MEXICAN MANGO CAKE

1 1/2 cups or 3 sticks unsalted butter, at room temperature, plus more for greasing the pan
3 cups cake flour, plus more for pan
1 1/2 teaspoons baking powder
1/2 teaspoon salt
6 large eggs
2 1/2 teaspoons vanilla extract
2 1/2 cups granulated sugar
2/3 cup buttermilk
2 cups chopped fresh or frozen and thawed mango
2 tablespoons water, plus extra, as needed
1 1/4 cup granulated sugar, plus extra, as needed
4 ounces cream cheese
2 tablespoons tequila, optional
Edible flowers as garnish, optional

Steps:

  • Cake: Position a rack in the center of the oven. Preheat the oven to 350 degrees F. Liberally butter and flour a 10-inch tube or Bundt pan.
  • Sift the flour, baking powder and salt into a large bowl. In another large bowl, using an electric mixer beat the 1 /12 cups of butter and sugar until light and fluffy. Add the eggs, beating well after each addition. In batches, add the flour mixture, alternating with the buttermilk and ending with the flour mixture.
  • Pour the batter into the prepared cake pan. Bake until the cake is golden and a cake tester inserted into the center comes out clean, about 45 to 50 minutes. Transfer the cake to a wire rack and cool completely in the pan. Invert the cake onto the wire rack, then put it on a cake plate or platter. (Cooks Note: The cake can be prepared 1 day ahead. Cover tightly with plastic wrap and store at room temperature.)
  • Topping: Combine the mango, water, sugar cream cheese and tequila, if using, in a blender or food processor. Blend until smooth and thick, adding extra water, if needed. Taste and adjust the sweetness with extra sugar, if needed.
  • Spoon the mango topping evenly over the top of the cake and decorate with edible flowers, if desired
  • Cut into slices and serve.

2 3/4 cups Gold Medal™ all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup shortening
1 2/3 cups granulated sugar
5 egg whites
2 1/2 teaspoons vanilla
3/4 cup mango nectar
1/2 cup milk
2 tablespoons grated lime peel
1 tablespoon finely chopped jalapeño chile
1 package (8 oz) plus 1 package (3 oz) cream cheese, softened
1/3 cup butter or margarine, softened
1 1/2 teaspoons vanilla
3 to 5 teaspoons milk
6 cups powdered sugar
1 cup finely chopped peeled mango
1 cup flaked coconut
Grated lime peel, if desired

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. In medium bowl, mix flour, baking powder and salt; set aside.
  • In large bowl, beat shortening with electric mixer on medium speed 30 seconds. Gradually add granulated sugar, about 1/3 cup at a time, beating well after each addition and scraping bowl occasionally. Beat 2 minutes longer. Add egg whites, one at a time, beating well after each addition. Beat in 2 1/2 teaspoons vanilla. On low speed, alternately add flour mixture, about one-third at a time, and mango nectar and 1/2 cup milk, about half at a time, beating just until blended. Stir in 2 tablespoons lime peel and the chile.
  • Divide batter evenly among muffin cups, filling each about one-third full.
  • Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove cupcakes from pans; place on cooling racks. Cool completely, about 30 minutes.
  • In large bowl, beat cream cheese, butter, 1 1/2 teaspoons vanilla and 3 teaspoons milk with electric mixer on low speed until smooth. On low speed, beat in powdered sugar, 1 cup at a time. Gradually beat in just enough remaining milk, 1 teaspoon at a time, to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar.
  • Cut each cupcake horizontally in half. On each cupcake bottom, spread about 1 tablespoon frosting; top with 1 teaspoon mango and 1 teaspoon coconut. Cover with cupcake tops. Frost top of each cupcake with 1 heaping tablespoon frosting. Top each with about 1 teaspoon mango and 1 teaspoon coconut. Garnish with lime peel.

Jalapeno-Mango Salsa image

2 tablespoons vegetable oil
2 whole jalapeno chiles
2 tablespoons chopped fresh cilantro
2 mangoes, peeled, pitted and diced
1 lime, juiced
1/4 large red onion, minced
Kosher salt and freshly ground pepper

Steps:

  • Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

7 ounces jalapeno chile, chopped (with or without seeds, you choose the heat)
6 cups mangoes, ripe peeled and diced
3/4 cup lemon juice
1 3/4 ounces pectin (powdered for lower sugar recipes)
4 cups sugar

Steps:

  • place chiles, manoes and lemon juice in a pot.
  • Combine pectin with 1/4 cup sugar in a small bowl. Add to fruit.
  • Bring to a full boil, one that cannot be stirred down, stirring occasionally.
  • Add the rest of the sugar and return to boil for one more minute.
  • Remove from heat. Remove any foam.
  • Ladle into hot prepared jars, leaving 1/4 inch at the top. Wipe and process in hot water bath using good canning procedures.

2 tbsp finely chopped jalapeños
small handful coriander, roughly chopped
juice 1 lime, plus halves to serve
1 small red onion, finely chopped
1 tbsp extra-virgin olive oil
4 cooked chicken breasts, torn into bite-sized shreds
2 Little Gem lettuces, torn into bite-sized pieces
1 red pepper, deseeded and sliced
1 ripe mango, stoned, peeled and diced
handful tortilla chips, broken up a little

Steps:

  • Put the cherry tomatoes, jalapeños, coriander, lime juice, onion and oil in a large bowl with some seasoning.
  • Pop the remaining ingredients, except the tortilla chips, on top of the dressing. Gently mix the salad together to coat.
  • Sprinkle the tortilla chips over the top and serve immediately with lime halves.

  • For the cupcakes: Set a rack in the center of the oven and preheat to 350 degrees F. Line a 12-cup standard-size cupcake pan with 12 paper liners.
  • Place the butter, sugar, baking powder and salt in the bowl of a stand mixer fitted with the paddle attachment and mix on medium speed until uniformly sandy and no butter chunks remain, about 1 minute. Add the oil and vanilla and mix on high speed until very fluffy and almost white, 2 to 3 minutes.
  • With the mixer on low, add the egg and mix on medium speed for 30 seconds. Scrape down the paddle and the sides of the bowl. Add the egg white on low speed then increase to medium speed and mix until smooth and thick like whipped cream, 30 seconds to 1 minute. Alternate between adding flour and buttermilk in 3 additions of flour, mixing until the flour is incorporated. Scrape the bowl as needed between additions of flour and buttermilk.
  • Give the batter a few final folds with the spatula and divide among the 12 cups in the cupcake pan. Give the pan a few taps on the counter and bake in the center rack of the oven until a toothpick inserted in the center comes out with a few moist crumbs, 20 to 22 minutes. Cool the cupcakes in the pan for 5 minutes then remove and place on a wire rack to cool completely, about 1 hour.
