable oil
1 ½ cups milk
1 ½ teaspoons salt
1 ½ teaspoons baking powder
1 ½ tablespoons poppy seeds
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
3 cups all-purpose flour
¾ cup white sugar
¼ cup orange juice
½ teaspoon vanilla extract
½ teaspoon almond extract
2 teaspoons butter, melted

Steps:

  • Beat together the eggs, 2 1/2 cups white sugar and vegetable oil. Add in milk, salt, baking powder, poppy seeds, vanilla, almond flavoring, and flour. Mix well.
  • Bake in paper lined muffin cups (filled 3/4 full or 3 small greased loaf pans) at 350 degrees F (175 degrees C) for 15-20 minutes for muffins and 50-60 minutes for loaves. The tops should be browned and a toothpick inserted in the center should come out clean.
  • Remove muffins as soon as you can while still warm/hot and dunk tops into glaze. Turn right side up and cool on a cookie rack. With loaves just pour the glaze evenly over the three loaves while still in pans. Let cool to a warm temp. and remove from pans. Yes, it is a little messy but it is really good.
  • To Make Glaze: In a saucepan over low heat, combine 3/4 cup sugar, orange juice, 1/2 teaspoon vanilla, 1/2 teaspoon almond flavoring and 2 teaspoons melted butter. Warm in pan until the sugar is dissolved. Pour over loaf pans or dunk muffin tops into glaze when cooled to room temperature. (Omit the glaze altogether if you don't like the mess.)

LEMON POPPY SEED POUNDCAKE

Lemon Poppy Seed Poundcake image

This lemon poppy seed poundcake is summery and quick to make, and perfect for a picnic. One tip: cut up the poundcake before the picnic but leave it in the baking pan. It makes it easier to transport, and the pan protects it, too. Then serve it on its own, with ripe berries, and let the ants enjoy the crumbs.

POPPY SEED BUTTERMILK BUNDT® CAKE

Poppy Seed Buttermilk Bundt® Cake image

This "from-scratch" recipe is consistently the best I have ever seen and used. My grandmothers, mother, myself, and now my daughter used and use this fail-safe recipe. Husband waits around to "clean" the mixing bowl! This cake is very good, if out on counter and wrapped, for up to 3 days. Great as a dessert or for breakfast! Can sprinkle a mixture of cinnamon and sugar on top, or eat it plain. Freezes nicely if wrapped well.

Provided by canner

Categories     Desserts     Cakes     Bundt Cake Recipes

Time 1h55m

Yield 14

Number Of Ingredients 10

1 cup buttermilk
¼ cup poppy seeds, or to taste
4 large eggs, at room temperature
2 ½ cups bleached all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups white sugar
1 cup unsalted butter, at room temperature
1 teaspoon vanilla extract

Steps:

  • Combine buttermilk and poppy seeds in a small bowl. Soak for 10 to 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Thoroughly grease a fluted tube pan (such as Bundt®).
  • Separate egg yolks and whites into 2 separate bowls (use a glass, metal, or ceramic bowl for the whites). Sift flour, baking powder, baking soda, and salt together in a third bowl.
  • Combine sugar and butter in a large mixing bowl; beat with an electric mixer until creamy. Add egg yolks; mix until thoroughly combined. Beat in the buttermilk-poppy seed mixture and vanilla extract. Add 1/2 of the dry ingredients and beat thoroughly; repeat with remaining dry ingredients.
  • Beat egg whites on high speed until there is no clear liquid left, 3 to 5 minutes. Fold into the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool on a wire rack for 15 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

LEMON-POPPY SEED POUND CAKE

Lemon-Poppy Seed Pound Cake image

Instructions require food processor--you might not have the same results without. Make with poppy seeds or without. Juice and zest requires 2-3 lemons. You can also use this same recipe to make Orange Pound Cake, substituting orange zest and orange juice (and leaving out the poppy seeds). From Fine Cooking, Spring 2002.

Time 1h

Yield 1 9x5inch loaf, 8 serving(s)

Number Of Ingredients 12

1 cup unsalted butter
1 1/2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup poppy seed
1 1/4 cups sugar
2 tablespoons grated lemons, zest of
2 teaspoons fresh lemon juice
4 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup sugar
1/4 cup lemon juice

Steps:

  • Preheat oven to 350°F.
  • Grease 9x5-inch loaf pan with softened butter and dust with flour.
  • In medium bowl, whisk together flour, baking powder, and salt; set aside.
  • Take 1 tablespoon of flour mixture and toss with poppy seeds in a small bowl, set aside.
  • Melt butter (I use microwave--but be sure not to leave it in too long or it will bubble over).
  • In food processor, process sugar and zest until combined--just a few short pulses.
  • Add lemon juice, eggs and vanilla; process until combined, about 5 seconds.
  • With machine running, add melted butter through feed tube (this should take about 20 seconds).
  • Transfer mixture to large bowl.
  • Sift flour mixture over eggs in thirds, whisking gently after each addition until just combined.
  • Gently fold in poppy seeds until evenly incorporated.
  • Pour batter into prepared pan and bake 15 minutes.
  • Reduce oven temperature to 325°F and continue baking until deep golden brown and skewer inserted in center comes out clean (about 35 minutes).
  • Cool in pan for 10 minutes, then turn onto a wire rack and brush on Lemon Glaze, if desired.
  • Cool to room temperature.
  • For glaze: While loaf is cooling, bring sugar and lemon juice to a boil in a small nonreactive saucepan, stirring occasionally to dissolve sugar.
  • Reduce heat to low and simmer until thickened slightly, about 2 minutes.
  • After removing cake from pan, poke entire top and sides with a toothpick.
  • Brush top and sides of cake with glaze.
  • I like to do this while cake is on cooling rack over sink or waxed paper as it can be messy!
