2 teaspoons limoncello
4 large eggs, at room temperature, whisked
2 cups granulated sugar
1 teaspoon baking powder

LEMON-POPPY SEED COFFEE CAKE

Lemon-Poppy Seed Coffee Cake image

All it takes is the addition of nuttiness from poppy seeds and brightness from lemon to give your classic coffee cake a new springy twist. Nutmeg is the secret ingredient that ties together the sweet and salty buttery oat topping.

Provided by Food Network Kitchen

Categories     dessert

Time 1h30m

Yield 6 to 8 slices of cake

Number Of Ingredients 19

1 stick unsalted butter, at room temperature, plus more for the dish
2 cups all-purpose flour, plus more for dusting
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons poppy seeds
1/2 teaspoon kosher salt
1 cup granulated sugar
4 teaspoons finely grated lemon zest
2 large eggs
1 teaspoon pure vanilla extract
1 cup sour cream
Confectioners' sugar, for dusting
3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1/2 cup rolled oats
2 teaspoons poppy seeds
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Make the cake: Preheat the oven to 350˚ F. Lightly butter a 9-inch square baking dish; dust with flour and tap out the excess. Whisk the flour, baking powder, baking soda, poppy seeds and salt in a medium bowl. Beat the butter, granulated sugar and lemon zest in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 4 minutes. Add the eggs, one at a time, beating well after each addition, then beat in the vanilla. Reduce the mixer speed to low and beat in the flour mixture in two batches, alternating with the sour cream and scraping down the bowl as needed. Spread the batter in the baking dish.
  • Make the topping: Mix the flour, brown sugar, oats, poppy seeds, nutmeg and salt in a bowl; work in the butter with your fingers until the mixture looks like coarse meal.
  • Sprinkle the topping over the batter. Bake, rotating the baking dish halfway through, until a toothpick inserted into the center comes out clean, 50 minutes to 1 hour. Transfer to a rack and let cool completely. Dust with confectioners' sugar just before serving.

LEMON POPPY SEED CAKE

Categories     dessert

Time 3h45m

Yield 10 to 12 servings

Number Of Ingredients 16

1 cup buttermilk, shaken
1/3 cup poppy seeds (1.75 ounces)
Nonstick baking spray with flour, such as Baker's Joy
1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup grated lemon zest, loosely packed (4 to 5 large lemons)
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup freshly squeezed lemon juice, divided
1 cup sifted confectioners' sugar
1 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Pour the buttermilk into a 2-cup liquid measuring cup, stir in the poppy seeds, and set aside at room temperature for at least 2 hours.
  • Preheat the oven to 350 degrees F. Thoroughly spray the inside of a Bundt pan with the baking spray and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and 2 cups of the granulated sugar on medium speed for about 5 minutes, until light yellow and fluffy. With the mixer on low, add the eggs, one at a time, the vanilla, and lemon zest, scraping down the bowl with a rubber spatula.
  • Sift the flour, cornstarch, salt, baking powder, and baking soda into a medium bowl. Add 1/4 cup of the lemon juice to the buttermilk mixture. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture in thirds, beginning and ending with the flour. Scrape the bowl with a rubber spatula to be sure the batter is well mixed. Spoon the batter into the prepared pan, smooth the top, and bake for 40 to 50 minutes, until a cake tester comes out clean.
  • Meanwhile, place the remaining 1/2 cup of granulated sugar and the remaining 1/2 cup of lemon juice in a small saucepan and cook over high heat until the sugar dissolves. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes, then turn it out onto a baking rack set over a large plate. Spoon the warm lemon syrup slowly over the cake, allowing it to be absorbed into the cake. Set aside for at least 30 minutes to cool.
  • For the glaze, whisk the confectioners' sugar and lemon juice together in a small bowl, adding a little more sugar or lemon juice to make a smooth, thick, but pourable glaze. Drizzle over the cake, allowing it to drip down the sides. Transfer to a flat cake plate and serve at room temperature.

Polish Poppy Seed Cake image

Provided by Olenka

Categories     World Cuisine Recipes     European     Eastern European     Polish

Time P1DT5h25m

Yield 15

Number Of Ingredients 19

3 ½ cups poppy seeds
boiling water to cover
5 eggs, divided
9 tablespoons margarine
1 cup white sugar
1 ½ cups all-purpose flour
¾ cup margarine
⅓ cup white sugar
1 large egg
1 teaspoon baking powder
1 teaspoon almond extract
2 apple - peeled, cored, and grated
3 tablespoons honey
3 tablespoons dry bread crumbs
½ cup raisins
½ cup chopped walnuts
1 teaspoon almond extract
2 cups confectioners' sugar
⅓ cup boiling water

Steps:

  • Place poppy seeds in a small pot, cover with boiling water and set aside for 24 hours.
  • Line a colander with a cheesecloth and spoon in the poppy seeds. Allow to drain for several hours. Once drained, transfer to a food processor and process until fine.
  • Combine 1 1/2 cups flour, 3/4 cup margarine, 1/3 cup sugar, 1 egg, and baking powder in a large bowl and knead into a smooth dough.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a deep quarter sheet pan (9x13-inches) and line with parchment paper.
  • Roll out dough on a slightly floured surface and place in the prepared sheet pan.
  • Combine egg yolks, 9 tablespoons margarine, and 1 cup sugar in a large bowl; beat with an electric mixer until light and fluffy. Beat in drained poppy seeds gradually. Add apples, honey, breadcrumbs, walnuts, and raisins and mix well.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Fold egg whites into poppy seed mixture; spread over base in sheet pan.
  • Bake in the preheated oven for 1 hour until cake is set; transfer to a wire rack to cool.
  • Mix enough boiling water with confectioner's sugar to form a smooth icing. Spread generously over cooled cake.

POPPY SEED BUTTERMILK BUNDT® CAKE

Poppy Seed Buttermilk Bundt® Cake image

This "from-scratch" recipe is consistently the best I have ever seen and used. My grandmothers, mother, myself, and now my daughter used and use this fail-safe recipe. Husband waits around to "clean" the mixing bowl! This cake is very good, if out on counter and wrapped, for up to 3 days. Great as a dessert or for breakfast! Can sprinkle a mixture of cinnamon and sugar on top, or eat it plain. Freezes nicely if wrapped well.
