4 boneless skinless chicken breasts (about 3 c.)
1 (10 1/2 ounce) can cream of chicken soup or 1 (10 1/2 ounce) can cream of mushroom soup
1 (8 ounce) container sour cream
Ritz cracker, 1 package
1/4 cup butter, melted
poppy seed

Steps:

  • Boil chicken til done (or use leftover chix);then cut up in cubes.
  • In large bowl, mix together soup& sour cream; add chicken and mix well.
  • Spread in rectangle baking dish.
  • Crush up crackers in sleeve and toss well with melted butter; sprinkle evenly over casserole.
  • Shake desired amount of poppyseeds over casserole.
  • Bake@ 350*degrees till golden brown& bubbly.

4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
  • Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
  • Blend the sour cream and cream of chicken soup in a bowl; pour half of the soup mixture into a 9x9-inch baking dish. Add the shredded chicken, then pour the remaining half of the soup mixture on top. Sprinkle with Cheddar cheese, then top with the cracker mixture.
  • Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

I looked all around and couldn't find this recipe that came with noodles. I can't imagine it without noodles!

2 -3 cups cooked chicken (I use the fully cooked rotisserie chicken from the store)
16 ounces sour cream
10 ounces cream of chicken soup
35 Ritz crackers (one whole package)
16 ounces wide egg noodles
1/2 cup butter
poppy seed

Steps:

  • Cook a little over half the bag of egg noodles until done.
  • In a bowl,combine the chicken, cream of chicken soup, and sour cream. Mix well.
  • In a 9x13 take a small chunk of cold butter and rub the bottom of the pan. This insures that the noodles will not stick or become crispy. (I find that this is the only way that works for me. Using spray Pam has always made my noodles on the side crispy.)
  • Spread noodles over greased pan.
  • Spread the chicken mixture on top making sure to cover all the noodles well.
  • Melt the stick of butter and crumble the whole package of Ritz crackers in it and mix until crackers are saturated. Spread on top of chicken mixture.
  • Sprinkle Poppy Seeds on top.
  • Cook uncovered at 350 for 30 minute or until hot.

3 lbs cooked chicken, boneless and skinless
2 cans cream of chicken soup
8 ounces sour cream
1 1/2 cups milk
1/2 cup oleo
1 1/2 cups breadcrumbs
1 tablespoon poppy seed
1/8 teaspoon pepper
1 tablespoon poultry seasoning
2 cups uncooked rice
2 chicken bouillon cubes

Steps:

  • Boil chicken or cook in microwave until juices run clear.
  • Prepare rice according to package directions but add bouillon to water.
  • Place rice in bottom of 9 x 13 inch baking dish.
  • Arrange chicken pieces over rice.
  • Blend soups, milk, sour cream and pepper in medium bowl.
  • Sprinkle chicken with pouiltry seasoning and pour soup mixture over chicken and rice.
  • Melt butter, add bread crumbs and poppy seeds.
  • Sprinkle over all.
  • Bake at 375 degrees for 40 minutes.

After Thanksgiving I give an extra thanks for a recipe to use up that leftover turkey. Can be prepared and refrigerated night before, let stand 30 minutes before baking. Can sub chicken. See note below for freezing.

1 (8 ounce) package med-sized egg noodles, uncooked
1/4 cup butter, melted
1/2 cup chopped onion
1/4 cup chopped green bell pepper
3 tablespoons all-purpose flour
3 cups milk
1/2 cup grated parmesan cheese
1 tablespoon poppy seed
1 teaspoon salt
1/4 teaspoon cayenne pepper
3 cups diced cooked turkey or 3 cups chicken
2 tablespoons parmesan cheese

Steps:

  • Preheat oven 350 degrees.
  • Cook noodles according to directions; drain well; set aside.
  • Heat butter and saute onion and bell pepper until tender.
  • Add flour, stirring until smooth; cook 1 minute; stirring constantly.
  • Gradually add milk; stirring constantly, until thickened and bubbly.
  • Stir in noodles, 1/2 cup Parmesan, poppy seeds, salt, cayenne and cooked turkey.

Steps:

  • Combine the first 4 ingredients and spoon into a lightly greased baking dish.

This is a quick and delicious casserole. My 4 year-old picky eater ate every bite. Roasting the chicken and adding parmesan cheese change the flavor of this great classic.

3 boneless skinless chicken breasts, yield three cups
2 teaspoons seasoning salt
1 tablespoon cracked black pepper
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
8 ounces sour cream
1 tablespoon poppy seed
1 1/2 cups buttery crackers, crushed (about one sleeve)
1/2 cup parmesan cheese, divided
1/4 cup butter, melted

Steps:

  • Place chicken breast in lightly greased baking dish, season with seasoned salt, and pepper. Bake at 450 for 30-35 minutes, until breasts are done. Remove from oven and reduce heat to 350°F.
  • In medium bowl add cream soup, sour cream, poppy seeds, and 1/4 cup of parmesan cheese. Stir well.
  • Chop chicken and add to bowl of soup and sour cream mixture. Stir well.
  • Place chicken in a lightly greased 11x7x1 1/2 inch baking dish, spread evenly.
  • Combine crushed crackers, 1/4 cup of parmesan cheese, and butter and sprinkle over chicken mixture. Bake uncovered at 350°F for 30 minutes.
  • Note: You do not have to roast the chicken, I just prefer the layer of flavor. You can also use fat-free sour cream and soup to save fat.

50 Ritz crackers

  • Prehead oven to 350°F.
  • Cut baked chicken breast into pieces.
  • Mix chicken in bowl with cheddar cheese, sour cream, and cream of celery.
  • Crush the ritz crackers in a seperate bowl which should total 50 crackers or a 1 1/2 sleeves.
  • Leave enough aside to sprinkle on top of the casserole.
  • Melt the butter.
  • Now mix the crushed crackers with the chicken mix and add the melted butter and poppyseeds.
  • Spread into cassarole dish.
  • Sprinkle remaining crackers atop the chicken mixture.
  • Bake at 350F for 35 to 45 minutes or until bubbly.
