Given to me by a friend who loves to experiment with recipes. A little kick of Southwestern cooking. Not too spicy, but can be made so with a little bit more jalapeno or other spices for an extra bit of 'kick.'

2 teaspoons ground cinnamon
2 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
1 whole chicken, cut into pieces
1 cup chicken broth
2 tablespoons honey
2 limes, juiced
½ jalapeno pepper, minced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
  • In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
  • Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

Easy chicken recipe with a to-die-for sauce. You'll want to serve this with tortilla chips to eat up the extra sauce!

3 slices bacon
4 chicken breasts
3 jalapenos, seeded and chopped
2 garlic cloves, mined
1 -1 1/2 cup chicken broth
4 ounces cream cheese, cubed
1 cup cheddar cheese, shredded
2 tablespoons cilantro, chopped
chopped avocado
tortilla chips

Steps:

  • In large skillet cook bacon until crisp. Remove to paper toweling and then crumble.
  • Drain off all but 1 tablespoon grease (reserve grease).
  • Pound chicken breasts slightly to even thickness. Season with salt and pepper.
  • Cook chicken in bacon grease over medium heat until done, about 5 minutes per side. Remove to heated platter and cover with foil.
  • In same skillet, add 1 tablespoon of reserved bacon grease along with jalapenos and cook for 1 minute.
  • Add garlic and stir another minute, then add chicken broth to deglaze pan, scaping up brown bits.
  • Add cream cheese and stir until melted, then add cheddar and stir until melted.
  • Stir in cilantro and crumbled bacon.
  • Pour sauce over chicken. Garnish with chopped avocados if desired. Serve with tortilla chips.

1 teaspoon cumin (to taste)
1 teaspoon chili powder (to taste and try ancho or chipotle for a change)
salt
2 garlic cloves, Minced
3 jalapenos, Seeded and Chopped
8 ounces cream cheese
1 -1 1/2 cup chicken broth (adjust for desired thickness)
3 slices bacon
3/4 cup shredded cheddar cheese or 3/4 cup colby-monterey jack cheese
1 tablespoon fresh cilantro, chopped plus more for garnish
Mexican rice or pasta

Steps:

  • Fry bacon until crisp. Remove to paper towel-lined plate. Sprinkle chicken with seasonings while the bacon crisps. Crumble bacon once cooked; set aside.
  • Add the chicken to the hot bacon fat in the skillet. Cook chicken, turning every few minutes, until juices run clear and no longer pink. Remove from skillet and keep warm.
  • Add chopped jalapenos to the skillet and cook for a couple of minutes. Add garlic and cook for 30 seconds to a minute more, until fragrant. Add chicken broth, deglazing pan. Bring to a boil. Add cream cheese and stir until melted and smooth. Add in shredded cheese and bacon, stirring until the cheese in melted.
  • Turn off heat and stir in cilantro. Serve chicken on a bed of Mexican rice and topped with sauce. Garnish with additional cilantro if desired.

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1 tablespoon canola oil
2 medium onions, chopped
1/2 cup reduced-sodium chicken broth
2 jalapeno peppers, seeded and minced
2 teaspoons ground cumin
3 ounces reduced-fat cream cheese, cubed
1/4 cup reduced-fat sour cream
3 plum tomatoes, seeded and chopped
2 cups hot cooked rice

Steps:

  • Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. Believe it or not, this recipe came to me in a dream after discussing previous adventures with jalapeno poppers and standard baked ziti. I awoke the next morning with a desire and a vision, and thus this delicious, spicy, and creamy ziti was born.

2 pounds skinless, boneless chicken breast halves
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon onion flakes
1 teaspoon dried oregano
1 teaspoon minced garlic
6 slices bacon, diced
3 medium jalapeno peppers - stemmed, seeded, and minced
¼ cup diced onion
1 (8 ounce) package cream cheese, softened
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup mayonnaise
1 (16 ounce) package ziti pasta
1 (16 ounce) jar Alfredo sauce
1 (8 ounce) package shredded pepper Jack cheese
½ cup shredded mozzarella cheese
½ cup crushed buttery round crackers
½ cup grated Parmesan cheese
4 tablespoons salted butter, softened

Steps:

  • Combine chicken breasts, chicken broth, salt, pepper, onion flakes, oregano, and garlic for shredded chicken in a medium slow cooker, making sure chicken is completely covered by broth.
  • Cook until chicken is no longer pink in the center, on Low for 5 to 6 hours or on High for 3 to 4 hours.
  • Thirty minutes before chicken is finished cooking, preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and set aside.
  • While ziti is cooking, prepare filling: fry bacon, jalapenos, and onion in a small skillet over medium-high heat until onions are tender and bacon is browned, 5 to 7 minutes. Remove from the heat and transfer to a small mixing bowl with cream cheese, mozzarella, Parmesan, and mayonnaise; mix until well combined.
  • Remove chicken from the slow cooker and place into a large bowl; use 2 forks to shred chicken into small pieces. Add cooked ziti and Alfredo sauce; mix well.
  • Pour 1/2 of the chicken-ziti mixture into the prepared baking dish and sprinkle pepper Jack cheese in an even layer over top. Spread jalapeno popper filling evenly across the dish. Pour remaining chicken-ziti mixture into the dish, and sprinkle 1/2 cup mozzarella over top.
  • Mix crushed crackers, Parmesan cheese, and butter for topping together in a small bowl; sprinkle over the pasta dish.
  • Bake in the preheated oven until cheese is melted and just barely starts to turn golden, 25 to 30 minutes. Remove from the oven and serve immediately.

4 to 8 jalapeno peppers, seeded and chopped or 1 can (4 ounces) chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced fresh parsley or 1 tablespoon dried parsley flakes
6 to 10 garlic cloves, minced
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves (8 ounces each)
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon zest

Steps:

  • In a small bowl, combine the peppers, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. With fingers, carefully loosen skin from the chicken breasts; gently stuff pepper mixture under the skin of each chicken breast. , Place in a greased 13x9-in. baking dish. Combine the broth, pepper, lemon zest and remaining lemon juice; pour over chicken. Cover and refrigerate for at least 6 hours. , Drain and discard marinade. Place chicken skin side up on grill.
