This recipe is for traditional popovers. They can be served plain, but my family prefers them with raspberry butter.

Number Of Ingredients 6

1 cup all-purpose flour
¼ teaspoon salt
3 eggs
1 cup milk
1 tablespoon unsalted butter, melted
2 tablespoons unsalted butter, chilled

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Spray a popover pan with nonstick cooking spray. Place pan on center rack of oven and preheat for 2 minutes.
  • Blend flour, salt, eggs, milk, and melted butter until it looks like heavy cream, about 1 to 2 minutes.
  • Cut chilled butter into 6 even pieces. Place 1 piece of butter in each cup and place pan back in oven until butter is bubbly (about 1 minute).
  • Fill each cup half full with batter and bake 20 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for another 15 to 20 minutes.

Yield Makes 6 large popovers or 10 small popovers

Number Of Ingredients 5

3 large eggs, room temperature
1 1/2 cups whole milk, room temperature
1 1/2 cups all-purpose flour
1 1/4 teaspoons coarse salt
Vegetable-oil nonstick cooking spray

Steps:

  • If eggs and milk are cold, before combining, submerge whole eggs in warm water 10 minutes and heat milk until just warm. Preheat oven to 450 degrees with a nonstick popover pan on rack in lowest position.
  • After you have combined eggs and milk in a large bowl, whisk together until very frothy. This should only take about 1 minute. Have the flour and salt measured out and ready to go.
  • Add flour and salt to egg mixture. We tested out a blender and an electric stand mixer when making the batter, but concluded that whisking by hand produces the most tender, airy popovers.
  • Whisk flour and salt into egg mixture just until batter is the consistency of heavy cream with some small lumps remaining. See those air bubbles? They are what will cause the popovers to rise.
  • Remove popover pan from oven and coat with cooking spray. If you prefer a standard muffin tin, only coat (and fill) the outer cups; they get better circulation in the oven. (Also, reduce baking time by 5 minutes.)
  • Fill popover cups about three-quarters full with batter. Bake 20 minutes, then reduce oven temperature to 350 degrees. Continue to bake until golden brown and dry to the touch, about 20 minutes more.
  • Popovers lose their crunch if they linger in the pan, so turn them out on a wire rack immediately and poke a small opening in the side of each with a paring knife to let the steam escape. Serve right away.

Popovers are airy and light puffs that are very easy to make. I added pepperoni and cheese to this version for a savory snack.

1 1/4 cups all purpose flour
1 1/4 cups milk
1/4 tsp salt
3 eggs
1 tbsp unsalted butter (melted, plus additional butter for each popover cup)
1/2 cup of chopped pepperoni
1/2 cup of shredded cheddar cheese

Steps:

  • In a large bowl, combine the flour and salt with a whisk. Add in the eggs, whisking after each addition. Add the milk then the melted butter until batter is combined and no lumps remain. Mix in the pepperoni and cheese.
  • Place a small pat of butter (perhaps a little less than a teaspoon) in each cup of your popover pan and place the pan in the oven until the butter melts and the pan is hot. Remove the pan from the oven and fill each cup about 2/3 full.
  • Return the pan to the oven and bake the popovers for 20 minutes at 400°F. Then reduce the heat to 350°F and allow them to bake for another 20 minutes. Do not open the door in between. Remove them from the oven and serve immediately.

  • Popovers: Mix all ingredients in large bowl.

  • Add warm milk slowly to sugar mixture.
  • Pour back into a sauce pan and cook over med.

  • Spoon into popovers.
  • Cover w/ chocolate sauce and serve.

2 tablespoons butter, melted
3 large eggs, at room temperature
1 cup whole milk
1 teaspoon salt
1 1/2 teaspoons sugar
1 cup flour
2/3 cup sugar
1 teaspoon ground cinnamon
1/4 cup melted butter
softened butter, for greasing pan

Steps:

  • Preheat the oven to 400ºF.
  • Generously grease a nonstick popover pan, or a muffin pan with 1/2-cup indentations, with softened butter.
  • For the puffs, put the 2 tablespoons melted butter, eggs, milk, salt and sugar in a blender and blend for a few seconds.
  • Add the flour and process for about 10 seconds, just until smooth.
  • Divide the batter among the 9 greased molds, filling each 1/2 to 2/3 full.
  • Bake for 35 minutes, or until the puffs are deep brown.
  • Remove from the oven, wait a few minutes until cool enough to handle, then remove the popovers from the pans and set them on a cooling rack. If they're stubborn, you may need a small knife or spatula to help pry them out.
  • Mix the sugar and cinnamon in a medium bowl. Thoroughly brush each popover all over with the 1/4 cup of melted butter, then dredge each puff liberally in the sugar and cinnamon mixture to coat them completely. Let cool on the wire rack. Enjoy!
