- In a saucepan, bring the salsify and water to a boil over medium heat.
- Reduce heat; cover and simmer for 18-20 minutes or until tender but not mushy.
- Stir in cream, butter, salt and pepper.
- Cook and stir for 4 minutes or until butter is melted and cream is heated through.

This is best Oyster Stew you ever had! It is elegant and satisfying. I serve it with toasted homemade bread. Serve it quick and hot! Try adding a drop or two of hot sauce in your stew -- it's delicious!

- Melt the butter in a large skillet over medium heat, and cook the celery and shallots until shallots are tender.
- Pour half-and-half into a large pot over medium-high heat. Mix in the butter, celery, and shallot mixture. Stir continuously. When the mixture is almost boiling, pour the oysters and their liquid into the pot. Season with salt, pepper, and cayenne pepper. Stir continuously until the oysters curl at the ends. When the oysters curl the stew is finished cooking; turn off the heat and serve.

EASY GOULASH OR POOR MAN'S HAMBURGER STEW
This is recipe is one that my mom used to make all the time. It is super easy and yummy. My kiddos really like this recipe. It is really good just as it is, or if you have left overs the next day it is really good with tostito chips, fitos, or tortillas. The ultimate quick man meal. My husband always wants me to cook this, and the left overs are just as good if not better. :)

Steps:
- First brown the ground beef, and drain, then add the onions and green peppers. Season your meat with salt, pepper to taste. Or how you normally season it.
- Then add the cans of corn and diced tomatoes and let it cook covered in the juice until the potatoes are tender.
- This is really yummy with corn bread and tortillas. This one is my family's favorite goulash, we have tried many.

- In a 3-quart saucepan heat oil over medium heat and saute onions and leek slowly, without browning, until soft, about 20 minutes. Add salsify and celery and saute over medium-high heat for 2 minutes. Add stock and simmer, partly covered, until salsify is tender, about 50 minutes. Set aside.
- In batches, puree soup in a blender. Pour through a sieve into a saucepan and heat through. Season to taste. Ladle into bowls, floating a teaspoon of truffle oil on top.

PAWPAW'S ONE-HOUR LONESOME DOVE STEW
This is a real man's kinda stew...sweet & spicy, got meat and potatoes, and is fillin'! Plus, any ol' pardner can make it...it's easy! Now, Pardners, this one's gonna need a great big ol' deep fryin' pan or stew pot. Feeds 6 hungry folks with some left over.

Steps:
- Here's what to do to git fixin'.
- Chop the onion.
- Brown ground chuck and chopped onion together over medium heat.
- Stir a few times while browning.
- This browning is gonna take about 15 minutes.
- While the chuck and onion are browning, drain the potatoes and cut 'em up into chunky pieces (not too small).
- Also, drain the kidney beans.
- Just set these taters and beans aside and wait, you'll need 'em shortly.
- Also, go ahead and open (But DO NOT drain) the corn and the can of tomatoes with chilies to have 'em ready.
- When chuck and onion have browned, drain 'em real good into a big ol' strainer, then return 'em to the pan and set it back on the stove.
- Add brown sugar, dash salt, dash pepper, and couple o' dashes of Worcestershire sauce.
- Stir 'em up gently!
- Add drained beans, cut-up potatoes, cream corn, undrained tomatoes w/chilies, and light sour cream.
- Stir 'em up gently!
- Let all this cook in uncovered pan or stew pot over medium heat just until it comes to a low boil, then turn the fire down to low.
- Let everything simmer over the low fire until juices become good and thick (kinda' gravy like).
- You'll need to gently stir the stew occasionally.
- It's ready to eat when the juices get good and thick.
- All this ain't gonna take but 1 hour from the gitgo.
- Serve up in bowls (I suggest puttin' some grated "Mexican cheese" and chopped jalapeno peppers on the table and use 'em fer toppin's) While this stew is a rib-stickin' meal in itself, feel free to eat it along with a green salad and cornbread.
- Refrigerate or freeze leftovers and enjoy 'em again sometimes.

- Brown ground beef in sauce pan.
- Place browned ground beef in large pot with 1 medium onion- diced, bay leafs, soups.
- Add pepper, garlic powder, oregano, sliced carrots and potatoes.
- Simmer ¾- 1 hour.
- Thicken with 2 tbs of corn starch (in some water); gradually.
- Enjoy with fresh bread.
- Edited to add - I made it a few days ago with beef broth and it was just as good :).

Born and raised on the water, oystering is in chef Madden Surbaugh's blood. Every year at Christmas his grandfather made his famous oyster stew.

- Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
- Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
- Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
- Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
- Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.

A delicious and cheap recipe that I came up with when I needed to use the last potatoes and carrots before they went bad. It's one of my favorites to make.

- Boil water in a large pot.
- Add carrots and potatoes and boil 10-15 minutes until tender.
- Drain and set aside.
- Meanwhile, brown meat in a large skillet.
- Drain well.
- Add 3/4 or full can of corn (depending on preferance) to meat.
- In a small pot combine soup and corn juice (use less for thicker stew).
- Heat over med-low until warm.
- Add potato and carrots to meat.
- Pour soup over top and stir gently.
- Heat if neccesary.
