POPPY SEED CHICKEN
A yummy, creamy chicken casserole which can turn into an elegant dish when the chicken breasts are left whole. For a variation, use boneless chicken breasts, but do not dice them. Pour the soup mixture over all, but sprinkle the cracker and seed combination over the breasts only and bake as usual.

Steps:
- Preheat to 350 degrees F (175 degrees C).
- Place the diced chicken breasts on the bottom of a 9x13 inch baking dish sprayed with a nonstick cooking spray. In a bowl combine the soup, sour cream and sherry. Pour or spoon mixture over the chicken. Sprinkle salt and pepper on top.
- Mix the poppy seeds and crushed crackers and sprinkle mixture over the chicken, salt and pepper. Drizzle the melted butter or margarine over the cracker/poppyseed layer and bake covered in the preheated oven for 30 to 45 minutes (take cover off for the last 5 minutes). Let stand a few minutes before servings.

- Mix together cooked chicken, cream of chicken soup, poppy seeds, and sour cream. Lightly grease 11x7-inch baking dish. Spoon mixture into dish.
- Pour melted butter over cracker crumbs and stir together. Sprinkle over casserole.
- Bake at 350°F for 35 minutes or until hot and bubbly.
POPPY SEED CHICKEN II
This is an excellent way to use up leftover chicken. This is served up at our house at least once a month. We like it with mashed potatoes or rice and a green vegetable.

This Poppy Seed Chicken casserole is great for taking into a friend who had a baby and freezes well for those busy nights.

- Preheat oven to 350 degrees.
- Place cubed chicken in a 9X13 casserole dish. *Note: Some people layer some cooked rice on the very bottom underneath the chicken so that it's a meal in one.
- Stir together the condensed soup and sour cream. If you wish to add the additional flavorings see notes. Pour over the chicken.
- In a separate bowl, stir together the crushed crackers and melted butter. Sprinkle over the chicken and sauce. Sprinkle the poppy seeds on top.
- Bake for 20-30 minutes in the preheated oven, until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice. We like to eat it with steamed broccoli and we mix it all together.
POPPY SEED CHICKEN
This is a great and easy chicken dish. It is a way to use up leftover chicken or turkey and it can be prepared beforehand. The cracker mixtures is what makes this dish so good. I have taken it to people for dinner several times and had lots of requests for the recipe.

- Combine chicken with soup and sour cream in a bowl.
- In another bowl add crushed crackers and poppy seeds to melted butter.
- Mix well.
- Mix half of cracker mixture in chicken.
- Put in casserole dish.
- Spread remaining cracker mix on top.
- Bake 30 minutes at 350 degrees.
- Cover for first 15 minutes and then uncover for last 15 minutes.
- (I like to double the crackers and butter).
